Ingredients: a can of white beans in a tomato sauce, 230 g of pickled mushrooms, onion, 1 tbsp. l vinegar (6%).

Ingredients: 120 g dry beans, medium clove of garlic, 170 g of green beans, 180 g of fresh champignons, onion, large Bulgarian pepper, salt, olive oil, fresh parsley.

  1. Beans need to prepare in advance. They are washed and soaked in water for 5-6 hours. If possible, it is better to leave the beans in the liquid overnight.  In the morning it is washed again and boiled until softened.
  2. Onions are finely cut and fried together with chopped garlic in olive oil. After 6-7 minutes, small bars of sweet pepper and plates of fresh mushrooms pour out to these components.
  3. When the pepper is softened, you can add the green beans. It is allowed to add it immediately frozen.
  4. The mass is salted and fried on a slow fire for another 10 minutes.
  5. It remains to add a little water and boiled beans.

Ready warm salad is decorated with fresh parsley and served to the table.

Salad with beans, chicken and mushrooms

Composition of products: large chicken breast, 5-6 marinated champignons, 90 g of red beans, 80 g of cheese, large carrot, 90 ml of unsweetened yogurt, a pair of green onion feathers and 1 head of bulb, table salt, butter.

  1. Beans are poured with water and sent to boil over high heat. As the liquid boils away, a new cold is poured over it in about half a glass. This contrast of temperatures allows you to quickly cook beans, even without soaking.

Ingredients: 340 g fresh champignons, half carrots, guest white crackers with sour cream or garlic flavor, 80 g dry white beans, 4-5 tbsp. spoons of low-fat sour cream, salt, spices to taste.

This time I used dried shiitake mushrooms. These Chinese mushrooms were known long ago, in ancient literature they are repeatedly mentioned. But interestingly, these mushrooms are considered to be therapeutic! We are accustomed to just the opposite: they say, it is not safe to eat mushrooms. But in the 14th century, a Chinese doctor wrote that it would be good to use shiitake as a medicine against a whole list of diseases. We are not going to heal them, but enjoy, because the post can be delicious!

It is worth remembering that out of 150 g of dried shiitake you will end up with about 500 g of prepared mushrooms.

Salad beans can be boiled on their own, but I took white canned beans and did not regret it.

Onions and garlic will help to reveal the taste of other ingredients, and most importantly - will add spice and light spiciness to the salad. I added olives to the salad, because, in my opinion, they give a special charm to the flavor bouquet.

And finally, tomatoes. Why I consider them one of the basic ingredients. We all know that beans are a rather unleavened neutral product. And bean salads often lack juiciness. The tomato easily copes with this task: it gives the salad juiciness, moisture and, of course, a sort of savory acidity.


Dried mushrooms should be well soaked in water. Rinse several times and then cook. I make it easier. In the evening, pour mushrooms with plenty of cold water, leave for the night. In the morning I drain the water, rinse a couple of times under running cold water, gently squeeze. And the result - beautiful, elastic mushrooms, suitable for any dish.

For salad I used fried mushrooms. Cooked them in a somewhat oriental manner. She heated the vegetable oil in a pan, fried the mushrooms almost to readiness, added a couple of spoons of soy sauce (if you do not like soy sauce, then just salt the mushrooms).

Fry mushrooms with a sauce for a few minutes on high heat, add chopped greens (absolutely any, which you like) and chopped garlic. After that, I covered the saucepan with a lid, turned down the heat and cooked it all together for a while. It turned out delicious, fragrant and beautiful.



Now a couple of final touches: cut olives into rings, chop onions into thin half rings and cut cherry tomatoes into slices. You can change the style of cutting salad. I have an immutable rule that I have been using for many years: the solo products in the dish should be the largest. Based on this, I left whole beans and mushrooms, and cut tomatoes into slices, and not, for example, diced.



We collect the salad: we mix all the ingredients in a deep salad bowl, add greens if desired (I have some curly parsley).

As for the sauce. For me, enough oil and soy sauce, which was fried mushrooms. But if you want a richer taste, then I would recommend adding a little unrefined sunflower oil (or one that you like the most, but certainly fragrant, this will win the salad!) And a drop of balsamic vinegar.
