05.11.2019 Restaurant notes

On a hot summer day, you often want to eat ice cream - light and cool. Sweets sold on store shelves rarely please with their naturalness and freshness. The winning solution in this case would be watermelon sorbet - a dessert reminiscent of ice cream or popsicles familiar to everyone since childhood.

The delicacy itself arose more than one century ago and initially, having a liquid consistency, was considered a drink. Much later, in France, it acquired the status of ice cream.

Sorbet is served during a meal between other courses or at the end as a dessert. This treat cools and improves the functioning of the stomach. In this sense, watermelon sorbet is useful, which has a positive effect on digestion. In addition, often bought watermelon remains half-eaten, and a delicious dessert from it is a win-win solution to the problem.

It is not difficult to make sorbet at home, since hundreds of recipes have developed over the centuries of its existence. The advantage of the dish is that everyone can choose an option based on their tastes and characteristics. For example, people on a diet will be happy to try sugar-free watermelon sorbet.

Such a dessert in terms of taste is in no way inferior to sweet ice cream, while remaining harmless to the figure.

Watermelon sorbet without sugar

Ingredients:

  • One lemon (you can lime);
  • 0.5 kg of ripe watermelon (mass is considered without peel);
  • 0.5 glass of white wine.

Cooking method:

  1. With a knife, the required amount of watermelon is carefully cleaned from the peel and seeds. It is important that the berry is really sweet, otherwise the sorbet will lose its taste.
  2. The resulting pulp is divided into small pieces so that later they can easily fit into the blender container.
  3. Using a juicer or by hand, squeeze the juice from a lemon. If you use lime, the dessert will turn out to be more exotic. When choosing between fruits, it is worth considering their size. Lime is much smaller, and therefore it is better to take a couple of pieces.
  4. The juice is mixed with wine, then both ingredients are poured into a bowl with watermelon pulp.
  5. All ingredients are ground in a blender. The resulting mass must be put in the freezer for half an hour, and then beat again. Repeat this operation until the mixture is homogeneous.
  6. Ready sorbet is placed in a special ice cream maker or poured into a bowl and left in the freezer for four hours.

Watermelon sorbet with sugar syrup

Ingredients:

Cooking method:

  1. Watermelon is processed, as in the first case, and mashed.
  2. Syrup is brewing. To do this, sugar and water are mixed in a metal container that can be placed on the burner. The sweet liquid is stirred with a wooden spoon so that the composition does not burn and spoil the dishes.
  3. The finished syrup must cool, after which liquor with juice is added to it.
  4. The ingredients are combined together and whipped in a blender so that there are no lumps in the mixture. The consistency of the mass should be liquid and airy in appearance.
  5. The mixture remains in the freezer for an hour, after which it must be mixed with a whisk. This paragraph is repeated three times.
  6. After the last mixing, the dessert is cooled in the freezer for three hours.

How to diversify the watermelon sorbet recipe

Any dish is prepared either strictly following the found recipe, or showing imagination. The main advantage of sorbet is variability. By experimenting with the ingredients, you can get your own dessert that meets individual tastes:

As a decoration of the dish, small berries, mint leaves, coconut shavings and even slices of chocolate are used. Often housewives buy special umbrellas for cocktails and serve the dish with them.

Watermelon sorbet is easy to make: it is not difficult to make it at home, because it does not require much effort, time and money.

It will pleasantly surprise both adults and children with its mild taste, ease of assimilation, as well as the opportunity to show imagination both in cooking and serving dishes on the table.

First, wash the berry well, and then cut it in half. Remove the pulp from one half with a spoon, remove all the bones. And then it is desirable to weigh it. You may need the second half of the watermelon.

When the pulp was checked for the presence of seeds, put the pieces in a blender. You need to grind to a homogeneous mass. Using a juicer (can be manual), squeeze the lemon juice and send it to a container with watermelon juice. Everything must be mixed thoroughly. Then it is desirable to rub the mass through a sieve, because bones may come across that should not be in the dessert.

Now you can prepare sugar syrup. Mix water with sugar and put on medium heat. To prevent the syrup from burning, stir it all the time. When it boils for a maximum of two minutes, turn off the burner and set to cool.

Combine syrup and watermelon mass. Now it remains to choose the way that is best. This will be discussed further in the article.

Ways to Freeze Watermelon Sorbet

The first and best option is to pour the resulting dessert into a plastic food container. Then send it to the freezer for three hours, after which the sorbet will be ready for use.

Watermelon - home doctor

As we know, watermelon is a berry (which has always been strange for me). But the berry is not simple, but very valuable, it contains a whole storehouse of vitamins - ascorbic acid, B vitamins, carotene, potassium, magnesium, iron, fiber and pectin. Such a valuable composition explains the fact that watermelon is a valuable product for cleansing the body of harmful toxins, it normalizes gastric peristalsis. Watermelon is an excellent diuretic, therefore it is indicated for kidney diseases, edema, cystitis, nephritis. Folic acid contained in watermelon is necessary for a favorable course of pregnancy and fetal development. Watermelon is useful for anemia and anemia, thanks to iron and magnesium. And even with arthritis and gout, watermelon is very useful. Well, if you have a hangover syndrome, then watermelon will help to cope with intoxication of the body.

Watermelon is very popular for weight loss. Fasting days with the help of watermelon are effective, as excess fluid and toxins are removed.

Moreover, not only the pulp of watermelon is useful, but also watermelon peels, and even seeds. Watermelon peels have a diuretic effect, they need to be dried and then a decoction is prepared. Watermelon seeds have an anthelmintic effect, so it is also a good idea to dry them for storage.

The history of the appearance of watermelon

It turns out that watermelon was known to mankind as early as 2000 BC, that is, 4000 years ago. Archaeologists in ancient Egyptian tombs, including the tomb of Tutankhamen, have found frescoes depicting watermelon and even seeds. Later, the watermelon route continued through Syria, Persia, Arabia and Palestine to Ancient Rome and India. In the Middle Ages, watermelon began to be cultivated already in Europe. There are 2 versions of how and when the watermelon appeared in Russia: the first claims that the Tatars brought the watermelon in the XIII-XIV centuries, and according to the second, it turns out that the watermelon was brought by merchants from India in the VII-X centuries. Initially, watermelons were grown in the Volga region, and until the 17th century this berry was not widespread in Russia. And only in 1660, when Tsar Alexei Mikhailovich ordered to supply watermelons from Astrakhan to the royal table, the “watermelon era” began in the capitals - Moscow and St. Petersburg. And when Peter I, during his trip to the Caspian Sea, was cured of a sudden illness with watermelons, the king issued a decree to cultivate this berry everywhere. And at first, watermelons were not served raw, but soaked in sugar syrup or prepared with molasses with pepper and spices.

I offer you a recipe for homemade ice cream - watermelon sherbet, which perfectly quenches thirst on hot summer days.

How have you eaten watermelon in your life? Most, for sure, - only in raw form or in a cocktail. But with a little magic, you can do amazing things with watermelon: ice cream, necks, fried and even salty dishes.

Fried watermelon sounds intimidating, but it's actually juicy and crunchy on the inside, smoky and sweet on the outside. Throw in some salty feta cheese, spice it up with a lime and a dash of mint freshness. And here you have a wonderful salad for a picnic!

For the appetizer salad you will need:

  • 8 pitted watermelon slices (about the size of a deck of cards)
  • 2 tablespoons of olive oil;
  • 5 teaspoons of lime juice;
  • 5 slices of Feta cheese (a little over 100 grams);
  • a handful of fresh mint leaves;
  • 3 cups greens (arugula, lettuce, watercress)
  • salt, pepper - to taste;
  • fried pumpkin seeds.

Fire up the grill. Pat the watermelon pieces dry with paper towels and place them on the grill. Fry on one side, without turning, for 2 minutes.
Toss the greens with 2 tablespoons lime juice, olive oil and a pinch of salt. Arrange the greens on a large platter, top with grilled watermelon slices, toasted side up. Add Feta and some watermelon pieces. Pour the remaining lime juice over them and sprinkle lightly with salt (pepper to taste). It remains only to decorate everything with mint and pumpkin seeds.

For delicious slices you will need:

  • 1 chilled pitted watermelon;
  • 1/2 bunch fresh mint;
  • 4 limes (from 2 - zest, from 2 - juice);
  • 3/4 cup sugar.

Cut the watermelon into 4 pieces, and then into slices about 5 cm thick (see as in the picture). Chop the mint leaves and mix in a bowl with 2 tablespoons of lime zest. Add sugar and mix well. Place the watermelon slices on a large flat dish and pour the lime juice over them. Then sprinkle the pieces with the made mint-lime sugar.

A classic watermelon in a new twist: frozen pulp + mint + lime = juicy and refreshing ice cream (or in other words, sherbet). Sorbet contains virtually no sugar and can be topped with a few tablespoons of rum for even more enjoyment.

For sherbet you will need:

  • watermelon (about 2 kg, de-seeded and broken into pieces);
  • 1 tablespoon + 1 teaspoon sugar;
  • 3 limes (juice from them);
  • 3 tablespoons of white rum;
  • a pinch of salt;
  • 1 tablespoon + 1 teaspoon chopped mint leaves.

Pieces of watermelon, sugar, lime juice and rum - everything is loaded into a blender. And bring to the state of puree. Add mint and mix everything until it turns into small particles and is not visible. After the mixture is packed in an airtight container and frozen for several hours.

The presence of an ice cream maker greatly facilitates the process. If it is not there, then every hour we take the mixture out of the freezer and mix it thoroughly with a spoon or mixer, as long as possible. This is to prevent ice crystals from forming in the ice cream. For complete freezing, sherbet is kept in the freezer for 6-8 hours.

You will be surprised how well watermelon and feta cheese go together. With each bite, salty, sweet and at the same time invigorating notes begin to play brighter. This salad is simple, but not without a dose of ingenuity, as you can add other summer vegetables (except tomatoes) to it. The dish is best served with fried fish or steak.

For the salad you will need:

  • 4 tablespoons of red wine vinegar;
  • 1 teaspoon of salt;
  • 1/4 teaspoon freshly ground black pepper;

  • 1 red bell pepper, cut into pieces;
  • 200 grams of feta cheese, cut into 1-1.5 cm cubes;
  • 1 cup finely chopped fresh mint leaves.

Cut the cucumber in half lengthwise, remove the seeds with a spoon if necessary. Then cut it into thin slices in the form of a crescent. Cut the onion into thin half rings. Finally, put the cucumber, onion, tomatoes, watermelon chunks, peppers, cheese and mint into a large bowl. Adding a consignment. It is desirable to serve immediately.

Try this incredible shake that mixes juicy watermelon with ice and milk. It's incredible! Foamy, sweet, the most delicate pinkish color ... Milk-watermelon shake is not cloying and not heavy. The consistency is more like juice with the addition of something similar to cream.

Watermelon must be frozen first. To do this, cut it into pieces, put them on a sheet of parchment paper in one layer and place in the freezer. This will keep the watermelon pieces from sticking together, and you can take as many of them as you need. Once frozen, you can transfer them to airtight bags and store up to 3 months.

For the neck you will need:

  • 3 cups frozen watermelon chunks
  • 1 glass of milk;
  • 2 tablespoons of sugar.

Mix all the ingredients in a blender and bring to the consistency of a milkshake. Sugar can be added to taste. Actually, it's ready!

In the summer, out of habit, do you quench your thirst with soda? We strongly urge you to stop this business and use only natural home-made drinks. Since watermelon is our key figure today, we offer you a wonderful recipe for cold watermelon water. It has virtually no sugar, and it refreshes superbly.

For watermelon water you will need:

  • half a large watermelon (without rind, cut into large pieces);
  • 4 glasses of water;
  • 8 fresh mint leaves (optional)
  • juice of half a lime (about 1-1.5 tablespoons);
  • 3 tablespoons of sugar or honey.

Repeat the procedure with the remaining pieces of watermelon and water, add mint leaves and sugar. We mix everything until a homogeneous mass. We pass through again. Add lime juice. This cocktail is delicious and very refreshing. Watermelon, however, like orange juice, is an excellent source of antioxidants and vitamin C. What do we do with pepper in it, you ask? It very subtly emphasizes the taste of watermelon. You should not be afraid to add it to your smoothie.

For smoothies you will need:

  • 2.5 cups chopped pitted watermelon
  • 1 cup of ice;
  • 1/2 cup orange juice;
  • 1/4 teaspoon black pepper.

Cut the watermelon into pieces, if possible, remove the seeds. We load watermelon slices, orange juice, pepper and ice into a blender. We mix everything. You can add some honey to make the drink sweeter. It's so quick and easy, and the smoothie is ready. Enjoy!

Excellent refreshing non-alcoholic drink with a wonderful aroma and rich color. The main thing in it is to keep the correct proportion of strawberries: if there is too much of it, then it will already turn out to be sweets, if too little, then the drink will not have enough sweetness. So try and experiment!

For a drink you will need:

  • 4 cups diced watermelon;
  • 1 cup peeled strawberries;
  • juice of half a lime;
  • 6 mint leaves (+ for garnish)

If there is a juicer, then in accordance with the instructions we get juice from watermelon, strawberries, limes. The pulp is not used.

If we use a blender, then mix the watermelon, strawberries, lime until smooth. Strain through a sieve, using a spatula.

We take glasses and put 3 mint leaves in each of them. Put ice on top. A mixture of juices (watermelon, strawberry and lime) is poured into glasses and served.
