  2. The washed rowan berries are divided into small clusters and placed in the freezer for half an hour. This will remove the bitterness of the rowan, leaving only its astringency.
  3. Plum fruits are divided into halves and the seeds are removed. The best choice would be the Hungarian variety. The main thing is to choose not overripe fruits, but rather hard ones.
  4. Place a suitable pan over moderate heat and prepare the syrup. To do this, mix 300 g of sugar and 300 ml of water and stir until a syrup forms. After the syrup is ready, plum fruits and both types of rowan are poured into it. At this stage of cooking, you can add cloves. You need to cook for 5 minutes. The main thing is not to forget to remove the foam.
  5. After this, the jam is allowed to sit for 2-3 hours, then the process is repeated twice.
  6. The readiness of the jam can be determined by eye - the plum fruits take on a honey hue, and the red rowan berries take on a rich amber color. It is unacceptable to overcook the jam - plums and rowan berries must retain their shape.
  7. After the cooking process is completed and the product has cooled, the plums and rowan berries are removed from the syrup with a slotted spoon and placed in a sieve to allow the syrup to drain.
  8. Rowan berries and plums are sprinkled with fine sugar (or powdered sugar) and placed on an oven rack to dry for 2.5 hours at a temperature of about 100 degrees. Plums and rowan berries should not be allowed to dry out.
  9. The resulting dry jam is also similar in consistency to candied fruits. It can be stored even at room temperature, provided it is tightly sealed in a glass container.

Chokeberry is very useful for people suffering from diabetes. A question arises regarding jam, because its preparation requires a fair amount of sugar. However, you can make chokeberry jam without granulated sugar:

After this, apples are added to the jam. When the pan has cooled completely, it is put on fire 3 times. Cherry leaves are placed in it, strung on a thread or placed in a gauze bag. When the jam is completely ready, the leaves are removed.

The readiness of the jam is checked in this way. If the drop does not spread on the plate, then it is ready.

Preparation

After the berries have stood in water for two days (we drain them a couple of times a day), prepare the syrup and add the rowan into it. Cook for an hour, at the end add vanillin and citric acid. The berries should then sit in a colander overnight. Then we scatter them on paper and let them dry for another day. Will be stored well in a glass jar, sprinkled with sugar. Don't pour out the syrup - it's great in tea!

For centuries, people have collected various berries in forests and grown them in gardens, because their benefits can be discussed endlessly. Berries contain microelements and vitamins necessary for the proper functioning of the immune system, and they are also rich in fiber, which normalizes intestinal function. One of the healthiest berries in garden plots is chokeberry (known to everyone by its name, chokeberry). Its homeland is North America; it was brought to Russia only in the 19th century.

At first, it was grown only for decorative purposes, since the white lush inflorescences look very attractive in the spring, and in the fall the bushes attract with bright red leaves.

Chokeberry berries have a tart, bright taste that is slightly astringent to the tongue. The harvest is harvested in August-September.



The calorie content of fresh berries is only 56 kcal per 100 grams, which is why they are called a low-calorie, dietary product, which cannot be said about chokeberry jam. On average, its calorie content is about 400 kcal per 100 grams, and although it contains virtually no fat, it contains room for 74.8 grams of carbohydrates. The high content of the latter suggests that jam should be consumed in small portions for health purposes.

The main minerals contained in chokeberry are iron, molybdenum, fluorine, boron, manganese in high concentrations and a huge amount of iodine (about 100 mcg per 100 grams of berries - this concentration is 4 times higher than in raspberries and gooseberries), which has a beneficial effect on the health of the thyroid gland.

Iodine deficiency in our country is one of the most pressing problems, so eating berries and chokeberry preparations will help prevent hormonal problems based on iodine deficiency. Chokeberry contains vitamins A, C, E, PP, and B vitamins. Due to the high content of tannins and pectin compounds, chokeberry has a beneficial effect on the intestines and helps cleanse the body, removes radiation and heavy metals.

Jam is the main method of preserving chokeberry berries; this method allows you to preserve the maximum amount of useful substances, while storing such preparations is quite simple.


Speaking about the benefits of jam, it is worth noting the positive effect this product has on the body:

  • lowers cholesterol levels;
  • lowers blood pressure (for hypertension stages 1 and 2);
  • increases immunity;
  • regulates liver function (has a choleretic effect);
  • strengthens blood vessels;
  • facilitates the course of diseases such as measles, scarlet fever, rheumatism and seasonal allergies;
  • supports thyroid health due to iodine content;
  • indicated for neuroses and insomnia;
  • helps prevent atherosclerosis;
  • used to treat radiation sickness due to its high vitamin P content;
  • stabilizes heart function due to the high potassium content;
  • reduces swelling.


Despite the enormous benefits for the body, some people should limit or even prevent the consumption of chokeberry berries. The main contraindications for eating these berries are low blood pressure (hypotension), diseases of the gastrointestinal tract associated with high acidity, stool disorders, ulcers or gastritis; people with frequent blood clots, varicose veins and thrombophlebitis should also avoid consumption. These contraindications are associated with the ability of chokeberry berries to thicken the blood and lower blood pressure.

There are many generally accepted recipes for chokeberry jam, but the main components always remain:

  • black ripe chokeberry berries;
  • pure water;
  • granulated sugar.

Adding citrus fruits, such as lemon or orange, to the preparations makes the jam even more useful during the cold season. Lemon adds sourness to the sweetness and viscosity of chokeberries.

Adding nuts to jam adds flavor and makes it more effective in fighting anemia. Most often you can find recipes with a combination of chokeberry, citrus fruits and nuts.



Interesting recipes are those that use a combination of chokeberry and plums. This jam turns out to be a beautiful ruby ​​color thanks to chokeberry berries, and plums, like apples, soften its bright, unique taste.

You can add a pleasant aroma of cherries to jam by adding cherry leaves to it - this is an old Belarusian recipe. A variety of homemade liqueurs and liqueurs are made with the same combination.

The use of various spices can advantageously emphasize the taste of the berries and add piquancy. For example, in cooking, a classic combination is apple and cinnamon; when chokeberries are added to such jam, it acquires an oriental note and a pleasant taste. Ingredients:

  • 1 kilogram of chokeberry berries;
  • 600 grams of granulated sugar;
  • 40 ml water.

The berries need to be washed well and placed in a large container. Cover the berries with sugar and let stand until the chokeberry begins to release juice (about 1 hour). Add water and place on the stove. We do two cooking approaches: the first time we cook the jam for 20 minutes, turn it off and cool completely (preferably more than 12 hours), the second time we also boil it for 20 minutes. Divide the jam into jars and close the lids.

Storage at room temperature is allowed.


Recipe for chokeberry jam with citrus fruits

When cooking, it is better not to peel citrus fruits, as they contain a lot of vitamins and piquant taste.

Ingredients:

  • 1 kilogram of berries;
  • 2 cups sugar;
  • 1 glass of water;
  • 2 oranges;
  • 1 lemon.

The berries are placed in a large container suitable for cooking and filled with water. After this, place the container on the stove and boil the contents for 5 minutes. Then add half the sugar and boil for another 5 minutes, stirring during the process. Next, you need to remove the jam from the stove and cool. At this time, you need to start preparing the citrus fruits - wash them, chop them with a knife, blender, or grind them in a meat grinder. When the jam has cooled, put it on the fire, add the remaining sugar and bring to a boil. After this, lemon and oranges are added to the container with jam, everything is mixed and removed from the stove. All that remains is to pour the jam into jars.



Aronia jam with nuts

Ingredients:

  • chokeberry berries – 0.6 kg;
  • granulated sugar – 0.6 kg;
  • water – 1 liter;
  • walnuts – 150 grams;
  • apples – 200 grams;
  • lemon - half.

The chokeberry fruits are poured with hot water for 12 hours, then this broth is poured into a separate pan - it will be needed to prepare the syrup. To do this, take 1 glass of broth and add the entire amount of sugar to it. Next, brew the syrup.

While it is cooking, peel and seeds the apples. We chop them and the lemon at random, the nuts also need to be finely chopped. Now berries, nuts and apples are placed in the syrup and wait until it boils. After this, boil the jam for 15 minutes and remove to cool for 3 hours. Three more such repetitions of 15-minute cooking must be done with cooling intervals of 3 hours. Before the last cooking, lemon is added. Pour into jars and seal.



Rowan-cherry jam

Ingredients:

  • 1 kg chokeberry;
  • 100 grams of cherry leaves;
  • 0.7 liters of water;
  • 1 kg granulated sugar.

Thoroughly peel and rinse the cherry berries and leaves. Pour water into a saucepan, boil and add half of the cherry leaves. Cook for 5 minutes and remove the leaves. Cool the broth and pour it over the berries for 8 hours. After this, pour all the liquid into the pan, put it on the stove and add the remaining cherry leaves. Cook again for 5 minutes and remove. Now add chokeberry berries to the hot broth. Leave the berries to steep, and after cooling, strain off the liquid. Take a large container for making jam, pour all the sugar into it and pour in 190 ml of broth. Place on low heat and wait for the sugar to dissolve, then add the rowan fruits and cook until the jam becomes thick.



Spicy chokeberry jam with apples

For this recipe, it is better to choose strong, sweet and sour apples.

Ingredients:

  • chokeberry – 0.6 kg;
  • apples – 3 pieces;
  • granulated sugar – 0.5 kg;
  • cinnamon stick;
  • black pepper – 5 peas;
  • water – 100 ml.

We clean the rowan from the branches and rinse it with running water, add sugar and water, add spices and put it on the stove. After boiling, cook for 10 minutes, skimming off the foam all the time, then leave the jam to steep overnight, and in the morning boil again for 10 minutes and leave to cool. Wash and remove stems, peels and seeds from the apples. Start making the jam again and when it boils, add the apples. Cook for 15 minutes, then place in sterilized jars and close with lids. It is advisable to store in the refrigerator.



Quick chokeberry jam

This jam is good for its speed of preparation and simplicity of ingredients. For 1 part of berries we take 2 parts of granulated sugar. This jam undergoes minimal heat treatment for just 5 minutes (it is also called “five-minute jam”), therefore it retains the maximum amount of beneficial properties of the berries.

This jam is perfect as a filling for a pie, since it is not cooked with syrup, but only with berries and sugar.

We carefully clean the berries, boil them for 5 minutes in boiling water, then take them out and dry them on a towel. Now you need to grind the berries in any convenient way, for example, with a blender, or by grinding in a meat grinder. Mix the chopped chokeberry with sugar and place on the stove over very low heat. Stir constantly until it boils. After boiling, increase the heat and cook for 5 minutes, continuing to stir. Place into sterilized jars and place lids on top. Pasteurize jars of jam for 20 minutes for 0.5-liter jars and 30 minutes for 1-liter jars. After this, you can roll up the jars and store them at room temperature.


The pasteurization process is carried out as follows: jars of jam are placed in a large container (so that the jars can be placed almost completely), covered with lids on top, water is poured up to the hangers of the jars and the vessel is placed on low heat. It is better to lay a cloth towel at the bottom of the container so that the jars do not hit the metal when boiling. Leave on low heat for the time specified in the recipe to sterilize the workpiece.

Apple and chokeberry jam

In fact, the recipe for making jam is similar to jam - the only difference is that in making jam the fruits and berries are ground into a homogeneous mass.

Ingredients:

  • apples – 4 kg;
  • chokeberry – 1.5 kg;
  • sugar – approximately 1.8 kg;
  • water – 1 liter.

We prepare the apples - they need to be thoroughly washed and cut into pieces, without removing the peel or removing the seeds. Chokeberry must be cleared of branches and washed. Pour water into a cooking container, put fruits and berries there. Cook for about 20 minutes until the apples are soft. The mixture must be stirred frequently.


If you see that the mass is becoming homogeneous and more and more like a puree, then it’s time to remove the mixture from the heat and rub it through a strainer. Add sugar to the finished puree. You need to focus on the volume of the resulting puree (since in one case or another there is more or less pulp left) and the sweetness of the apples. If you have sweet and sour apples, you need to add sugar in a 1:1 ratio. Next, cook the jam over very low heat, since the puree is thick, it tends to splash when boiling. Stir constantly and cook until the desired consistency is achieved. You can boil it just a little - then you will get a smooth, homogeneous jam.

Place the jam in sterilized jars and roll up or cover with plastic lids. Store strictly in the refrigerator!

Chokeberry jam

To make jam you will need:

  • purified water – 150 ml;
  • sugar – 400 grams;
  • chokeberry - 500 grams.


We sort the chokeberry from leaves, branches, debris and rinse it in a colander, shaking off the water. Now you need to grind the berries using a blender or meat grinder - choose a method convenient for you. If desired, the berries can be crushed until smooth or left in pieces. The berries are poured with water in a saucepan and placed on fire. Cook for 7 minutes, then add all the sugar. Cook for another 7 minutes over high heat, reduce and cook for another 5-7 minutes. It is recommended to stir the jam well during cooking. The consistency of the jam is average between jam and marmalade.

The jam must be hot when placed into sterilized jars. The product must be stored in the refrigerator.

What can you combine with?

Ready-made chokeberry jam can be used in many culinary recipes. For example, with jam you can make a quick shortcrust pastry pie, using it as a flavorful filling. You can also make open or closed yeast pies.


Here is an example of a quick pie recipe that uses jam (it is important to take jam that is not made with syrup, but with a minimum water content, for example, “five minutes”, so that there is no excess moisture in the pie):

  • butter – 200 grams;
  • egg – 1 pc.;
  • sugar – 2 tablespoons;
  • baking powder – 10 grams;
  • flour - about 500 grams;
  • chokeberry jam.

You need to take the butter out of the refrigerator in advance - this will make it easier to work with. Grind it with some flour, sugar and salt. Add the egg, mix thoroughly. Add the remaining flour with baking powder. Knead into a smooth buttery dough. Divide it into 2 balls and place in the freezer for half an hour.

Roll out one part of the dough and place it on the bottom of the pan lined with parchment paper. It is necessary to form large enough sides so that the jam does not leak out during baking. Spread a layer of jam. The second part of the dough is grated on a coarse grater and sprinkled with jam on top (this kind of pie is sometimes also called grated). Bake the pie in the oven at 180 degrees for about 25 minutes.



Chokeberry jam is perfect as a topping for drinks, such as tea, or you can simply dissolve it in water to get a sweet drink.

Children love to eat store-bought cottage cheese with additives, but it’s better to add a couple of spoons of homemade jam to a plate of homemade product - it’s much healthier and tastier, and the beautiful rich color of chokeberry jam is appetizing. Also, a spoonful of jam can significantly enhance the taste of breakfast as an addition to porridge or muesli.

In winter, it is convenient to add jam to milkshakes or smoothies made from berries and fruits.

The rest are placed in a colander and blanched for 10 minutes in constantly boiling water. Now the chokeberry fruits are ready to be used in recipes for making delicious jam.

The easiest way to make chokeberry jam is according to our grandmothers’ recipe. It is considered the most reliable for long-term storage.

  • Prepared berries – 1.2 kg.
  • Granulated sugar – 1.2 kg.
  • Water – 0.5 l.

Algorithm for making jam

First you need to prepare a syrup from water and sugar. When it thickens enough, without turning off the heat, pour the berries into the container and boil. This should be done in 3 steps:

  1. Boil the berries in syrup for 10 minutes, then set aside and cool for 10-12 hours.
  2. Next, the syrup is boiled without the berries - they should be removed for a while.
  3. After 15-20 minutes, the rowan is returned to the syrup and boiled until fully cooked.

The jam is packaged in dry jars, preheated. Seal the containers with lids and leave to cool.

Variation of this recipe

If the jam is not stored in cool cellars, but, say, in the pantry of a city apartment, the finished product should also be pasteurized. To do this, jars that are not yet sealed, but only covered with lids, are placed in a pan with hot water (about 70 degrees) and pasteurized for 9 to 15 minutes (depending on the volume of the jar).

After pasteurization, the containers with jam are removed, the lids are rolled up on them, and the jars are placed for natural cooling.

Chokeberry berries in syrup


Here is another recipe for chokeberry jam that housewives have been using for a long time - berries in syrup. In this case, it is not rowan that is added to the syrup, but the opposite. Why do berries in jam remain almost intact?

Ingredients used in the recipe:

  • Rowan berries – 1 kg.
  • Sugar – 1.5 kg.
  • Water – 0.6 l.

Sequence of jam preparation

The syrup, prepared as usual, is poured over the sorted fruits and kept for about 8 hours. And only then do they start making jam.

Place the basin on the stove over low heat and immediately remove the jam after it boils. After 15 minutes, the procedure is repeated. There must be at least 5 such visits. This will allow the jam to thicken well without burning.

Jam with additives

A very aromatic, extremely tasty jam is obtained if you add other ingredients to chokeberry. The good thing about the recipe now offered is that such a product can also be used as a supplement in the treatment of colds, hypertensive crises and vegetative-vascular distance.

Ingredients:

  • Rowan – 1 kg.
  • Sugar – 1.3 kg.
  • Water – 2 glasses
  • Fruit and berry juice (any) – 1 glass
  • Lemon juice – 0.5 cups
  • Rum – 2 tbsp.

Making jam

The unusualness of this recipe compared to the previous ones lies not only in the addition of rum and juices of other berries to the jam. The preparation of chokeberry itself is already different. The berries are pre-baked in the oven for about 5 hours. In this case, the container must be covered with a lid so that the fruits give juice.

  1. The juice released from the chokeberry is drained and combined with water and sugar.
  2. The syrup is cooked in the usual way.
  3. Next, the rowan berries are returned to the syrup, fruit juice is poured in and rum is added. They continue to cook.
  4. At the final stage, lemon juice is poured in and after 5 minutes the jam is removed from the heat and packed into jars.

As you can see, there is nothing unusual, but the result will be stunning.

Citrus jam itself is considered piquant. And if you combine it with chokeberry, you get a product that tastes amazing, which can be used to fill pies and season porridge.

  • Oranges – 2 pcs.
  • Lemons – 1 pc.

  1. The fruits are placed in a pan and filled with water.
  2. Cover the container with a lid, place the berries on the fire and steam for 5 minutes.
  3. Without removing from the heat, remove the lid, add sugar and cook for another 5 minutes (stirring, of course).
  4. After removing the jam from the stove, they forget about it for about 3 hours. During this time, they prepare the citrus fruits - twist them in a meat grinder or grind them in a blender (whichever is more convenient).
  5. When the time is right, return the jam to the stove, add the remaining sugar and bring to a boil. After this, add twisted oranges and lemon, mix everything thoroughly and immediately turn off the heat.

You can also add apple pieces (0.5 kg) to this recipe. But they are added before the jam boils.

Chokeberry with nuts


The more healthy ingredients in the jam, the more nutritious it is. In this recipe, the walnut adds its components to the healing properties of chokeberry. At the same time, modifying the taste of the jam for the better.

Ingredients:

  • Rowan fruits – 0.6 kg.
  • Sugar – 0.6 kg.
  • Water – 1 l.
  • Walnuts – 0.15 kg.
  • Apples – 0.2 kg.
  • Lemon – 0.5 pcs.

Product preparation sequence

This recipe will also differ from those described above. Even the approach to preparing syrup is somewhat different.

  1. Chokeberry berries are poured with hot water and left overnight.
  2. In the morning, the infusion is poured into another container.
  3. To prepare the syrup, take only 1 glass of rowan infusion and mix it with sugar.
  4. While the syrup is cooking, you should take care of the remaining ingredients:
  5. Peel the apples and remove the core. Fruits must be cut either into small slices or into cubes.
  6. The zest is removed from the lemon. The citrus itself is crushed into small pieces and sent to the refrigerator for now.
  7. Peeled nuts should be crushed.
  8. Prepared apples, nuts and chokeberries are placed in syrup on the fire. After boiling, boil the jam for another 15 minutes. Then remove from heat and set aside for 3 hours.
  9. The 15-minute cooking procedure should be repeated 3 more times at intervals of 3 hours. At the last pass, add lemon.

Chokeberry jam without syrup

You can make delicious jam from chokeberry without pre-cooking the syrup - just add sugar. But in this case, to be safe, you will have to resort to sterilization of the finished product.

It is also good for the dinner table in winter, as it is rich in vitamins and beneficial microelements, which is very important in the cold season.

Ingredients used in the recipe:

This recipe contains only 2 ingredients – chokeberry berries and sugar. They are taken in a 1:1 ratio. And the mass of rowan is determined here by the crushed berries.

Procedure for making jam

  1. Blanched berries are passed through a meat grinder. And you need to do this twice: first through a coarse mesh grid, then through a fine one.
  2. Next, the resulting mass is ground quite well with sugar. Then you can take advantage of one of the moments - either immediately put it on the fire, or first give the sugar the opportunity to dissolve in the juice of the chokeberry.
  3. The ground mass is placed on low heat and, with constant stirring, boiled for no more than 5 minutes. Then the jam is packaged in heated jars, which are covered with lids and sent to a pan for sterilization.
  4. The initial water temperature for heat treatment must be at least 80 degrees. Sterilization is carried out for 15 minutes for 0.5 liter containers, and for 25 minutes for 1 liter jars.
