The traditional dish of Russian cuisine is pea. An economical, satisfying, nutritious dish, which was always present on the tables of peasants and nobility. Even the festive feasts of the kings could not do without it. Classic pea porridge was boiled in water and seasoned with browned vegetables. In wealthy families, it was supplemented with meat, delicacies or smoked meats. They baked pies with her and even cooked meatballs. Dry peas filled with water were languished for a long time in earthenware in a Russian oven, so it boiled well and turned into mashed potatoes.

We offer to cook traditional pea porridge according to a step-by-step recipe in a saucepan on the stove, supplement the dish with smoked meats or vegetables.

Step-by-step recipes for pea porridge - general principles of preparation

To get a tasty and nutritious pea, you need to choose the right cereal. First of all, peas must be well ripened, as evidenced by their rich orange color. The surface of the grains should be smooth, well polished. Try to bite through one of them, if you don’t need to make an effort for this, the grits will boil quickly. Often, when choosing, the question arises which peas are better to take, crushed or whole. Of course, it will take less time to boil the crushed, and there is no need to soak it, but from whole peas, porridge is obtained with a richer taste.

Peas can be cooked with pre-soaking or do without such a procedure. For proper soaking, you need to take three parts of water for one part of whole or crushed peas. The optimal time for soaking peas is from two to six hours, no more. With a long stay in the water, peas often turn sour and do not boil soft. If you decide to soak in the evening, put it in the refrigerator and be sure to rinse and change the water at least twice. It is worth noting that even after prolonged soaking, porridge will cook from forty minutes to an hour.

Do not soak, let alone boil peas in running water. Often it contains impurities that prevent the peas from being boiled even after long cooking. It is best to take bottled water, and pass running water through the filter in advance, after which it is good to defend.

There are a lot of cooking options for peas, and all of them are based on the recipe for classic pea porridge, a step-by-step recipe for which is given in the article. It is usually not supplemented with anything, but only slightly flavored with butter. You can ennoble the pea by roasting vegetables, often the dish is prepared with meat: pork, beef, chicken, and even minced meat. It is often cooked with smoked meats. Fragrant pea does not require an excess of spices, but a richer taste can be obtained by adding a little ground coriander.

It is advisable to cook pea porridge in a non-enamelled saucepan with a thick bottom, but in its absence, a simple aluminum saucepan can be completely dispensed with. It is recommended to add water in a 1:3 ratio or visually navigate by level. The liquid should cover the layer of peas by at least two centimeters. After boiling, pea porridge is boiled over low heat, trying to stir as often as possible so as not to burn. The presence of a multicooker greatly simplifies the process. In it, the pea does not stick to the bottom, but it is advisable to look at it at least occasionally until the pea absorbs water so that it does not run out.

To determine the readiness, just look at the dish itself - the peas should be almost boiled soft. But this is a matter of personal taste, someone prefers not boiled pea porridge. In this case, you must definitely try the peas for softness.

Pea porridge: a step-by-step recipe for a classic pea

The simplest, one might say, the basic version of the preparation of pea porridge. A step-by-step recipe is the basis for fantasy. Instead of butter, you can add cracklings, pre-fried minced meat or slices, smoked meats or mushrooms to it. After this, the porridge should be allowed to warm up a little and brew.

Ingredients:

One and a half cups of peas;

Three glasses of filtered or bottled water;

Half a spoonful of fine salt;

1/3 pack of "Farmer's" oil.

Cooking method:

1. Thoroughly wash the sorted peas under the tap. We put it in a saucepan and add three glasses of filtered water to it. It is recommended to take two parts of liquid for one part of peas. Whether enough water is poured can also be determined by its level, the liquid should cover the peas by 2 centimeters, no less and no more.

2. On intense heat, bring the contents of the pan to a boil, then set the medium heat. By this time, a lot of foam will accumulate on the surface, it needs to be removed. We do this with a spoon or slotted spoon - carefully remove it, leaving not even a small fraction. Next, we cook the pea at the most minimal heat, not allowing the porridge to boil intensively.

3. Cook the porridge, slightly covering the pan with a lid. Stir constantly so that the peas that have settled to the bottom do not burn and carefully monitor the water level, top up if necessary.

4. When the peas begin to boil, become soft, add salt. Mix thoroughly and continue cooking until you get the desired consistency and density. Someone likes homogeneous pea porridge, and someone likes to feel individual peas. It must be remembered that a homogeneous pea thickens very much when cooled.

5. Add a piece of butter to the finished porridge and mix well. For greater uniformity, you can kill the peas with a blender.

Pea porridge: a step-by-step recipe with vegetable roasting for a slow cooker

Cooking pea porridge according to a step-by-step recipe for a slow cooker is simplified by the uselessness of constant stirring and supervision. Attention is required only the first time, until the water is absorbed into the peas. The recipe differs from the classic version in a different sequence of actions.

Ingredients:

Shelled peas - 400 gr.;

Two medium carrots;

Large bulb;

Two tablespoons of vegetable oil;

Coriander.

Cooking method:

1. If in the first recipe we start the preparation with peas, in this version we initially prepare the roast. We clean the vegetables, chop the carrots with the largest grater, chop the onion into small cubes. Pour about two tablespoons of oil into the bowl and warm it up a little. We spread the vegetables, cook on any frying option, until golden. We mix as often as possible, it is important not to dry or fry the vegetables, it is enough to bring them to softness.

2. We sort through the peas. We wash, spread to vegetables and fill everything with water so that it covers the peas by two centimeters. It is undesirable to fill the cooking bowl more than half, otherwise the water will run out of it.

3. After making sure that there is enough liquid, close the lid and start the “Extinguishing” or “Multi-Cooking” option for one hour. Be sure to at least occasionally control the process. Make sure that the pea does not run away, check the water - add as needed.

4. After the end of the program, we check the readiness. If the peas are poorly boiled and still hard, increase the time. Having received the porridge of the desired consistency, add salt, mix and leave for another quarter of an hour on heating.

5. Ready-made pea porridge, as in the step-by-step recipe above, can be supplemented with any product. But this must be done before putting on the heating.

Pea porridge: a step-by-step recipe with smoked ribs without carrots

You will need a capacious cast-iron cauldron or a separate thick-walled frying pan. Thanks to smoked meats, peas are not only tasty, more nutritious, but also fragrant, “with smoke”. Pea porridge, according to this step-by-step recipe, is prepared without carrots, the lack of characteristic sweetness is compensated with sugar.

Ingredients:

Half a kilo of crushed peas;

Large onion head;

700 gr. smoked pork ribs;

A teaspoon of sugar;

Three tablespoons of corn oil.

Cooking method:

1. We select all the garbage from the peas, rinse and put it in a bowl. Fill with water so that it completely covers it, add a teaspoon of soda and stir well. Set the bowl aside for at least half an hour.

2. We cut the "ribbon" of smoked ribs into pieces, divide the large ones in half or cut them into even smaller pieces.

3. We put a cauldron on the stove, pour oil into it, turn on the medium fire. Having warmed up the fat well, we lower the meat pieces into it. Fry, stirring, for five minutes. Smoked ribs are ready to eat, we just need to achieve a light blush on their surface.

4. We clean the bulb. Cut in half and thinly sliced. We shift to the ribs, evenly distributing over all the pieces, sprinkle with sugar. Simmer over low heat until the strips acquire a pleasant amber hue.

5. Thoroughly washing the peas, put it in a cauldron. Fill with boiling water, observing the recommended proportions or focusing on the water level. Mix everything well, cover the cauldron with a lid. We cook the pea at a minimum boil for about an hour and a half. After the peas absorb water, they may start to burn. Try to stir the porridge more often, lifting its bottom layer up so that the peas are steamed evenly.

6. Salt the finished pea and remove from the stove. Do not oversalt, the smoked ribs have already been salted.

Tricks of cooking pea porridge according to step-by-step recipes - useful tips

Not all of the step-by-step pea porridge recipes described above involve soaking peas. If there is enough time, still soak - the cooking time will be significantly reduced.

No filtered or bottled water, boil peas with unsalted mineral water. Even carbonated will do.

Bringing to a boil, systematically remove the foam that has risen to the surface and stir as often as possible, especially the first five minutes. While stirring, try to reach the bottom of the pan with a spoon and separate the settled peas from it. If this is not done, they will stick to it and may burn later.

It happens that the water was taken not running and the peas seemed to be chosen correctly, and no matter how much you boil the porridge, it does not turn out to be homogeneous. Try not boiled peas, if it is soft, beat the peas to the desired state with a blender.

Using split peas or soaking them is not the only way to save time. Using a pressure cooker will cut it in half, but you need to cook pea porridge in it with extreme caution. First of all, you can not fill the pan above the recommended level. It is necessary to strictly observe the proportions of peas to water and not allow intense steam to escape through the valve. This indicates a strong seething inside, and this can literally turn out to be dangerous: the water will evaporate quickly, the valve may become clogged with splashes of pea puree and the pressure cooker will “explode”.

The classic version of pea porridge, the step-by-step recipe of which is described in detail above, is not only the base for all its types cooked in a saucepan. It's also truly versatile! Meatballs are prepared from such a pea, it can become the basis for pancakes, pea cutlets and even the filling for delicious pies.

Choosing peas for peas

In cooking, it is important to monitor the quality of the ingredients used, because the final result directly depends on this. Before we learn how to cook pea porridge, let's learn how to choose excellent peas.

On the shelves of shops you can find 2 types of peas: shelled chopped (in the form of halves of peas) and shelled whole polished. For cooking porridge, it is better to use crushed beans - they boil 3 times faster. Peas of a yellow hue had time to ripen before the moment of collection and have a rich taste. Puree from green fruits will have a more delicate texture and taste.

When buying peas, give preference to a clean and pest-free product. Peas should be about the same size, not too large - 3-4 cm in diameter.

The presence of garbage or an abundance of small chips in the package indicates the low quality of the product.

To keep peas longer after purchase, store them in an airtight container (such as a plastic container or glass jar) in a dry place out of direct sunlight. To prevent the beans from accidentally getting damp and spoiled, place a small cloth bag of salt at the bottom of the container.

Perfect tableware

The best pan for pea porridge is thick-walled and with a heavy bottom.

Overcooking the egg white can cause the protein to curdle, causing the beans to become hard and not overcooked. Therefore, pea porridge is cooked over low heat, which takes time. So that during long-term cooking the porridge does not burn, and subsequently washing the pan does not cause trouble, it is better to use dishes with a thick bottom and walls.

1. First you need to properly prepare the products. Wash the meat thoroughly under water, dry it with paper towels and cut into small cubes. We rub the peeled carrots on a grater, and finely chop the onion, wash the pre-soaked peas again.

2. Pour sunflower oil into the container, and when it heats up, put the pieces of meat in the slow cooker and fry in the "frying" mode (if your slow cooker does not have this, the "baking" mode is perfect) for 15-20 minutes. You can alternate cooking meat in this way: fry for 10 minutes with the lid closed, and the rest of the time with the open, so that it turns brown.

3. After that, we take out the meat. After washing and drying the bowl in a slow cooker, we prepare it for frying onions and carrots. We pass the onion with the lid open for 8-10 minutes, then add the carrots and, stirring occasionally, cook the vegetables for another 5-7 minutes.

4. Now add the washed peas and fried meat to the vegetables, pour everything with warm water, season, salt and leave to cook for 2 hours in the "stewing" mode (the "cereals" or "buckwheat" mode is suitable). All excess water should boil away. If instead of fresh meat you decide to cook peas with stew, then soak the peas for the whole night - the cooking time in the slow cooker will be reduced by 2 times.

5. When the peas are boiled and the meat is completely stewed, the dish decorated with herbs can be flavored with butter and served. Rest assured, you will be asked to reveal the recipe for this soft and unusually appetizing dish.
