Step by step recipe with photo

Pies and pies cooked in the oven on kefir dough are simply incomparable.

The secret of the air test is so simple that there is no need to hide it. Let all housewives know how lush kefir dough is kneaded with fresh yeast. In this recipe, I will use a steamless method of making yeast dough on kefir with a fat content of at least 2.5%.

To prepare kefir dough for pies in the oven, take the products from the list of ingredients. All of them must be warm, otherwise our dough simply will not rise.

Crumble fresh yeast into a bowl. From a standard 100-gram mini-pack, this is a little less than a quarter.

Warm kefir is added to the yeast. The ingredients are thoroughly whipped with a hand whisk until kefir foam is formed.

Now you need to add three tablespoons of flour - this is from the main portion.

The resulting mass is called "whitewash". It resembles liquid pancake dough. You need to let it stand warm for at least 30 minutes. The mass will increase and be covered with lush bubbles.

600-650 g of flour is poured into a separate bowl with high sides. A little from the main part should be left on the "dust".

"Protein", sunflower oil and a chicken egg are poured into the flour. The dough is seasoned with salt.

Everything is thoroughly mixed first with a spatula. Then the dough is sent to the table, kneaded by hand and formed into a bun. If necessary, use an additional portion of flour.

Return the bun to the high-sided bowl and cover with a towel. Clean in a warm place for 2.5-3 hours.

The increased dough needs to be kneaded. Then let it rise again, and then take it to work, enjoying its softness and tenderness. The dough on kefir for pies in the oven is ready.

Sculpt and bake pies with pleasure, because the yeast dough on kefir is very obedient and kind.

Liquid dough on kefir for pies. About the rules for choosing products and general cooking technology

  1. This is not only a quick way, but also an economical option to quickly bake something, and the filling in such pies does not really matter. To prepare it, you will need a minimum set of products that, as a rule, you always have at home. The main advantages include the fact that the dough does not need to be kneaded and melted for a long time before making the pie;
  2. There are many recipes and methods for kneading dough, and each product has its own tricks and principles that should be followed. For example, quick dough with the addition of kefir can be used to make manti or dumplings; it is great for pies that are deep-fried or in a pan. And there are many recipes for making pizza;
  3. Kefir dough can have a different consistency - from liquid, for a jellied pie, dense and elastic enough to stick pies out of it for frying or baking;
  4. Depending on the filling, other dairy products can be added to the dough, for example, sour cream or high-quality mayonnaise (for jellied pies), eggs and butter - if the pastries are rich. To make it lush, baking powder or soda is added to it (it must be quenched with vinegar or lemon juice). It is also allowed to add yeast, it is enough to mix them with warmed kefir;
  5. Remember that in order for your pastries to turn out tender and airy, kefir must be used low-fat, and before you start kneading, it should be warmed up a little.

Pie on kefir with jam. Pie with jam on kefir

I think every mother had this: the children ask for something sweet for tea, but there is nothing and no money to go to the store. That's what happened to me as well. And I remembered a fairy tale about a kolobok that a woman blinded from what was. So I opened the refrigerator, and of all the products that I had, I quickly baked a simple kefir pie with jam. It turned out very tasty, so I'm sharing the recipe. Try it!

Ingredients

To make a pie with kefir jam in the oven, you will need:

kefir - 300 ml;

soda - 0.5 tsp;

egg - 1 pc.;

sugar - 1/2 cup;

flour - 3 cups;

sunflower oil - 3 tbsp. l.;

jam (I have plum jam) - 200 g.

Cooking steps

Take a bowl, beat in eggs and add sugar.

Lightly beat eggs with sugar with a whisk until smooth.

Then pour kefir, mix.

Add soda, mix.

Then pour in sunflower oil, mix well.

We begin to gradually sift the flour into the resulting mixture.

Continuing to add flour, knead the dough. The dough should be tight and not stick to your hands.

We divide the dough into two parts. We roll out one part with a thickness of about 2 centimeters and put it on the bottom of the mold, previously oiled.

Then pour the jam and distribute evenly over the dough.

Roll out the remaining dough and cut strips of the same width. We spread the strips crosswise on the formed form with jam. We bake a cake from kefir dough with jam filling in a preheated oven at a temperature of 160 degrees for about 30 minutes.

Pie with jam, mixed with kefir, take out of the oven and can serve. The pie is delicious both hot and cold.

Bon appetit!

When there is no time and desire to bother with baking in the oven, you can do it in a slow cooker. Convenient - you can go for a walk or go to the store at this time, nothing will burn. And in the summer this is especially true, in the heat of the oven it is completely reluctant to turn on.

Also, the recipe is useful for the disposal of kefir, which is desirable to use fresh during the day, but if you don’t have time, bake pies!

Let's prepare the ingredients for making a kefir pie in a slow cooker.

Whisk eggs with sugar. Melt the butter in the microwave or on the stovetop.

While the eggs are being beaten, the butter will cool. Add it and kefir to the eggs, mix everything.

Then add flour and soda, which will extinguish itself in an acidic environment. The consistency of the dough is not thick and not too liquid. If kefir is fatty, then a little more may be required.

We put nuts, raisins or dried fruits to taste. We mix everything thoroughly.

Lubricate the bottom of the bowl with oil, I also sprinkled with semolina.

Pour the dough into a bowl.

In a slow cooker, we cook a kefir pie in the "Baking" mode for 1 hour. Low power multicookers may take a little longer.

It is convenient to remove the cake from the bowl with the help of a steam plate, it is also convenient to cool on it.

We cut the cooled pie, since the top in the multicooker does not blush, when serving it can be sprinkled with powdered sugar.

Bon appetit!

The dough is like fluff on kefir for pies. Kefir dough - general principles of preparation

Thoroughly kneaded dough, properly selected products - this is the success of airy, soft dough. On kefir, more than one of its types is kneaded. Air dough "like fluff" on kefir can be both yeast and yeast-free.

For flour products (large pies, buns or buns) baked in the oven, it is better to cook yeast. For pies that will be fried in a pan, you can cook without yeast. Kefir dough for pies with soda or cottage cheese turns out to be no less soft and fluffy.

A lactic acid drink for any type of dough can be taken both fresh and not very. An expired one can even come in handy if it does not have the characteristic smell of fermentation. Kefir must be warm, since it is in such an environment that rippers and yeast are activated better. If they are mixed with a cold product, the dough will turn out to be too dense.

Fat content is also important. 2.5–3.2% kefir is ideal for kneading.

Flour must be sifted. This will not only allow you to remove accidentally fallen rubbish, but also saturate it with oxygen, which will give additional splendor to the dough.

The method of preparation depends on the type of dough and is described in the recipe. And if you strictly adhere to it, then any dough mixed with kefir will never let you down.

This cake can be baked with any berries, with raspberries, cherries, blackberries, as mine like it sour, I bake with black currants. Berries can be fresh or frozen - the choice is yours.

and put in an oven preheated to 180 - 200 C for 35 - 40 minutes. To prevent the dough from shrinking, try not to open the oven for the first 20-25 minutes while the cake is baking. Readiness to check with a dry wooden toothpick or match.

Recipe 3: Puff Pastry Blackcurrant Pie

This dessert turns out so delicious, with a crispy crust that melts in your mouth and a pleasant sweet and sour filling.

For the test

  • Flour - 500 grams
  • Butter - 400 grams
  • Cold water - 200 grams
  • Salt - 0.5 tsp
  • Lemon juice - 1 tbsp.

For filling

  • Currant
  • Apples - 2 pcs.
  • Sugar to taste

First we need to make the base for the pie and for this we will prepare instant puff pastry. If you want, you can do it easier and buy ready-made dough in the store and immediately start making the pie.

Pour very cold water into a cup. You can keep the water in the fridge first. Add the egg, salt, lemon juice to the water and mix thoroughly.

Pour the flour onto the table and rub the butter into it on a grater, after which we stir it with our hands into crumbs.

In the middle of the crumbs, we make a recess and pour the liquid into it in small portions, constantly stirring the mass with our hands. The dough does not need to be kneaded, it must be collected by hand into a homogeneous mass.

After that, wrap the dough in a bag and send it to the refrigerator for at least 2 hours. As you can see, the dough really cooks very quickly, but it still needs to be prepared in advance. You can store this dough in the refrigerator for about a week.

Now let's make the pie.

Divide the puff pastry into 2 parts and roll out one part and lay it out in a mold, removing excess dough around the edges.

Pour the beans into the dough, level and send to the oven for 8 minutes.

At this time, peel the apples, cut into small slices. Add sugar to taste and 2 tablespoons of starch to currants and mix.

Roll out the second part of the dough into a thin layer and cut into thin strips.

We take out the cake from the oven, let it cool slightly and remove the beans. Arrange apple slices on top and sprinkle lightly with sugar.

Pour currants over the berries and level it evenly over the surface.

On top lay out the strips of dough in the form of a mesh. Brush top with beaten egg and sprinkle with a little sugar.

We bake our pie with apples and currants at a temperature of 200C for about 20 minutes. When the cake is ready, let it cool and you can serve it for tea drinking.

Recipe 4: Open Blackcurrant Pie

  • Black currant (300 g.)
  • Chicken egg (3 pcs.)
  • Wheat flour (260 g.)
  • Butter (120 g.)
  • Potato starch (2 tablespoons)
  • Sour cream 15% fat (210 g.)
  • Sugar(170g)
  • Vanilla sugar (10 g)

In principle, instead of blackcurrant, you can use any berries, their mixture, or even other fruits, and you will always get a delicious fragrant cake, for which you will definitely be thanked.

First you need to prepare the base for the pie, it is she who takes most of the cooking time (except for the baking itself). To do this, sift the flour into a large bowl or container. Add 75 grams of sugar and a sachet of vanilla sugar (10 grams. Can be replaced with vanillin, vanilla flavoring).

Cut cold butter into cubes. Add butter to flour and mix into fine crumbs. It is more convenient to do this with a mixer, but I had to knead with my hands.

Add egg and 1 tablespoon flour. Mix and knead the dough, which should not stick to your hands. If needed, add a little flour. Wrap the resulting dough in cling film and place in the refrigerator for at least 30 minutes. My dough was in the cold for a little over an hour.

After the specified time, take out the dough. Roll it out and put it into shape. I acted differently: I tore off pieces from the dough and “sculpted” the base for the pie, the dough looks like soft plasticine. Make small sides (of course, it is better and more convenient to use a detachable form, but I still don’t have it). Pierce the resulting cake with a fork and bake for about 10 minutes at 180 degrees.

Rinse the blackcurrant, sort it out, remove the extra branches. Divide the currant into two parts. Mix one part with a tablespoon of sugar.

Prepare the fill. To do this, whisk together 200 milliliters of sour cream, 2 eggs, starch and 60 grams of sugar.

On a semi-finished cake, first put the berries mixed with sugar. Put the remaining currant on top.

Sprinkle the berries with 3 tablespoons of sugar.

Pour the prepared filling on top. Bake the cake for about 25 minutes at 180 degrees.

Take the cake out of the oven and let it cool down. The filling should be solidified, not liquid.

Serve the pie warm or cold. This is how a beautiful fragrant pie turned out, the berries are all whole, so the pie has a pleasant sourness. Moderately sweet, very tender and very quickly disappearing 🙂 Bon appetit!

Recipe 5: blackcurrant pie in a slow cooker

  • Chicken egg (3 pcs.)
  • Sugar (1 stack)
  • Wheat flour of the highest grade (1 stack.)
  • Black currant (100 g.)
  • Potato starch (1 tablespoon)
  • Butter (1 tsp)

An amazingly delicious cake. The dough is simple, a minimum of ingredients, a maximum of benefit and pleasure. The dough is prepared like a charlotte pie.

Beat three eggs for two minutes with a mixer. Next, add a glass of sugar, pour in gradually and beat for 7-10 minutes.

Be sure to sift the flour. Our cake does not have baking powder, so we saturate the flour with oxygen. Due to the sifted flour and well-beaten eggs, the dough becomes airy.

Currant berries, I have it frozen, roll in starch, or you can replace it with flour. I did this so that the currant did not sink to the bottom, but was on top of the pie.

We send the dough into a greased bowl with butter. Sprinkle black currants on top of the dough.

We put on the “baking” mode and bake for 45 minutes

At the end of the cooking time, the currant pie is ready. Bon appetit.

Recipe 6: Kefir Blackcurrant Pie

  • Chicken egg (3 pcs.)
  • Kefir (1 stack)
  • Sugar (1.5 cups)
  • Butter (100 g.)
  • Baking soda (1 teaspoon)
  • Wheat flour (2 cups)
  • Vanilla sugar (10 g)
  • Black currant (200 g.)

Measure out the required amount of ingredients. Prepare a baking dish. If using a metal mold, line it with parchment paper greased with a little sunflower oil. Currants for the filling must be washed and separated from the brushes. It is allowed to use frozen berries, in which case they need to be thawed.

Pour sugar into a bowl and crack an egg. If desired, you can add a little vanilla for the smell. Mix the ingredients with a whisk or mixer. It is desirable that most of the sugar crystals melt, and the mass turns a little white due to air bubbles.

Add butter or margarine, which must first be melted. The oil should be slightly warm, but not hot, otherwise the egg may curdle, and this will negatively affect the final result. Next, add kefir, preferably at room temperature, peroxide milk can also be used. Mix everything again.

Put the sifted flour mixed with soda into a bowl and knead the dough. Its consistency should resemble good thick sour cream, that is, slowly drain from a spoon. Squeeze the juice from a slice of lemon and mix the mass again. At this stage, it is important to pour it into a special mold in time, otherwise all the carbon dioxide that is formed during the interaction of lemon juice and soda will evaporate. And this will lead to the fact that the cake will not be airy enough. Lemon juice can be replaced with citric acid, only in this case it must be added at the initial stage, along with sugar.

Pour the dough into the mold, spread currants or any other berries evenly over the surface. Send to the oven preheated to 180-200 ° C to bake. After 20-30 minutes, depending on the oven, the cake will be ready. Test the cake for doneness with a toothpick by piercing it at the highest point. If the wooden skewer remains dry, without pieces of sticky dough, then it's time to pull out the cake.

Take it out, let the dough cool a little and take it out of the mold. You can dust the top with powdered sugar if you like. To spread it evenly on top, use a special strainer, or a flour sieve. You can serve the pie to the table in a warm form, and if it has time to cool down, it’s not scary, its taste will not get worse from this. Warm tea is best for baking: black, green or herbal tea with a slice of lemon. Happy tea!

Here is another recipe for a sweet and delicious pie, this time with currants.

Pie on kefir with currant recipe

Take out the butter. Let it stand for a while at room temperature so that it is not hard and cut it into cubes, then put it in a container. Next, put the sugar in there and beat on low speed to get such a homogeneous mixture. Add another egg to it and beat again.

Pour kefir into the resulting mixture. Add soda and vanilla sugar. And finally, well-sifted flour. The dough for the pie will turn out like thick sour cream. Very airy and soft. Grease the bottom of a baking dish with oil and pour the batter into it. Make it smooth and add currants (or other fillings) and let it bake for 30-40 minutes at a temperature of 200 degrees. Check readiness with a toothpick.

If you want the currant to be not on top, but in the middle. Then just pour the first half of the dough into the pan first, put as many berries on top as you like, and then fill it with the remaining dough.

Bon appetit!
