In Thailand, bananas are very cheap, very tasty and usually sold in huge bundles at once. We always have a lot of them. Often we simply do not have time to eat so much, and bananas spoil quickly here. 2-3 days and they are rotten, another day or two and you need to throw them away. They are not stuffed with chemicals here so that they can be stored in the refrigerator for weeks, so they must either be eaten quickly or something urgently done with them.

Overripe bananas are best used in baking, and we love baking. At least 2 times a day, my husband and I drink tea with something tasty. Whenever possible, I try to cook delicious food myself, which is why we were looking for a house with an oven and kitchen appliances. In Thailand, there are problems with baking dishes, they are sometimes difficult to find, but large stores usually have them. You can also adapt pots without plastic handles or a rice cooker mold for this purpose.

So, what to cook? If you need something simpler, then I make different cupcakes. I choose recipes depending on what products are available and what I want to get. Here is one of the simple and favorite recipes:

4-5 overripe bananas
2 eggs,
0.5 cup sugar (if bananas are not very sweet, then a little more)
100 g cl. oils,
10 g of baking powder (you can take 3-5 g of soda and quench with lemon juice or vinegar)
1.5 cups flour

Grind bananas in a blender. Add sugar, eggs and melted butter, mix well, I do it right in the blender. Then add flour and baking powder and mix. You can also vanilla sugar, raisins, prunes, oatmeal and whatever you want. We spread the dough in a form, greased with oil (if the form is silicone, then do not lubricate). I used an inner bowl from a rice cooker since I didn't have a muffin tin. We put in the oven and bake for about 40-45 minutes (if we make muffins, then 20-30 minutes) at a temperature of 180 degrees. If you are waiting for guests or just time allows, then you can sprinkle the finished cupcake with powdered sugar or pour over chocolate icing with nuts or think of something else, but I didn’t do anything, we eat it so well and quickly. The cake is very tender and delicious.

I also really liked the recipe for Brazilian banana pie. It is even tastier and more tender than the previous cupcake. Even my mom, who is on a diet, couldn't resist. We will need:

1.5 cups flour
1.5 cups corn starch
1.5 cups of sugar
1 sachet of vanilla sugar (optional)
1 st. l. baking powder (I took 1/3 tbsp of soda slaked with lemon juice, you can still use vinegar),
200 g butter,
3 eggs,
1 glass of milk
6 bananas (I took both 4 and 8, when both)

We mix flour, starch, melted butter, sugar and slaked soda and get the dough in the form of bread crumbs. We grease the form with oil (we have a large baking sheet, I used it instead of the form, the cake turned out to be thinner than the original, but this makes it no less tasty). Pour half of the dough, distributing it evenly. Cut the bananas in half lengthwise or into 3 parts if there are not enough. Lay out on the dough. Top evenly with the remaining dough. Beat whites and yolks separately. Pour the beaten yolks into the whites, gently mix, gradually pouring in the milk. Pour the pie with this mixture and bake at a temperature of 180-200 degrees for about 30 minutes. Cool (although we rarely manage to wait until it cools down) and cut into portions. And then you find them, already brown, ugly, overripe, and your conscience begins to eat you ... And not even eat, but eat ... Cooking:

  1. Fry the walnuts in a dry frying pan for 8-10 minutes. Let cool, then chop into large pieces.
