Compound:

  • Minced meat (beef + pork) - 400 g
  • Mushrooms - 400 g (it is better to use frozen mushrooms, cut into slices, but you can also fresh)
  • Onion - 1 pc.
  • Sour cream (15%) - 350 g
  • Flour - 1 tbsp. spoon
  • Dill (dried) - to taste (optional, but desirable)
  • Ground pepper - to taste
  • Salt - to taste

Cooking:

Peel the onion and cut into small cubes. Heat a small amount of vegetable oil in a frying pan and add the onion. Fry the onion until golden brown for 10-15 minutes. with occasional stirring.

While the onions are frying, prepare the sour cream sauce. To do this, first mix the flour with 5 tbsp. spoons of boiling water and mix. This is done to avoid the appearance of lumps in sour cream.

Add sour cream to flour with water and mix again.

Frozen champignons (plates), without defrosting, put in a pan with fried onions. If you use fresh mushrooms, then wash them first and cut into plates. Increase the heat to high and sauté the mushrooms for 3 minutes, stirring occasionally.

A lot of juice forms in the pan, it must be drained and the mushrooms fried over high heat for 5 minutes. until golden brown.

After 5 min. add minced meat and fry it over high heat. while stirring for 3-5 minutes. until he turns white.

Reduce the fire to a minimum, pour in the juice drained from the mushrooms and add the sour cream sauce, mix. Before pouring in sour cream sauce, add 2 tbsp. tablespoons of boiling water and mix to avoid curdling of sour cream during further heat treatment.

Cooking process:

Put a frying pan on the fire, add a couple of tablespoons of vegetable oil, put the minced meat in the frying pan, add the peeled and finely chopped onion, squeeze the garlic through the press, salt and pepper everything to taste, mix and fry everything over medium heat until half cooked.

Then, in a separate frying pan with heated vegetable oil, put the chopped mushrooms, the second peeled and chopped onion, salt, pepper to taste and fry everything, also until half cooked.

Next, combine the fried mushrooms with fried minced meat, add meat broth and tomato paste to them, mix everything and simmer over medium heat for 10-15 minutes. If necessary, season with spices to your taste, taste for salt, add if necessary.

Boil the peeled potatoes in salted water until tender, and mash them.
Then take a baking dish, grease it with vegetable oil and lay out the cooked ingredients in layers. First minced meat with mushrooms (level), then potatoes and just as carefully level. Sprinkle everything evenly with grated hard cheese on a medium grater.

Ingredients:

For test:

Flour - 300 gr;
Milk - 125 ml;
Trembling - 15 gr;
Butter - 30 gr;
Egg yolk - 1 pc;
Salt - 0.5 tsp;

For filling:

Minced meat - 100 gr;
Mushrooms - 100 gr;
Carrots - 1 pc;
Onion - 1 pc;
Egg - 1 pc;
Salt, pepper to taste;

Whole cooking process:

First, let's prepare the dough. Dissolve the yeast in 50 ml of warm milk, and leave for 15 minutes. Add the egg yolk, butter, salt to the remaining milk and stir everything until smooth. Then we combine with the infused dough, add flour and knead the dough. Transfer the dough to a bowl, cover with a towel and leave for one hour in a warm place.

Then, separately in a frying pan, fry the minced meat until half cooked, also separately fry the finely chopped mushrooms, separately fry the chopped and peeled onions, until slightly golden, and separately fry the grated and peeled carrots. We combine all the fried ingredients in a separate bowl, add half an egg lightly beaten to a homogeneous mass, salt and pepper to taste and mix everything.

Next, we take the dough, and roll it into a thin layer about 0.5 cm thick, squeeze out the mugs with a glass. Then we take exactly half of the circles and cut out circles in them with the help of a cork from a plastic bottle in the center.

We take circles without a hole and put a teaspoon of minced meat on them, cover each circle on top, with a circle with a hole. Then we pinch the edges with our hands, or this can be done with a fork pressing down the edges.

We take a baking sheet, grease it with vegetable oil and put our blanks on it, grease them with the remaining half of the beaten egg and send it to the oven, heated to 200 degrees for 35-40 minutes.

Cooking

Pour the peeled potatoes and garlic with water and boil until the tubers are ready in salted water. Puree the finished potatoes with milk, butter and half the cheese.

Heat the oil in a frying pan and fry the mushrooms in it until golden brown. We remove the mushrooms from the pan, and put the ground beef in their place. We fry the minced meat, stirring, for about 3 minutes, after which we fill it with broth, add salt, pepper, ketchup and mushrooms with peas. Fry for another 6 minutes and transfer to a baking dish.

Cover the minced meat with a layer of potatoes and sprinkle with the remaining cheese. Bake the cake at 350 degrees for 40 minutes, or until golden brown.

  1. To begin with, we clean the onion, chop it and send it to a hot frying pan to fry in a small amount of oil.
  2. Peel and grate or finely chop the carrots. Add it to the onion when it becomes translucent. Salt, pepper and simmer the vegetables for another 5 minutes.
  3. In the meantime, wash the mushrooms and chop them finely. There are two ways to put them in a pan with vegetables:

- put everything at once - they will give a lot of water and will be stewed, not fried. This is good for those who are contraindicated in frying or for those who just love stewed vegetables.

- We lay out in portions and little by little. Then the juice will have time to evaporate, the mushrooms will take more oil and acquire a ruddy color and corresponding taste.

The taste of minced meat, accordingly, will also change, so we choose what we need.

  1. We keep the vegetables in the pan until the mushrooms are ready, then we cool everything at room temperature under the lid - it’s useless if the mushrooms dry out, and we pass everything through a meat grinder or grind it in a blender.

If you want a completely homogeneous consistency, scroll them a couple of times, and if you like to feel the pieces, one is enough.

You can use such minced meat for all of the above dishes, and if we decide to make cutlets out of it, add an egg and a little bread soaked in milk to the composition. This amount will require 1 slice.

As a filling for lean manti or potato zrazy, you can use it in its pure form without adding anything.

  1. We put a liter of water on the fire, add some salt, add 2-3 peppercorns, a couple of bay leaves and bring to a boil. We wash a pound of fresh mushrooms and put them whole in a saucepan. Bring to a boil again and hold for another 3-4 minutes, then recline in a colander and let cool.
  2. We grind the finished mushrooms in a blender or meat grinder and put the mass on a hot oiled pan. Fry, stirring continuously, for 5 minutes, pepper and add 2 tbsp. tomato paste. If it does not diverge well, dilute with water (1-2 tablespoons) and simmer for another 5 minutes.
  3. In a separate pan, fry the onion (1 large head or 2 smaller ones) and medium chopped carrots until golden.
  4. As soon as everything is ready, combine the mushrooms and frying, mix well, taste for salt.
  5. You can leave the minced meat with noticeable inclusions of onions and carrots, or you can grind it with an immersion blender until completely smooth - it's up to you.

In the first case, it will become an ideal filling for pancakes or zrazy, for meat rolls. In the second, it can be diluted to the consistency of a sauce by simply adding 1/3 cup of boiled water and heating in a pan, or stuffed with eggs or bell peppers.

Minced mushroom with cream

It turns out very tender and goes well with light vegetable dishes.

  • Pour 600 g of mushrooms with boiling water and hold for 5 minutes. Then we drain the water, leaving ¼ cup of the broth, cool them and cut them into large pieces - this way more taste will remain in the mushrooms.
  • Put in a hot pan, fry in a minimum of oil until golden brown and set aside. Separately, fry 2 small onions, cut into half rings, until golden.
  • We pass both mushrooms and onions through a meat grinder, mix and put it back into the pan.
  • Pour the mushroom broth and ½ cup of cream. As soon as the mixture boils, salt, season with white pepper and nutmeg. We keep on low heat without a lid so that excess moisture evaporates freely.
  • If it seems that it turned out watery, feel free to add 1-2 tsp. flour. The main thing is not to put too much of it, remember that it swells.

As soon as the consistency suits us, turn off the gas and let the minced meat cool at room temperature.

Mushroom mince with cheese and herbs

The taste of minced meat also turns out to be very soft, so we process a pound of mushrooms in the same way as in the previous recipe - brew with boiling water, and then, coarsely chopped, fry immediately with onions.

  • Grind in a blender along with 1/3 bunch of greens (cilantro, dill or parsley).
  • Three on the smallest grater 70 - 80 grams of any hard cheese, combine it with minced meat and mix everything.

We use it as a filling for all types of snacks, as well as for hot vegetable dishes: the cheese in the composition will melt, and our potato boats or stuffed eggplants will turn out with a golden crust.

- 1 pinch of nutmeg
- salt, ground black pepper, seasoning for mushrooms.

A fork of cabbage is blanched entirely in hot water, and after cooling, the leaves are removed from it, thickenings are cut off on them, and each leaf is cut in half. Hard cheese is rubbed on a grater. Onions are peeled and finely chopped; the third part of the onion is left for frying the mushrooms, and the rest will go into minced meat. Peeled and washed carrots are also grated and mixed with minced onions. Mushrooms are cut into small pieces, boiled for 10 minutes (champignons can not be boiled) and lean back into a colander to drain.

Vegetable oil is poured into the pan and heated. Onions and carrots are fried in it, after which minced meat is added to them and fried until crumbly. To the semi-finished minced meat, tomato paste slightly diluted with water, salt and ground black pepper to taste, paprika and other seasonings are laid.

Mushrooms are fried in a separate pan with the remaining onion, seasoned with spices, salted to taste, and milk is poured into them and wheat flour is poured. The resulting mass is thoroughly mixed and stewed over moderate heat for about 5-7 minutes. Grated Yantar sausage cheese, ground nutmeg, chopped fresh herbs (parsley) are added to the mushrooms, and all this is mixed.
