Once you've prepared the minced meat, move on to the eggplants. Wash the vegetables and cut them diagonally into elongated oval slices. The skin does not need to be removed. Eggplants with minced meat in a frying pan - an accelerated way to prepare baked ones. Disadvantages of this recipe: firstly, eggplants drink more oil, and secondly, cooking requires more attention from the cook. Well, only one eggplant, cut into 2 halves, fits into the frying pan. If there are more eaters, then the oven will be more convenient. Plus - a serious gain in time and the fact that you don’t need to run the oven, for example, in the heat. In the summer it’s definitely more convenient to use a frying pan. I can do it in 40 minutes with one frying pan; with two it would be even faster. In terms of consistency - well, for the life of me, I can’t say that it turns out worse than in the oven.

We cut the eggplant in half lengthwise, make a cut inside with diamonds (not cut all the way through). We also cut out several shallow strips in the skin. This is not done to stuff the eggplant later, but solely to optimize oil exchange.

Soak the eggplants in lightly salted water.

Peel the onion and finely chop it.

Fry the onion over high heat in 1 tbsp. vegetable oil until transparent.

While the onions are frying, finely chop the tomatoes.

Add the minced meat and tomatoes (you can also add chili peppers) to the onions and fry everything together over high heat, stirring frequently, until what remains at the bottom of the pan is not juice, but oil (it is clear, the juice is cloudy). After this, add chopped parsley, crushed garlic, salt and pepper. We extract the chili. By the way, I have it purely for flavoring - not cut, it gives off a smell, but no pungency. Remove the minced meat from the heat and set it aside somewhere. In total, this whole frying procedure took me 15 minutes.

Over very high heat, fry the eggplants, flat side down, in 2 tbsp. preheated oil. You may need to add a third spoon along the way. It takes about a minute to heat up the pan and 3 minutes to fry the eggplant. The white surface should turn brown.

Turn the eggplants over and continue to keep the heat on high. Cover them with minced meat, close the pan with a lid and wait until the eggplants begin to smell strongly of fried eggplants and give off oil. From the moment the eggplants begin to release their oil, they are absolutely ready. My time for this operation was about 5 minutes from the moment I closed the lid.

Turn off the heat, sprinkle the eggplants with grated cheese and cover the pan with a lid. The cheese there will melt in about a minute under the hot lid.
