How to make puff pastry rolls. Puff pastry rolls with cheese and mushrooms

22.10.2023 From vegetables

Ready-made puff pastry is a godsend for connoisseurs of delicious baked goods. I often buy several packages, choose the filling (condensed milk, jam, cottage cheese, fruit) and prepare either strudels or bagels. But you can choose completely different, unsweetened products. Dutch roll with ham and vegetables will take a special place on your menu. And all because this is an option for both breakfast and dinner. It's very easy to prepare and it's the first thing that gets swept off the table.

This kind of filling is very close to us, but when... Frankly, I often cook this way myself, choosing new ingredients and spices each time. The appetizer is what you need, but lavash has one drawback: it can easily dry out if you keep the roll in the oven a minute longer. Therefore, I decided to switch to puff pastry, which I advise you to do too.

Ingredients

Preparation

During baking, they are not fresh, but they give the dish a special piquancy; the cheese melts and permeates every piece of filling. And the ham... The aroma it fills the kitchen with is simply divine. I described everything in detail, and I really wanted a Dutch treat. And you? Cook it yourself and share the recipe with others.

A puff pastry roll with minced meat looks incredibly appetizing, and the aroma cannot be described in words! Preparing such a roll is not at all difficult, because the recipe uses ready-made puff pastry, ideal even for those who are not into baking. Moreover, you can take both yeast puff pastry and yeast-free dough, as such you will not feel any difference in taste, in both cases the roll is prepared the same way. The only thing is that with yeast puff pastry, the outer layer of the roll will be more airy.

Ingredients

  • 500 g pork (can be replaced with beef)
  • packaging of ready-made puff pastry without yeast (500 g)
  • 1 egg
  • 1 onion
  • 3 tablespoons sour cream
  • some flour
  • salt, pepper, sunflower oil

How to make puff pastry roll with minced meat

Grind the meat into minced meat along with the onion, peeled and cut into several pieces. Season it thoroughly with salt and pepper and mix with your hands. You will need about a teaspoon of salt, and a quarter of a teaspoon of pepper.

Then turn on the oven to warm up to 180 degrees. At the right moment it will just reach the required temperature.

Fry the minced meat until half cooked in a frying pan, adding a couple of tablespoons of sunflower oil.

Pre-defrost the finished puff pastry. There were four layers in my pack of dough, which I had to combine into one rectangular layer.

Sprinkle the work surface with a light layer of flour and arrange the layers of dough so that each subsequent one slightly covers the previous one. Then we'll go over the dough with a rolling pin and seal it.

Roll out the dough to the size we need, mine turned out to be about 30 cm by 40 cm.

Then put our filling on top of the dough and distribute it evenly, not reaching the edges by 3-4 cm. Lightly grease the layer of minced meat with sour cream, this will make the filling more tender and juicy.

Form a roll. Fold the long edges of the dough inward and roll the roll (the seam will be at the bottom).

Then beat one egg and brush it over the entire surface of the future roll.

We transfer the roll to a baking sheet and put it in the oven (let me remind you that we have already preheated it to 180 degrees). Bake the puff roll with minced meat for 50 minutes, then remove from the oven, cut into portions and serve with vegetable salad and various sauces.

Classic puff pastry is quite difficult to prepare. It’s easier to buy ready-made and take it out when you want to bake something. But, if you are a supporter of everything homemade, look on the Internet for simplified ways to prepare puff pastry. The recipes below assume you already have it.

If you have your own signature puff pastry recipes, then welcome in the comments. Let's share culinary secrets with each other!

A puff pastry roll is a real lifesaver for many modern housewives. Especially if guests are already on the doorstep, and there is nothing to pamper them with. The filling for the roll can be either sweet (for tea, for example), or meat or vegetable (as an independent dish). Moreover, even inexperienced housewives can prepare both options.

Store-bought dough or homemade?

One of the most burning questions for housewives is what kind of dough to use. It would seem that a puff pastry roll should be exclusively homemade from start to finish. However, not everyone has time for such a lengthy process. And industrial puff pastry is no worse! It doesn't even need to be completely defrosted before use. 5 minutes of heating in the microwave is enough. Therefore, it makes no difference which product will be used. Puff pastry rolls, the recipes for which will be described below, turn out tasty, juicy, and airy.

Yeast or non-yeast dough

The fundamental difference between these two types of dough is how they rise. That is, a meatloaf made from puff pastry with yeast will spread a little on the baking sheet, become taller and acquire a large number of layers. And this is not very good for such a filling. But a puff pastry roll (sweet or with berries) without yeast will turn out too flat and inconspicuous. Therefore, you need to choose based on what filling will be used.

Meat option

Most of all, this dish is liked by men, who usually don’t particularly like baking. Meatloaf made from puff pastry (store-bought) is prepared very quickly if all the ingredients are prepared in advance. We will need:

  • minced meat (it’s good if it’s made from pork and beef with the addition of onions and a loaf soaked in milk so that the consistency is stiff);
  • bulb onions;
  • spices;
  • White cabbage;
  • hard cheese;
  • yeast-free puff pastry.

Step 1: filling

It’s easy to prepare: the minced meat is fried in a frying pan with a small amount of vegetable oil. Finely chopped onions and cabbage twisted through a meat grinder are gradually added to it. Spices are always used solely to taste. The cheese is grated on a fine grater and gradually introduced into the hot minced meat. You can add a couple of cloves of garlic for flavor. At this time, it is better to take the dough out of the freezer so that it thaws. Or you can defrost it in the microwave according to the instructions.

Step 2: Dough

Of course, a store-bought product is much more convenient to use than to knead it yourself. Puff pastry rolls, the recipes of which can be very different, are prepared on average in 20-40 minutes at a temperature of 170-200 degrees. And to make them especially tasty, there is a little trick. So, the finished dough, which is most often sold in the form of frozen sheets, needs to be rolled out with a rolling pin into a small thin pancake, connecting the sheets together. This will make it easier to roll the roll later. If you don’t have a rolling pin at hand, a simple glass bottle can replace it. There is no need to sprinkle flour on the dough; it will not stick.

Step 3: Rolling the Roll

This is the most difficult moment in cooking, since the twist determines how the dish will turn out in the end and how neat it will be. A puff pastry roll is rolled as follows: first, the filling is laid out over the entire surface, retreating 5 mm from each edge except one. This is necessary so that you can pinch it well. The dough with filling is rolled into a tight stick, and punctures are made throughout the roll using a fork.

Step 4: Bake

This is the simplest of all cooking. Preheat the oven to 200 degrees, line a baking sheet with parchment paper, which will prevent the bottom of the culinary product from burning. The puff pastry meatloaf is laid out so that the edges do not touch the walls of the dish on which it lies. If you use a simple flat baking sheet, then the product can be placed however you like. Baking time is 30 minutes.

Sweet pastries

One of the most popular and simple recipes is the version stuffed with apples, cinnamon and sugar. It is not difficult to prepare it, even if you have no experience. We will need:

  • apples;
  • yeast puff pastry;
  • cinnamon (1 heaped teaspoon);
  • sugar (3 heaped tablespoons).

If you like your baked goods sweeter, you can increase the amount of granulated sugar. Rolls made from puff pastry dough differ from culinary products based on non-yeast dough in that the former significantly increase in volume during baking. The result is airy and fluffy puff pastries, which consist of many thin layers. The filling for apple roll is prepared simply: wash the apples, peel them, remove seeds and cores, and chop them finely. Sugar is mixed with cinnamon. This sweet mixture is poured onto apples. The filling is ready. The dough is defrosted and rolled out to a thin rectangle. The apple filling is spread over the entire area so that about 10 cm of free space remains on one edge, otherwise it will not be very convenient to twist the roll. The rolled dough is placed in the oven for 20 minutes, provided that the temperature is about 200-220 degrees.

Curd puff roll

Children especially like this option because it is tasty, sweet, and nutritious. A puff pastry roll filled with cottage cheese sometimes turns out a little moist inside. This does not affect the taste at all. For preparation you will need the following products:

  • raw chicken egg;
  • granulated sugar;
  • cottage cheese;
  • raisins or dried apricots (pre-soaked);
  • puff pastry dough;
  • powdered sugar.

Beat the egg with a mixer until foamy, then gradually add sugar and beat again. Cottage cheese is gradually added to the sweet mass. At the same time, do not turn off the mixer, constantly whisking the filling with it. The result should be a curd mass, the consistency of thick sour cream. The dough is rolled out to a flat pancake 2-3 mm thick. It is filled with cottage cheese filling, then finely chopped raisins or dried apricots. The roll is carefully twisted so that the filling does not come out at the edges. The outside of the dough is coated with egg yolk or butter to make the baked goods golden brown. The roll is baked in the oven for 20-30 minutes at a temperature of 180-200 degrees. The finished culinary product is sprinkled with powdered sugar. There is no need to pierce the dough with a fork before putting it in the oven.

It is noteworthy that it is not recommended to cook puff pastry rolls with frozen berries. First, they spread while baking, so the inside of the baked goods is very moist. Secondly, when cooking, they produce too much juice, which simply flows out. As a result, the layers fall off and the baked goods turn out watery and bland.

Fresh berries are well suited for puff pastry. They do not defrost during cooking and do not spread. Strawberries, for example, can be finely chopped and sprinkled with sugar just before rolling. But it’s better to take cherries immediately without seeds, allowing the juice to drain a little. It is better not to peel apricots, peaches, and nectarines, but it is advisable to finely chop them before placing them on the dough. You can sprinkle sugar on the already rolled roll, and not on the filling itself. This way the baked goods will turn out especially sweet and rosy. There is no need to additionally lubricate it.

Hello, my dear cooks! This is not the first time I am writing to you. I really like your recipes. Thank you very much for the colossal work you do. My family really loves puff pastry rolls; I have been collecting recipes for such rolls for a long time. True, I have already accumulated a lot, but I haven’t come across a puff pastry roll with apricot jam and almonds. Now my piggy bank is replenished, I will definitely bake this yummy. By the way, I have already prepared sweet rolls from instant puff pastry. I'm happy with the result. It turns out no worse than from a puff pastry. Thanks again for your work - very useful. Every day I visit your page and always find something new for myself.

Sweet puff pastry roll with apricot jam and almonds - it's cool. I expected everything from you, but this... You might think that someone doesn’t know how to make a sweet roll from puff pastry. My 8 year old son does this every week. You killed me.

This is a recipe for my son, he loves this kind of baking. I’ll definitely make it, I think it’s very tasty. And it’s easy to prepare, and you can use store-bought or other jam. Stored well.

Hello my name is Sergey. I made a puff pastry roll with apricot jam. It turned out fine, just what I wanted. I took the dough ready. Fast, easy, delicious. In general, I like your lessons. You always explain everything clearly. We follow the recipe exactly and everything is fine and convenient. I love this kind of baking.

Hello, Dear Emma Isaakovna. I am your student from school 249. I don’t know whether you remember me or not, my name is Tonya, my school name is Yakovleva. I love you very much. You taught us to be human, first and foremost. Of course, you taught us physics, and I personally found it useful in my life. But first of all, a personal example of intelligence and decency. When we were children, we didn’t understand this, but you never tired of showing us what real human relationships are. So, little by little we absorbed it, and I can say with confidence, since I personally know almost all of your students, we are all, first of all, decent people and value decency in people. Thank you and low regards. Well, when I suddenly accidentally saw you on the Internet, I was simply stunned. Learning to cook from Emma Isaakovna – I couldn’t even dream of this. I remember how we gathered at your house with the whole class and cooked manti, sometimes dumplings, all together, then we all ate together - these are unforgettable moments. Emma Isaakovna, I am happy that I found you. All our guys say hello to you.

Cool recipe, but I would simplify everything even more. I bought dough and jam. The dough, already rolled out, spread with jam, sprinkled with nuts, rolled and into the oven. Pulled it out, cooled it, ate it. That's the whole story. Better yet, I bought the finished roll right away and ate it. But this is so, jokes, but in general, everything is as it should be.
A sweet roll made from puff pastry is great, but I don’t know whether it will bake or not. Need to try. Although on the other hand, if Grandma Emma gives the recipe, then everything will be fine. Everything I cooked according to their recipes was a blast. I wonder if you make such a roll, but not with a sweet, but with a savory filling, for example, with cheese or fish, it will probably also be delicious. Although, I prefer sweet rolls made from puff pastry.

Listen, it turned out to be such a good day, sunny, spring. We walked in the forest all day, had a great time, but were a little tired. I came home and thought I’d check my email and go to bed. But it was not there, there was a new recipe from Emma’s grandmother - Apricot puff pastry roll. I looked and thought: there is puff pastry, there is jam, there are almonds, I’ll go cook - tomorrow I’ll have something to drink tea with. I cooked it, waited half an hour for it to cool down, and my husband and I devoured it, it was delicious. Thank you my dears for your concern.
