Note to the novice cook

Preparing this dish is quite simple. Nevertheless, even the most experienced housewives sometimes wonder how to boil hard-boiled eggs correctly? The technology of this process is extremely simple and does not require any special skills. Perhaps that is why many of us began our training in the wisdom of culinary arts with this particular dish. Now let's take a closer look at the question of how much to boil a hard-boiled egg and how. Here are a few tips to make this process much easier.

Little tricks, or how to cook hard boiled eggs correctly

  • In order to prevent the shell from cracking and the contents from leaking out, before laying the egg in a pan of cold water, a tablespoon of salt should be dissolved in the liquid. Firstly, this will increase the density of the water, which means that the eggs will not sink to the bottom and will not beat against the walls of the pan. Secondly, salt increases the thermal conductivity of the liquid, thus speeding up the boiling process, while eggs cooked in such an environment heat up evenly. Thirdly, salt helps the protein to coagulate faster if a crack in the shell does form. Make sure that there is enough water in the pan, that is, it should completely cover the eggs.
  • Be sure to wash the eggs before placing them in water, but never immediately after purchase, as this may damage the protective layer covering the surface of the shell.
  • During cooking, use a specially designed timer or a regular alarm clock.
  • Often, boiled eggs are used during the preparation of various salads, while many housewives are of the opinion that it is better to overcook them than undercook them. However, the overcooked product is deprived not only of its natural pure taste, but also of all nutrients. How to boil hard boiled eggs to avoid this? The following information will help answer this question.

How to cook a hard boiled egg so that it does not lose all its nutritional properties?

Every average student knows that it takes 8-10 minutes to boil hard-boiled eggs. It is assumed that this interval also includes the time required for water to boil. Below we consider this statement in more detail. If many eggs are being boiled at the same time, say a dozen, it will be better to use a saucepan with more liquid. It takes a lot of time for it to boil, which means that the cooking process itself (excluding the minutes spent on boiling) will take about 10 minutes. How to cook hard boiled eggs if only a small amount is needed? For cooking several pieces, 8 minutes will be enough. Immediately after the time required for cooking, the eggs are laid out from the pan in a container of cold water, and are there until they have completely cooled down and become suitable for subsequent cleaning and consumption.

Eggs have long become a daily product of our diet, and it is not for nothing that any refrigerator has a special place for storing them. They are fried and boiled, added to pastries, salads, casseroles, sauces, soups and other dishes. There are a lot of recipes containing this product. But it is not always possible to cook eggs in such a way that the desired result is obtained. Especially when it comes to different degrees of their readiness.

About the benefits of eggs

The benefits of eggs for our body can not be overestimated, and the conventional wisdom about the dangers to the liver is greatly exaggerated. The yolk contains a large amount of cholesterol, which has led to the assumption that its level in the blood increases when eating eggs. Based on recent studies, it turned out that the "good" cholesterol of eggs displaces the "harmful" from the body.

In addition, the product contains:

  1. Vitamins A, D, E, group B (B 3, B 6, B 12), K are necessary to maintain immunity and normal metabolism.
  2. Trace elements: iodine, zinc, calcium, magnesium, iron, phosphorus are involved in the processes of hematopoiesis, nutrition and respiration of cells, hormone synthesis. Sulfur helps maintain healthy skin, hair and nails.
  3. Choline, lecithin are useful for the nervous system and brain cells.
  4. Cholesterol prevents damage to blood vessels, the formation of sclerotic plaques, is the building material of brain and liver cells, and is necessary for the synthesis of testosterone.
  5. Essential amino acids needed for building cells.

Average consumption of eggs per day depending on age and physical activity

Consumption per day depends on the state of health, physical activity and age, the exact amount will help a nutritionist determine. Here are the average rates for different age groups.

  • adults - 1-3 pcs. in a day;
  • children under 2 years old - 2-3 yolks per week;
  • children 4-6 years old - 3-5 eggs per week;
  • athletes-athletes - 10 pcs. and more.

For athletes, easily digestible protein helps to quickly build muscle mass.

Chicken eggs are a familiar product on our table.

Quail:

  • up to 3 years - up to 3 pcs. in a day;
  • up to 10 years - 3 pcs.;
  • over 10 years old - 4 pcs.;
  • athletes - athletes - 14-20 pcs.

In terms of nutritional value and content of nutrients, quail eggs are 2-5 times superior to chicken eggs. They have almost no salmonellosis, which is especially important for children.

The nutritional value of quail eggs is 2-5 times higher than chicken eggs.

Duck is twice as large as chicken and much fatter. Overweight people are not recommended to eat them more than once every 2 days.

Duck eggs are larger than chicken eggs, their yolk contains more fat

In terms of usefulness, turkeys take second place after quails. One egg weighs an average of 75 g, replaces two chicken ones.

Turkey eggs are second only to quail eggs in their usefulness.

Ostrich contains 25-38 eggs in terms of chicken. Before preparing such an exotic, calculate the number of eaters.

What to cook

Boiling eggs is a simple process and does not require complex devices. For this, only dishes, water and a heating source are needed. Used as a heater:

  • gas stove;
  • electric stove;
  • oven;
  • microwave;
  • multicooker;
  • double boiler;
  • egg cooker;
  • bake;
  • bonfire.

In a hopeless situation, you can even use an electric kettle, it combines a water tank and a heating element. Although the device is not intended for this and does not have a temperature controller.

Despite the simplicity of the process, there is always a desire to simplify it. Evidence of this is the egg cooker. The device consists of a water tank with a heating element and a grid. Unlike the usual way for us, cooking is steamed.

How and how long to boil eggs

Depending on the cooking time, eggs are soft-boiled (with liquid protein and yolk), bagged (soft protein and liquid yolk) or hard-boiled (solid protein and yolk).

The degree of readiness of eggs depends on their freshness, cooking time and stove power.

Advice! Add salt or vinegar to the cooking water - the protein will quickly curl up and will not leak out if the shell bursts.

soft-boiled

Cooked eggs are not peeled, but the “lid” is cut off with a sharp knife from the sharp edge and eaten with a spoon.

A soft-boiled egg is not peeled, but eaten with a teaspoon from the shell

  1. Pour the eggs with cold water so that there is a layer of at least 1 cm above them.

    Cover the eggs with cold water and bring to a boil

  2. Pour in 1 tbsp. l. salt or pour in the same amount of vinegar.

    Add salt or vinegar to the water to keep the protein from leaking out.

  3. Wait until it boils, turn the heat down to low.
  4. Boil for 2 minutes to get liquid protein and yolk.
  5. It will take 3 minutes for the protein to “grab” and the yolk to remain liquid.
  6. Remove from heat and cool immediately under running water.

    Refrigerate the eggs immediately after boiling.

Advice! Take the eggs out of the refrigerator 3 hours before cooking, or soak them in warm water for 15 minutes so that they warm up a little and the shell does not burst when immersed in boiling water.

  1. Boil water in a saucepan, add salt or vinegar.

    Bring the water to a boil

  2. Drop the eggs one by one into the water with a spoon or slotted spoon.

    Drop eggs into boiling water with a spoon or slotted spoon

  3. After boiling, cook for 1 minute.

    Wait 1 minute after boiling water

  4. Remove the pot from the heat, cover with a lid and wait 5 minutes.
  5. Dip in cold water. The protein will turn out soft, and the yolk will be liquid.

Many useful kitchen appliances have appeared in our everyday life that simplify cooking. One of them is a multicooker. Cook in it in the same way as in a regular saucepan, or steam.

Use a double boiler or egg cooker, the principle of cooking in these devices is the same. Cooking in an egg cooker is described in detail in the instructions for the device.

It is interesting! When steamed, the yolk does not move, but remains in the center of the egg.

In a pouch

This is an intermediate option between soft-boiled and hard-boiled, so it is not always possible to achieve the desired result. Boiled in the same way as soft-boiled eggs, changing the boiling time.

When cooking according to the first method, keep on fire for 4-5 minutes after boiling to get a liquid or viscous yolk.

In the second method, keep under the lid after turning off the heat for 6-7 minutes.

Steam for 5-6 minutes. For multicookers and steamers of different capacities, the time may vary.

An egg in a bag has a soft protein and a liquid or viscous yolk

Important! The cooking process continues inside the egg even after it has been removed from the boiling water. Therefore, it is important to cool it immediately.

hard boiled

It would seem that such eggs are the easiest to cook. But here, too, cooking time plays an important role. The digested protein becomes rubbery, and a grayish coating appears on the yolk.

Hard-boiled eggs have hard whites and yolks

The protein will be completely cooked, and the yolk will be dense, but crumbly, if you boil the eggs for 7-8 minutes after boiling. This rule applies if you cook in cold or hot water. When steaming, the time can be increased up to 10 minutes.

Advice! From the blunt end between the shell and the protein, the egg has an air chamber. Pierce the shell in this place with a thin needle and the finished egg will be the correct shape, without a notch.

For kids

Eggs should be washed with soap and water before boiling to reduce the risk of salmonellosis. For the same purpose, children should cook only hard-boiled eggs, fully cooked.

Start complementary foods with the yolk, as the protein can provoke an allergic reaction. The cooking technology does not differ from those described above.

For salads

For salads, hard-boiled eggs are used. The yolk should be well cooked, without a viscous middle.

Advice! Fresh eggs (up to 4 days) cook longer for 30-60 seconds.

It happens that when cleaning eggs, the shell does not lag behind the protein. Here are some tips to help you avoid this:

  1. Do not boil hard-boiled and too fresh eggs in the bag (up to 4 days), they are less peeled.
  2. Immediately after cooking, cool them in cold water.
  3. Before the end of cooking, lightly tap the shell with a knife so that it cracks and water gets inside.
  4. Clean by holding under running cold water.

Table of cooking times for eggs from different layers after boiling water

The degree of readiness of an egg at the same boiling time depends on its size, freshness, and the power of the stove. The exact time can only be determined experimentally.

In addition to the usual method, eggs are boiled without shells. They are called “poached”, they are added to various soups, salads, and sandwiches are prepared.

Boiling eggs without shell (poached)

Choose the degree of readiness that you like best. Experiment with the brew time and remember the time of the best result. And then you will always have a delicious, healthy and nutritious breakfast.

Not a single housewife can do without chicken eggs in the kitchen, since they often act as the main ingredient in many flour products and salads, and are also able to decorate the table in the form of cold appetizers. To prepare such quick snack options, it is enough to boil a hard-boiled egg, and then stuff it with a pre-prepared filling or simply decorate the dish in an unusual way.

However, despite the seeming simplicity of preparation, many housewives have a problem: how much to boil eggs so that they do not overcook (undercook) and crack?

How to cook eggs on a conventional stove?

You can boil hard-boiled eggs on a gas or electric stove in 2 ways: in cold or hot water. Before you start cooking, the raw product should be washed well under running water.

If the eggs were in the refrigerator, then before boiling it is recommended to place them in warm water for 2-4 minutes or just let them warm up to room temperature for 15 minutes. This is necessary so that the shell does not crack during a sharp temperature drop during the cooking process.

It is also very important to choose the right pan for cooking. In a pot that is too large, when boiling, the eggs can break into each other, so if you intend to boil a small amount of the product, then it is better to choose a smaller saucepan or ladle.

In cold water

We put the washed chicken eggs in a saucepan or ladle and pour cold water so that it is 1-2 cm higher than the surface of the product. The water should be slightly salted so that the shell does not burst.

We put a container with eggs and water on medium heat. As soon as the water begins to boil, we reduce the fire and note the time. To make hard-boiled eggs, the cooking time in boiling water should be 10 minutes.

After this time, turn off the stove, drain the boiling water from the pan and immerse the boiled eggs in cold water for several minutes. If this is not done, then later it will be very difficult to peel them, and, therefore, they will become unsuitable for stuffing or serving as cold snacks.

Chicken eggs cooked according to all the rules must have:

  • whole, without cracks, the shell,
  • dense protein,
  • bright yellow yolk (in overcooked eggs, the yolk becomes bluish-greenish).

In hot water

The peculiarity of this method is that raw eggs are laid in already boiling water. Before cooking, put a pot of salted water on the stove. After the water boils, gently immerse the chicken eggs one by one into the pan (so as not to damage their shells on the walls or bottom of the dish).

Cook the eggs over low heat for about 7-8 minutes. The finished product, as in the first case, after being removed from the stove, should be placed in cold water for a while.

To make eggs easy to peel after cooking, use the secrets from the following video when cooking.

The process of cooking eggs in a slow cooker is in many ways similar to boiling them on the stove. The only point: the time it takes to cook boiled eggs may vary depending on the model of the multicooker.

In pair mode

We place the pre-washed chicken testicles on the bottom of the multicooker bowl and fill it with water so that the water level is above the surface of the eggs. Then close the lid of the multicooker and turn on the "Steam" mode.

After boiling water, wait 10 minutes, then turn off the multicooker, remove the eggs and pour cold water over them.

It is possible to cook hard-boiled eggs in this mode even without their contact with water. To do this, lay out the raw product on the cooking grid and pour 3 full glasses of water into the slow cooker. Then we start the "Steam" mode, wait 10 minutes after the water boils and turn off the device.

In multipair mode

This method is similar in sequence to the previous one, except that instead of the “Paired” program, the “Multi-pairs” mode is selected. The temperature in this case should be set within 100 degrees Celsius. The egg boil time will be 20 minutes.

Despite the fact that when using the “Multi-steam” mode, it takes almost 2 times longer to cook, eggs rarely burst and overcook during the cooking process.

How to boil eggs in the microwave?

The developers of microwave ovens categorically forbid boiling eggs in them, since eggshells often explode due to the increase in the volume of its contents.

However, if there is no other way to prepare this dietary product, it can still be done. To learn how to boil hard-boiled eggs in a microwave oven so that they do not burst, you should learn a few important points:

  • you can cook in the microwave only one egg at a time;
  • cracked eggs should not be used for cooking;
  • do not use metal containers or bowls with gold / silver coating for cooking in a microwave oven;
  • the egg in the container must be completely under water;
  • oven power during cooking should not exceed 400 watts.

To cook hard-boiled eggs in the microwave, you need to pour water into a glass and salt it. Then dip the egg into it and put the glass in the microwave.

On the device, set the cooking power to 200-300 W and turn it on for 5-7 minutes. After this time, the egg must be removed from the glass and placed for a couple of minutes in cold water.

How to keep eggs whole while boiling?

To prevent chicken eggs from cracking during cooking, there is one little secret. An ordinary sewing needle is capable of protecting the shell from cracking during boiling, with which you need to carefully pierce the egg from the blunt end before cooking. This maneuver allows not only to preserve the integrity of the product during cooking, but also greatly facilitate its further cleaning.

Friends! Perhaps you know or have heard about new ways - how to boil eggs in special forms, egg cookers and other devices. Write to us!

It would seem: what could be simpler than boiled eggs for breakfast. But it turns out that there are tricks here too. There are several degrees of readiness of boiled eggs. For salad, only hard-boiled eggs are suitable, and for the vocal cords, it is useful to eat soft-boiled eggs, almost raw. And if you make a mistake even for a minute during cooking, it will turn out, alas, not at all.

For family needs, I found on the Internet and downloaded interesting timers that show how many minutes to boil eggs. We take note to print and hang a memo in the kitchen. And we share with you

secrets

For cooking 5 eggs, 1 liter of water and 1 tablespoon of salt will be enough. Yes Yes. There is such a little trick: in order for the eggs to be better cleaned and tastier, you need to put salt in the water when cooking.

Cold water is poured into an enameled metal container, eggs are lowered into it and put on fire. If you put eggs in hot water (or even very warm), they will burst and there will be nothing to cook - checked

We bring the water to a boil, reduce the heat to a slow one (enough for the water to boil slightly) and note the time.

Timers

The simplest timer:

  • soft-boiled eggs should be boiled for 3-4 minutes;
  • eggs "in a bag" - 5 minutes;
  • hard boiled eggs should be boiled - 9-10 minutes.

Time is counted after boiling water!

Extended Timer:

  • After 2 minutes: not only the yolk will be liquid, but also the protein (slightly).
  • After 4 minutes: a traditional soft-boiled egg is obtained (strong protein and liquid yolk).
  • After 6 minutes: the yolk looks like soft dough for modeling.
  • After 8 minutes: we get an almost hard-boiled egg (the yolk has hardened, but not completely).
  • After 9-10 minutes: traditional hard boiled egg.

The following classification is also interesting:

According to this classification, the husband likes eggs "in the bag", and I "almost hard boiled".

So, the cooking time varies from 2 to 10 minutes. It is definitely not necessary to cook longer, otherwise the egg will become rubbery.

At the end of cooking, the fire is turned off and the hot water is drained, and the eggs are poured with cold water so that they cool down and are easy to clean.

Our experiment

After writing the article, I immediately wanted to taste a boiled egg, and it was soft-boiled. I cooked exactly as much as needed according to the timer - exactly 4 minutes. Here's what happened:

Excellent soft-boiled egg! The protein is solid, the yolk is liquid. She took off the top of the shell and ate with a spoon. Mmmm.

By the way, you can also cook eggs in a slow cooker. 5 minutes is enough to boil a soft-boiled egg in the "Steam" mode.

Bon appetit! Write in the comments which stage of egg readiness is your favorite. Curious to know 😉
