It so happens that most people have an extremely negative attitude towards Japanese cuisine. Mostly such cases occur due to an unsuccessful first acquaintance. To avoid this, you can try making rolls and sushi yourself. You just need to have a few skills and know the basic secrets.

Necessary tools for cooking

So, in addition to having the desire and products, you also need to have some tools for making homemade rolls.

These may include:

  • bamboo mat. Its other name is makita;
  • cling film.

If you have already become a little more experienced, then the cooking process will not be particularly difficult for you. Amateurs can use a special machine for cutting rolls. Together with it, the dish will turn out no worse than in a sushi bar. You can also do without cling film, but using it will make cooking easier. In addition, this way the rolls will be more accurate, and the process itself will be easier and faster.

How to cook rice for rolls?

Please note that to prepare rolls you must use only round grain rice. If you want to follow traditions, you can also purchase special Japanese rice, which is sold in stores in the Asian cuisine section.

Required ingredients:

  • rice – 1 glass;
  • salt - 1 tbsp. spoon;
  • sugar – 0.5 tbsp. spoons;
  • rice vinegar – 2 tbsp. spoons.
  1. To begin, rinse the rice thoroughly several times with ice water until it runs completely clear.
  2. Pour it into a saucepan and add two and a half glasses of water. There is no need to add any spices or salt.
  3. After the water boils, reduce the heat to low and cover the rice tightly with a lid.
  4. Continue cooking for 10-15 minutes, but do not overcook. Do not stir the rice or remove the lid from the pan.
  5. Add salt and sugar to the rice vinegar and simmer the mixture over low heat.
  6. Once the crystals have completely melted, remove the dressing from the oven.
  7. The finished rice should be steamed for about 10 minutes with the lid closed and only then can it be removed.
  8. Transfer the rice to a bowl and pour the still hot vinegar mixture evenly over it.
  9. Stir, and when the rice has cooled, you can start preparing the snack.
  10. Rice should be used immediately after cooking. If you put it in the refrigerator, it will become hard and tasteless.

Simple Syake Maki rolls with salmon

Ingredients required:

  • cooked rice – 300 g;
  • lightly salted salmon – 150 g;
  • nori – 3 sheets;
  • wasabi - a pinch.

  2. Peel the salmon and cut into small strips of equal size.
  3. To prevent rice from sticking to your hands, pour water into a bowl and add vinegar or lemon juice. You should periodically wash your hands in this liquid.

Cooking with shrimp at home

Required ingredients:

  • rice – 300 g;
  • shrimp – 200 g;
  • avocado – 1 pc.;
  • cucumber – 1 pc.;
  • Bulgarian pepper – 1 pc.;
  • cream cheese;

  1. Wrap the mat in film.
  2. Place half a sheet of nori on it.
  3. Place rice there, retreating 1-2 centimeters from the edge, and on the opposite side go the same amount beyond the border.

  • vegetables (cucumber or avocado);
  • cheeses (the best option is Philadelphia cream cheese, but it can be replaced with cream cheese from any other manufacturer. Also, at home, sushi is often prepared using Fetaki or Feta cheese. Another option is unsalted feta cheese).

How to choose fish for sushi?

There are no strict restrictions: you can choose both frozen and fresh fish. But we still recommend paying attention to the latter: its price will be higher, but you will also be pleased with the taste of the rolls. If you will be preparing sushi in a few days and buying frozen fish is a necessary necessity, then store it in the freezer on ice. The appearance of the fish should be neat and there should be no unpleasant odor. Do not take fish with damage or strange spots. You should take a whole piece: it is much easier to cut.

A short excursion: how to properly cook sushi rice

Only hard rice is suitable for sushi. Our advice: don’t look for rice on a standard counter; the right varieties are sold in specialized outlets or shops.

Before cooking, rice must be washed at least five to ten times. The water should be clear, not cloudy. It is advisable to dry the rice: you can put it in a bowl and leave for thirty minutes.

Now about the proportion of rice and water: it is standard - it is 1 to 1.5. That is, if you have 200 grams of rice, then you need to fill it with 300 milliliters of water. Place the rice and water over high heat and wait until it boils. As soon as the water boils, reduce the heat to low, cover the rice with a lid and cook until the cereal absorbs the water. Typically, the cooking time is fifteen minutes. After cooking, remove the pan from the stove and, without opening the lid, leave it for fifteen minutes. We can call the rice ready for rolls only after we sprinkle it with vinegar dressing.

How to make sushi: a recipe for beginners

If you have never made rolls, then this homemade sushi recipe will be ideal. It is simple and quite quick: everything will take you about twenty minutes. So, the necessary ingredients:

  • special mats for preparing sushi (one is enough);
  • two hundred grams of sushi rice;
  • two hundred and fifty grams of salted salmon;
  • one cucumber or avocado (when buying an avocado, choose a ripe, soft fruit);
  • one sheet of nori seaweed;
  • fifty grams of Philadelphia cheese (or any other cream cheese).

Let's start cooking:

First, cook the rice as described in the article above. Next, unroll a sheet of nori seaweed and carefully distribute our products on it. Keep in mind that there should be a distance of about two centimeters from the edge of the nori. Tip: Wet your hands with water before preparing the rolls.

We placed a layer of rice on the nori, then carefully spread a layer of cheese. The consistency of the cheese is very soft, so we recommend using a butter knife. The length of the cheese track should be about five centimeters.

As for the salmon, we cut it into fairly oblong strips and place it on the cheese. Peel the cucumber or avocado and also cut it into oblong strips. However, avocados can also be cut into cubes. Place a piece of vegetable on the fish.

This type of sushi is the most popular. Philadelphia rolls are based on red fish, thanks to which this sushi has such a delicate taste. To prepare you will need:

  • four hundred grams of sushi rice;
  • five hundred grams of trout or salmon (preferably chilled);
  • one cucumber or avocado; one and a half tablespoons of granulated sugar;
  • two hundred and fifty grams of Philadelphia cheese;
  • three sheets of nori seaweed; a little wasabi sauce.
Let's start cooking:

As with any sushi recipe, we start by cooking the rice. Carefully peel the vegetable (avocado or cucumber) and cut it (if it’s a cucumber, then into strips; if it’s an avocado, then into cubes).

It is advisable to wrap the sushi mat in cling film before cooking. Firstly, it is more hygienic, and secondly, the mat will last you much longer. Place half a sheet of nori on the mat (the shiny side should be at the bottom). It is better to moisten your hands with water. The rice is distributed over the sheet, and fish cut into oblong pieces is carefully placed on top.

Now we turn the sheet over so that the salmon is on our mat. Place vegetables (cucumber strips or avocado cubes) on one edge of the seaweed. Coat the sheet with cream cheese. This version of sushi is not only simple, but also inexpensive: there is no fish or shrimp in the recipe. However, the taste of these rolls will not disappoint you if you follow the recipe.

Ingredients:

  • several sheets of nori seaweed;
  • two hundred grams of special sushi rice;
  • about eighty grams of cream cheese (preferably use Philadelphia);
  • two cucumbers;
  • a small package of crab sticks (best chilled, not frozen).

Let's start cooking:

First, cook the rice: two hundred grams is enough. As we told you, this amount of rice requires two hundred and fifty milliliters of water. We rinse the rice at least five times until the water becomes completely clear, and boil it, following our advice above. After cooking, the rice must be seasoned with special Japanese vinegar, or you can make the sauce yourself. A variety of ingredients are used for this, ranging from lemon juice to sea salt, sugar and honey.

Advice! The simplest recipe for dressing rice is this. We take fifteen milliliters of vinegar and the same amount of clean water. You will also need half a teaspoon of sugar and sea salt. All this is thoroughly mixed and heated until the salt and sugar dissolve. Drizzle dressing over warm rice.

Let's start with the rolls. We will need half a sheet of nori. Place it on a special mat wrapped in cling film. The smooth side of the seaweed should be at the bottom. If there is no special mat, then it can be replaced with a regular wooden plank.

Now put the rice on the nori. Please note that one centimeter of the sheet should remain free, and the rice should retreat from the edge by about one centimeter. Now spread the cream cheese, crab and cucumber onto the rice using a butter knife. The last two products are cut into strips.

Ingredients:

  • about five hundred grams of frozen shrimp (one pack);
  • three hundred grams of short grain rice for sushi;
  • two teaspoons of rice vinegar (rice dressing);
  • two tea spoons of sugar;
  • one cucumber;
  • six sheets of nori seaweed;
  • about fifty grams of flying fish caviar;
  • about one hundred grams of cream cheese (preferably Philadelphia);
  • one pinch of sea salt; half a lemon.

Let's start cooking:

Place all the necessary ingredients on the work surface. Let's start cooking the rice. First, rinse the cereal thoroughly in cold water. You need to rinse at least five times until the water becomes completely clear. Without a lid, put the pan on maximum heat and wait until the water boils. After boiling, turn the heat to minimum and cook for another fifteen minutes with the lid closed: all the water should evaporate. As soon as the rice is cooked, do not immediately remove the lid, but let the rice sit for another twenty minutes.

Now about refueling. Take a separate bowl, preferably a small saucepan, and mix a little water, vinegar and sugar together. If desired, you can add sea salt. Season the prepared hot rice with the resulting sauce and let the dressing absorb. The rice must be carefully turned over so that the dressing is absorbed evenly. To do this, we use a wooden spoon and do not interfere in any way.

We proceed to the shrimp, rinse them thoroughly under cold water. Place the shrimp in a saucepan, fill with water, add a little and put on maximum heat. You should also add lemon juice to the water (half a lemon is enough). Bring to a boil and cook the shrimp for about five to seven minutes. Let the prepared shrimp cool and clean them.

While the shrimp are cooking, you can peel the cucumber and cut into thin strips. We can form the rolls ourselves. Take sheets of nori seaweed and place a layer of boiled rice on them. Keep in mind that you need to leave a couple of centimeters of rice free at the top of the sheet. Then a strip of flying fish roe, shrimp, cucumber and cheese are laid out on the rice. The cheese can be spread using a piping bag or a butter knife. Now you can carefully roll the foxes, and run a wet finger at the junction of the nori sheet - this will hold the roll together more firmly. We immediately advise you not to cut our rolls, but to let them sit for about five minutes. After cutting, serve with wasabi and ginger. Ready!
