  • 600 ml milk
  • 3 eggs
  • 3 tbsp. l sugar
  • 0.5 tsp vanilla sugar
  • a pinch of salt
  • 2 cups of flour

  • 2 tbsp. l sugar
  • 0.5 cups hot milk
  • 50 g butter

I'm talking about something as delicious as poppy seed filling for pancakes. Strictly speaking, this filling is quite versatile and can be perfect for yeast rolls and shortbread bagels.

Poppy filling, or rather poppy seeds prepared for it. is an important component for Christmas kutia, one of the main dishes of this holiday. And I traditionally make pancakes with poppy seeds for Christmas.

How to prepare poppy seed filling?

In addition to poppy seeds, be sure to add raisins, nuts and honey.

Poppy filling recipe:

  • Poppy – 1 cup (about -120 grams)
  • Nuts – 0.5 cups
  • Raisins – 2-3 tbsp. spoons
  • Honey – 1-2 tbsp. spoons (can be replaced with sugar)
  • Vanillin - on the tip of a knife
  • Lemon juice – 1-2 tsp (optional, if the filling seems very sweet to you)
How to prepare poppy seed filling correctly?

Steam the poppy seeds several times with boiling water and drain the water. Grind the slightly cooled poppy seeds in a mortar until white.

If there is no mortar (like I have J), ​​we do it differently. Depending on my mood, I solve the problem of not having a decent mortar or makitra in two ways:

  1. I grind dry poppy seeds in a coffee grinder, and then gradually dilute them with boiling water until I get a white paste. Not according to the rules, but it turns out well.
  2. In the second case. I pour boiling milk over the poppy seeds (for a glass of poppy seeds, 120-150 ml of milk and half a glass of sugar). I keep it on low heat for 3-5 minutes so that the milk is absorbed. Then I put it in a blender or put it through a meat grinder twice (if the blender is busy and the son is free J). If I use this method of preparing poppy seeds, I do not add sugar or honey to the filling!

We also steam the raisins in boiling water. Then it can be passed through a meat grinder along with the nuts, or you can leave it whole and finely chop the nuts. It's up to anyone, as they like.

Add vanillin and honey to the resulting thick mass (if necessary, see point 2)

If the filling seems very thick to you, then carefully add boiling water or lemon juice drop by drop.

I like pancakes with poppy seeds to have a uniform amber “color,” so I try to add eggs with intensely colored yolks to the dough. If their color leaves much to be desired, I don’t get upset either and add a couple of tablespoons of turmeric or saffron tincture to the dough, or finally a tablespoon of carrot juice. You don’t have to add anything at all, but the pancakes will turn out not amber, but just light yellow. I bake pancakes on one side only, and put the filling on the fried side.

And the second side will give the desired uniformity to the finished pancakes. And the fact that one side of the pancake turns out raw is not scary, because this is a semi-finished product, which we will bake or simmer in a cauldron for quite some time.

The only thing I want to warn you is that if you are preparing pancakes with a reserve, then fry them in a frying pan more thoroughly, and on both sides.

Well, I fry my pancakes on one side, fill them right away and cook them until done.

We do the same with the poppy seed filling as we did with the cottage cheese filling when we made pancakes with cottage cheese - we wrap the pancakes in the form of rolls,

Cut each pancake into three parts.

We grease the cauldron with vegetable oil, place a small saucer upside down on the bottom, and grease it with oil too. This is to prevent the pancakes from burning. I had poppy seeds soaked in milk in the refrigerator for a little less than a day.

Add salt to melted and cooled butter.

You can add sugar to this pancake dough if desired. Better to do it now.

I broke the eggs and mixed them with butter. Whipped it.

Pour in milk and stir.

I sifted the flour - but not all at once, but in several stages.

I beat the dough so that there are no lumps.

The dough turns out quite liquid - as it should be. Let it brew for half an hour.

Heated up the frying pan. I lubricated it with a teaspoon of oil - only once.

I baked pancakes on both sides.

I got 10 pieces.

I took the prepared, swollen poppy seeds out of the refrigerator.

The amount of honey can be varied to taste - if you like it sweeter, add more.

Mix the poppy seeds and honey thoroughly. I put 2/3 of it into the chopper.

I beat it at medium speed, turning it on at maximum speed for literally 5-10 seconds at the end. I set aside half of this poppy to add to the 1/3 that I had previously left untouched.

I crushed the poppy seeds remaining in the blender at maximum speed into a porridge-like mass.

I combined poppy seeds of all three consistencies together - whole, slightly crushed and heavily ground. Mixed it up. The filling is ready!

I turned the baked pancakes over to start stuffing with the first baked pancake, which was softer and more pliable.

Distributed the filling over the entire area of ​​the pancake.

The pancakes turn out very tasty and tender! Whether you go with tea or coffee, you don’t need any other dessert;)

And this time I took 2 glasses of sour milk, 2.5... almost 3 glasses of whey, added 3 eggs and 3-4 spoons of sugar, beat with a mixer. Then I added 2.5 cups of flour, this is about 320-350 g, and half a teaspoon of soda. Along with the flour, I added 4 tablespoons of poppy seeds and half a teaspoon of cinnamon. Mixed and then whisked again to avoid lumps.

I poured in 3 tablespoons of sunflower oil, lightly greased the pan before the first pancake, and began to bake.

The first couple of pieces were difficult to remove, and then the frying pan apparently got hot, and things started going well.

Ready-made pancakes can be rolled into rolls or envelopes, or you can just eat them! Delicious with honey, cream, sour cream, jam, fermented baked milk! And the best thing is to wrap them in poppy seed filling for pies and rolls. It's amazingly delicious!

  • 150 ml milk

1. Beat eggs into a large bowl.

2. Mix them with sugar, salt and beat a little.

3. Add flour and mix well until there are no lumps in the dough.

4. Dilute with milk. The dough should be quite a bit thick, even less thick than liquid yogurt. Add butter to the dough.

5. Fry the first pancake in a greased frying pan, having previously heated it well. Fry all the following without fat. Turn over or remove when the edges of the pancake are well dried.

6. Fry all the pancakes.

7. Soak poppy seeds in boiling water for 30 minutes and grind with an immersion blender, adding hot water little by little. You can use other methods, for example, grind it in a coffee grinder and then soak it.

8. Mix mashed poppy seeds with sugar and distribute evenly over the inner surface of the pancake.

9. Roll the filled pancakes into tubes and cut. Serve with honey and it is best to warm them up in the microwave before serving - this will make the filling tastier and the honey will melt.
