    As soon as the pancake in the pan begins to rise and blush, it must be turned over, otherwise it may become too dry, and even worse, burn.

There is cheese and sausage in the fridge. Can they inspire you to culinary exploits? "Well, what's the inspiration here?" - someone will grumble indignantly. - "Unless to make sandwiches ...". You can, of course, but there are options and more interesting. How about baking pancakes with sausage and cheese in the form of a side dish? You will cope with this task quickly, do not even hesitate, since the recipe is one of the simplest. The advantage of such pancakes is that they turn out not “empty”, but as if with a filling, but you don’t need to bother with wrapping the minced meat in each pancake and with other tricks. By the way, any sausage will do - the main thing is that it should not be too greasy. The best choice is doctor's or ham, in extreme cases - milk or veal sausages. Cheese is preferred hard varieties. Processed cheeses are not suitable for baking, they are only good in fillings that you can cook, for example, for yeast pancakes with holes.

Preparation time - 35 minutes, the recipe is for 2 servings.

Ingredients:

  • eggs - 2 pcs.;
  • kefir (any fat content) - 1/2 l;
  • wheat flour - 1-1.5 cups;
  • soda -1/3 tsp;
  • sugar - 1 teaspoon;
  • salt - 1/3 teaspoon;
  • vegetable oil - 1/2 cup;
  • hard cheese - 150 g;
  • boiled sausage or ham - 150 g.

Cooking pancakes with sausage and cheese

Pour eggs into kefir, add salt, sugar, soda. There is no need to specifically extinguish soda with vinegar or citric acid; it will extinguish itself in the acidic environment of kefir.

Mix everything using a mixer or a culinary whisk, then pour in the vegetable oil and add the flour. It also needs to be gently stirred so that there are no lumps in the dough. Here again, a whisk or a mixer will help you out. Pancake dough in this case should be a little thicker than regular pancakes.

Grate sausage and cheese. You can cut them with a knife, but keep in mind that the pieces are required small and thin.

Pour the sausage-cheese mixture into the dough.

Stir the dough so that the sausage and cheese are evenly distributed in it.

Before baking the first pancake, the pan should be lightly greased with vegetable oil (in the future, this will not be necessary, since the required amount of vegetable fat is added to the dough). Do not forget to heat it first and only then pour one ladle of dough. Put the pan on the stove, close the lid, adjust the flame or heat to medium.

After 2 minutes, turn the pancake over and fry on the other side.

Don't fry the pancakes until they're dark brown or all your pancakes will just burn. The crust on pancakes should be light and golden, as in the photo below.

Before serving, it is better to return pancakes with neat “rolls”.

Ready-made pancakes with cheese-sausage topping are served hot - in this form they are most delicious.
