Autumn puff pastry pie is made from store-bought yeast-free puff pastry, fresh apples and apple jam. I made this pie out of my winter nostalgia for autumn. I don’t know if you will agree with me, but the combination of fragrant apples and crispy puff pastry is the best thing you can come up with. If you add jam, apple jam, to them, you get such a doubling of taste, such a saturation of baked goods with “apple spirit” that you won’t even remember the cold, indifferent winter...

Ingredients

To make puff pastry pie with “apple spirit”, you will need:

  • 500 g puff pastry (I use yeast-free)
  • 1 egg
  • 300 g apple jam
  • 2 tbsp. l. flour
  • 1 apple
  • 1 pinch cinnamon
  • 2 tsp. ghee
  • 1 tbsp. l. Sahara
  • A little vegetable oil to grease the pan

To make the pie more interesting, I added a fresh apple, which works great in this cake, and ground cinnamon.

Preparation

    After dusting the counter with flour, roll out half the puff pastry sheet to cover the baking dish or baking sheet. Grease a baking sheet and place the rolled out dough on top, letting any excess dough hang over the edges.

    Using a knife, cut off any dough that extends over the sides.

    To help the cake hold its shape better during baking, make approximately 50 punctures with a fork along the entire diameter of the baking sheet.

    Spread the dough with apple or any other jam.

    Cut the apple into 4 parts, cut off the core, and then cut into thin, even slices. The most convenient way to do this is with a vegetable cutter.

    Place the apple slices on top of the jam.

    Roll out the second part of the puff pastry sheet, lightly dusting it with flour.

    Make cuts with a knife of approximately the same size, at a distance of 1 cm, placing them in a checkerboard pattern.

    Slightly stretch the sheet of dough with slits and place it on top of the pie, letting the edges hang over.

    Trim off any excess dough around the edges and press one layer of dough against the other at the edges.

    Beat 1 egg with a fork and spread it over the dough mesh. Place the pie in the oven, preheated to 200 degrees for 15 minutes.

    Collect the remaining dough, roll it into a ball and roll it out into a thin layer, brush with vegetable or melted butter, sprinkle with sugar and cinnamon, you can also add chopped nuts.

    Pressing one edge of the cake along the entire length, roll it evenly into a roll.

    Cut the resulting roll into disks 1-1.5 cm thick.

    Place the cookies on a baking sheet greased with vegetable oil and bake until browned at a temperature of 200 degrees. (10-15 minutes)

    After 15 minutes, remove the apple pie and repeat the egg glaze.

    Place it back in the oven and bake until nicely golden, about 10 minutes longer.

Let's start with something sweet. It would seem, what kind of recipe is there: defrost it, roll it out, add apples and you’re done. However, it’s the details that make a dish, and from the same set of products you can create completely different desserts, and a beautiful presentation will even turn it into a restaurant dish.

Ingredients:

  • Puff pastry - 1 package;
  • Apple - 3-4 pieces;
  • Sugar - 3-4 tablespoons (depending on the sweetness of the apples and your taste);
  • Nuts - 1 tablespoon (chopped);
  • Cognac - 1 tablespoon (optional);
  • Egg - 1 piece.

A layer pie with apples from ready-made dough is prepared in just a few steps:

  1. Remove the dough from the freezer and defrost completely.
  2. In the free time we have, we prepare the filling. We thoroughly wash the apples, peel them (if desired, you can leave the peel for color), remove the core, and cut into thin slices. Then pour the resulting mass with cognac and return to the melted dough. If you don’t have cognac or don’t plan to include it in the preparation, it is advisable to sprinkle the slices with lemon juice so that they retain their snow-white color.
  3. Lightly sprinkle a work surface with flour and roll out a sheet of softened dough on it. It will bake best if it reaches a thickness of 3-4 mm.
  4. Now we come to the most important thing, the preparation: lightly coat the mold with oil, place the rolled out dough on it, pierce it in several places with a fork so that during the baking process the dough fits well and does not tear. Arrange the apple slices, then sprinkle them with a mixture of sugar and almonds.
  5. In principle, you can complete the process here, leaving the pie open. If the second layer has defrosted and you don’t want to put it back in the freezer, you can use it for decoration.
  6. Roll out the remaining layer and cut into thin strips. You can make a kind of braid, simply lay it out crosswise or diagonally. The taste will not suffer at all even if you cover it with a whole rolled out layer, pinching the edges. But in this case, do not forget to pierce the top layer with a fork.
  7. The final touch is to brush the surface with beaten egg. This will guarantee the appearance of a beautiful and appetizing golden brown crust. If desired, you can sprinkle the top with additional sugar.
  8. Place the pie in an oven preheated to 220 degrees. This temperature is needed so that the dough rises well and we get a multi-layer structure. A lower one will not allow the dough to rise, and a too high one will simply burn it.

After about 15 minutes you should look for the first time, but the pie will be ready in about 25 minutes. Serve it cooled, sprinkled with powdered sugar or a mixture of powder and cinnamon. The latter, by the way, can be added to the filling instead of cognac.

Apple baking with yeast dough

Lush, incredibly delicious and incredibly simple. You don't need any exotic products for apple pie; everything is always on hand. The formula for preparing it is incredibly simple: a little time + a little effort + a little inspiration, and that’s it, you’re done!

Ingredients:

  • Yeast dough - 1 package;
  • Apples - 3-4 pieces;
  • Egg - 1 piece;
  • Sugar - 3 tablespoons;
  • Butter (margarine) - 10-15 grams for greasing the pan.

Here we follow the same algorithm:

  1. While the dough is defrosting, prepare the filling. Wash the apples, peel them, get rid of the “entrails”, and cut them into small cubes.
  2. Roll out the dough and place it on a greased pan, pierce it a couple of times with a fork. Don't forget to form the sides.
  3. If you have a little time and inspiration, you can lightly simmer the filling in butter by caramelizing it in sugar. To do this, heat the frying pan well, heat the butter on it and then lay out the apples. Reduce the heat and let it simmer a little under the lid, then sprinkle it with sugar and keep it in the pan for a couple more minutes. Let the filling cool slightly, then place it on the adze. These steps can be skipped by adding fresh cubes sprinkled with sugar.
  4. We decorate the top of the pie with ordinary strips of rolled out dough, braids or any other way suggested by your imagination.
  5. Brush the surface with beaten egg and place the baked goods in a well-heated oven for 20-25 minutes. Moreover, half the time it should be cooked at maximum temperature, and the second - at approximately 170 degrees. This is done so that the dough first rises and then bakes thoroughly.

You can serve it sprinkled with powdered sugar and garnished with a mint leaf.

Cabbage

A great option for a quick snack or dinner, especially if you make the filling in advance. With this dish you can make your diet more varied, especially when it comes to the period of fasting, when the range of acceptable foods is not so large. Just remove the egg and the cake meets all the strictest requirements.

Ingredients:

  • Ready puff pastry - 1 package;
  • Cabbage - 300-400 grams;
  • Salt - to taste;
  • Pepper and any other spices - to taste;
  • Onion - 1 piece;
  • Carrots - 1 piece;
  • Vegetable oil - for frying;
  • Egg - 1 piece.

Baking with cabbage couldn't be easier, especially if the cabbage is already prepared. If you need to cook everything from scratch, we do it in several stages:

  1. We leave our dough to defrost while we prepare the filling ourselves. If we have fresh cabbage, then this will take very little time.
  2. peel carrots and onions. Finely chop the cabbage and onion, grate the carrots (choose the size depending on your personal preferences).
  3. Heat sunflower oil in a frying pan and add vegetables, salt and pepper. This point is fundamentally important, because if you put vegetables in cold oil, they will become saturated with it and become too fatty. Simmer until soft and let cool.
  4. You can decorate the pie in several ways: make a closed one according to the principle described above, roll the dough with the filling into small rolls and lay it out like a snail, roll out the layer, making cuts along the edges, put the filling in the center and wrap the top layer with a pigtail.
  5. Brush the top with beaten egg and place in the oven. Bake at 180 degrees until browned.

If desired, you can add fried mushrooms, hard-boiled eggs, finely chopped sausage or frankfurters to the cabbage filling. It can be served either warm or cold. Sour cream is an ideal addition to the pie.

Fish

Another version of a salty snack based on puff pastry. There are a huge number of variations on this theme, because for the filling you can use canned food, cooked or raw fillet, mixing them with a variety of favorite products. The beauty of fish is that it goes perfectly with vegetables, rice, and potatoes. Even on its own, seasoned with herbs and sprinkled with cheese, it will be unsurpassed. So, during the cooking process, you can stick to the recipe below, or create your own unique dish.

Ingredients:

  • ready-made puff pastry - 1 package;
  • egg - 3 pieces;
  • canned fish - 1-2 cans;
  • potatoes - 4 pieces;
  • hard cheese - 150 grams.

Cooking steps:

  1. Take the dough out of the refrigerator to defrost.
  2. Peel the potatoes, cut into small cubes and boil until tender. Whether you mash it or put it directly into the pie in cubes is a matter of your taste, so you can either mash the potatoes or simply drain the water and leave to cool.
  3. Drain the liquid from the canned food and mash it into a paste using a fork. If you are using several jars, you can use a blender for this.
  4. In a separate bowl, beat the eggs with salt and spices (any spices you like), grate the cheese there on a fine grater, mix thoroughly.
  5. Roll out the dough on a floured surface and place in a greased pan, not forgetting to make deep sides.
  6. We lay out the filling in layers: the first is canned food, the second is potatoes. Then fill everything with the egg-cheese mixture and bake in the oven, preheated to 180 degrees.

It will take approximately 30-40 minutes to prepare. Canned fish in this recipe can be replaced with sea fish fillets (300-400 grams); if desired, you can add sautéed onions or greens. The fillet will go well with boiled eggs or rice.

Meat

The fastest option would be a mince pie, especially if you have a small amount of ready-made mince. 20-30 minutes and a wonderful snack or breakfast is ready.

Ingredients:

  • Ready-made puff pastry - 1 package;
  • Minced meat - 400 grams;
  • Mushrooms - 300 grams (optional);
  • Tomatoes - 2 large;
  • Onion - 1 piece;
  • Vegetable oil for frying.

We already know the method for preparing the dough: defrost and roll out. Preparing the filling is also not at all difficult:

  1. Grind the meat through a meat grinder, add salt and pepper. If we use ready-made frozen, defrost it in a special mode in the microwave.
  2. Cut the onion into half rings and sauté. You can marinate in boiling water and vinegar for 20 minutes or just pour boiling water over it, so the bitterness will go away immediately.
  3. Cut the mushrooms (champignons) into slices and fry in a well-heated frying pan in a small amount of vegetable oil.
  4. We put the dough in a greased form, make high sides and begin to lay out the filling: minced meat, then onions, the third layer will be mushrooms, and the last layer will be thoroughly washed and cut into rings tomatoes (you can first pour boiling water over them and remove the skin).
  5. You can leave the pie uncovered or cover it with a second layer of dough, but in this case, be sure to make holes or pierce the surface with a fork in several places to allow steam to escape.

Bake in the oven for 20-25 minutes at 200 degrees. Serve with sour cream or any other sauce you like.

Preparing the pie dough

You need to separate 75 grams of butter from the total mass of butter and melt it.

Wrap the rest of the butter in a bag (or parchment paper) and put it in the refrigerator.

Pour the flour onto the table, add salt and mix well.

Make a well in the middle of the flour and pour water into it. The water should be cold. You can pre-place it in the refrigerator.

Then pour in the cooled melted butter and knead the dough.

Cover the finished dough with a clean bowl and leave for 30 minutes.

Then, make cross cuts on top and roll out the dough in the form of an open envelope.

Place butter from the refrigerator in the middle of the rolled out dough.

The secret to perfect puff pastry is to have the butter at the right temperature. If the butter is too frozen, you won't be able to roll it out. Butter that is too soft is also difficult to roll out, as it causes the dough to break during rolling.

Now roll out the dough with butter into a thin layer. You need to roll it out very carefully so that there are no tears.

We fold the rolled out dough into several layers and roll it out again. After that, put the dough in a bag and put it in the refrigerator for 30 minutes. Thus, we repeat these steps 2-3 more times, each time rolling out the dough 2 times.

We wrap the finished puff pastry in a bag and put it in the refrigerator for at least 4 hours. After that, you can prepare various delicious desserts, pastries, cakes, etc. from it. But in this article we are talking about an open apple pie, so we will prepare it next.

How to bake an open-faced apple and cinnamon pie

We have already done the hardest part (I mean puff pastry). Now all that remains is to take a few more simple steps and our apple pie will be ready.

So, first, wash the lemon, cut it into 2 parts and squeeze out the juice.

Apples also need to be washed, cut into halves and cored. Cut the apples into thin slices and pour lemon juice over them. Firstly, lemon juice prevents the apples from darkening, and secondly, lemon gives the pie a piquant, sour lemon flavor.

Then add sugar, cinnamon to the apples and mix.

Now you need to take the dough and roll it into a thin layer.

The edges of the rolled out dough need to be trimmed evenly. To do this, place a large round plate on top and cut it in a circle with a knife. This way you will have a smooth round base on which we will place the fillings.

Try to lay out the apple filling at a distance of 1-1.5 cm from the edge. If you want everything to be even, you can attach a smaller plate to the cut dough and lightly draw a border along it with a knife.

Place the apples neatly in a circle.

The edges of the remaining dough can be brushed with beaten egg.

Place our pie in the preheated oven and bake until done (about 25 - 30 minutes).

When the pie is baked, grease the apples with any jam or jam.
