Ingredients:

  • Potatoes - 3 pcs.;
  • Mushrooms (pickled) - 0.5l;
  • Carrots - 2 pcs. (medium);
  • Peas (canned) - 150g;
  • Cranberries or lingonberries (fresh or frozen) - 1 tbsp.;
  • Green onions and greens (dill and parsley) - in a bunch;
  • Vegetable oil - 30 ml;
  • Salt pepper.

How to cook:

  • Boil carrots and potatoes in their skins.
  • Peel potatoes and cut into cubes.
  • Cut mushrooms.

It is very important to choose the right mushroom cut. If you want the taste of this ingredient to dominate, cut the mushrooms in half.

The general rule for salads involves cutting the same pieces for all ingredients.

  • Cut boiled carrots, like potatoes, into cubes.
  • Wash onions and greens, cut.
  • Connect all products. Salt, pepper. Mix.

Add oil and mix again.

Such a dish does not need additional decoration. Unless, leave a few berries and sprinkle them on top of the salad.

fly agaric

Interestingly, almost all the products in this recipe are already in the finished state: salted, pickled.


Ingredients:

  • Honey mushrooms (salted - 500g;
  • Corn (canned) - 400g;
  • Carrots in Korean - 100g;
  • White beans (canned) - 400g;
  • Tomatoes (small, cherry can be) - 200g;
  • Vegetable oil - 1-1.5 tablespoons;
  • Salt;
  • Parsley or lettuce for garnish.

How to cook:

  • Drain water from canned food.
  • Wash and cut mushrooms.
  • Carrot cut into pieces of 4-5 cm.
  • Combine all ingredients.
  • Be sure to taste before salting. All products are already salty. You probably don't need to add salt.
  • Refine with oil. Mix.
  • Top with tomato halves and lettuce. You can make small dots on the "fly agaric hats" from white peppercorns.

Avocado + orange

An unusual dish that is relevant for the New Year!


Ingredients:

  • Orange - 2 pcs.;
  • Avocado - 1 pc.;
  • Salad ("Frize") - approx. 7 leaves (to taste);
  • Bread - 2 slices;
  • Garlic - 2 teeth;
  • Olive oil - 3 tablespoons;
  • Wine vinegar - 2 tablespoons;
  • Salt pepper.

Cooking:

  • Peel oranges. Remove film. Cut the slice in half.
  • Dry the bread in the oven or toaster. Before slicing, rub with garlic.
  • Make the sauce: Combine oil and vinegar. Salt, pepper.
  • Wash and tear lettuce. Lay out a layer on a plate.
  • The next layer is avocado. It can be cut. And you can break off small pieces with a spoon.
  • Then a layer of orange slices.
  • The top layer is bread.
  • Drizzle with sauce just before serving.

You can cook a dish without bread. Focus on your taste and preferences.

Olivier with soy meat


Ingredients:

  • potatoes boiled in uniform, medium size - 6-7 pcs.
  • boiled carrots, medium size - 3 pcs.
  • peas - 1 can of 0.5 l.
  • pickled small cucumbers - 5 pcs.
  • smoked cheese - 100 gr.
  • lean maonnaise - to taste
  • black salt - 1 tsp
  • dry soy goulash - 200 gr.

Seasonings for soy:

  • asafoetida - 3/4 tsp
  • seasoning for meat - 1 tsp
  • ground coriander - 1 tsp
  • paprika - 0.5 tsp
  • salt - 1 tsp when cooking, 3/4 tsp. after
  • vegetable oil - 4-5 tbsp.

Boil soy goulash, cut into cubes, add spices, mix


Put in a frying pan and fry soy goulash in vegetable oil until cooked.

We cut the boiled vegetables into cubes.


Finely chopped smoked cheese

We send everything to a bowl, add spices, mayonnaise and mix.


Olivier with mushrooms

INGREDIENTS:

  • Potatoes 4 pieces
  • Pickled cucumbers 4 pieces
  • Carrot 1 piece
  • Canned green peas 1 can
  • Onion 1 head
  • Mayonnaise 150 g
  • Fresh champignons 200 g

Cooking:

  1. Boiled potatoes and carrots cut into cubes. Pickled cucumbers and vegetables cut into cubes.
  2. Cut the onion and champignons, fry together until golden brown in vegetable oil.
  3. We combine vegetables with mushrooms and onions (drain the oil), add mayonnaise, spices and mix.

Vegetarian fur coat from Marmalade Fox

For a vegetarian salad, we need a fur coat:

  • 1 eggplant (or 300g mushrooms)
  • 1/2 purple onion (you can use any onion)
  • sugar (honey)
  • vinegar (if you fry onions with eggplant, then you don’t need to pickle it)

  • nori seaweed - 3 sheets
  • potatoes - 3 pieces (medium)
  • carrots - 3 pieces (medium)

  • homemade mayonnaise - about 400g

Festive vegetable salad

Ingredients:

  • 200 gr cabbage
  • 2-3 tomatoes
  • 2-3 cucumbers
  • 1 bell pepper
  • half a bunch of dill
  • half a bunch of green onions
  • 2 tbsp mayonnaise
  • black pepper

Simple and delicious avocado salad - new

A very hearty, spicy salad with beans, corn and avocados to cook in 10 minutes. Looks festive and bright.


Ingredients:

  • Canned beans 1 can
  • Canned corn 1 can
  • Avocado (ripe) 1 pc. (400 g)
  • Tomatoes 200 g
  • Red onion 120 g
  • Chili pepper 1 pc. (taste)
  • bunch of cilantro

Salad dressing:

  • Lemon (lime) juice 3 tbsp.
  • Olive oil 3 tbsp
  • Garlic 2 cloves
  • Sugar 1 tbsp
  • Salt 1 tsp (to taste)
  • Black pepper ½ tsp (taste)

We're getting ready to ship. Squeeze lemon juice, garlic into the oil, add sugar, salt, pepper.

Cut the tomatoes into quarters. Finely chop the onion.


Add finely chopped chili pepper, greens, diced avocado to the salad.

Add beans and corn. Mix the oil dressing again and pour into the satat. Mix carefully. You can garnish with a slice of lemon.

Ratatouille

Not quite a salad, but quite a great appetizer.

Ratatouille is a traditional Provencal dish. A simple step by step recipe will help you make this incredibly tasty dish.

Sauce Ingredients:

  • Tomatoes - 900 gr
  • Pepper - 250 gr
  • Onion - 200 gr
  • Carrot - 200 gr
  • Celery stalk - 100 gr
  • Chili pepper - 50 gr
  • Melted butter - 40 gr (can be replaced with butter)
  • Garlic - 2 cloves
  • Provence herbs - 1 tbsp.
  • Salt - 1 tbsp.
  • Sugar - 1 tbsp.
  • Thyme
  • Basil

Top layer ingredients:

  • Zucchini - 500 gr
  • Eggplant - 500 gr
  • Zucchini - 500 gr
  • Tomatoes - 300 gr
  • Potato - 200 gr
  • Onion - 200 gr
  • Sweet red, yellow, green peppers - 150 gr (3 pcs)
  • Olive oil - 60 ml
  • Salt - 2 tsp
  • Thyme

Sauce preparation:

  1. Make cuts on the tomatoes and pour boiling water for 10 minutes.
  2. Puree the tomatoes with a blender.
  3. Peel the peppers and place in the oven at 180°C for 20 minutes.
  4. Fry the onion, carrot and celery stalk in olive oil. Add melted butter.
  5. Pour in the tomato puree and add the bay leaf.
  6. Peel the peppers, chop and add to the pan.
  7. Add Provence herbs.
  8. Add garlic and chili pepper.
  9. Cover and simmer on low heat for 60 minutes, then remove the lid and simmer for another 30 minutes.
  10. Cut vegetables thinly (3-5 mm). Salt eggplant and zucchini and pour water for 20 minutes.
  11. Add thyme and basil, grind the sauce a little with a blender.


  12. Put the sauce in a mold, arrange the vegetables, alternating the sequence
  13. Place thyme, salt and pepper in olive oil. Drizzle vegetables with seasoned oil.
  14. Cover with foil and put in the oven at 160°C for 90 minutes
  15. Remove foil and bake for another 40 minutes.
  16. Serve hot sprinkled with parmesan and parsley. Bon appetit!

Dessert. fruit dishes

You can replace pastries with sweet salads. And if snacks are being prepared without mayonnaise , then neither cream, nor ice cream, nor fatty creams are added to these desserts. But this does not make the taste of the dish worse. On the contrary, these are healthy and amazingly tasty salads.

Ginger

Very bright dessert. And very helpful.


Ingredients:

  • Carrots (if you choose a sweet and juicy variety, you can not add a sweetener) - 2 pcs.;
  • Oranges - 2 pcs.;
  • Cashew - 2 tablespoons;
  • Lemon juice - 2 tablespoons;
  • Oil (olive, linseed, sesame or peanut - 1 tbsp;
  • Black ground pepper - a pinch;
  • Sugar - a pinch.

Cooking:

  • Grate carrots on a coarse grater.
  • Peel oranges. Cut into pieces and remove the membranes.
  • Crush the nuts.
  • Mix all products. Drizzle with oil and juice. Spice up. If necessary, salt.

Contains pepper. This ingredient makes the taste of the dish very bright and unusual. You can replace it with a pinch of ground coffee.

Ingredients:

  • Peach (nectarine) - 1 pc.;
  • Plums - 2-3 tablespoons;
  • Apples - 1 pc.;
  • Figs - 2 pcs.;
  • Kiwi - 2 pcs.;
  • Tangerines - 2 pcs.;
  • orange juice;
  • Blueberry jam - berries with syrup;
  • Mint.

Cooking:

  • Peach, plum, apple and pear cut into cubes.

  • garlic - 2 cloves;
  • green onions - several stalks;
  • beans in their own juice - 150 g;
  • parsley - several stems;
  • canned corn - 150 g;
  • avocado - 1 pc.;
  • olive oil -1 tbsp. l.;
  • half a lemon;
  • salt;
  • tomatoes - 2 pcs.

Cooking:

  1. Wash and peel all vegetables.
  2. Tomatoes, peppers, onions, parsley finely chopped.
  3. Add beans and corn to chopped vegetables and mix thoroughly.
  4. To prepare the dressing, grind the avocado, garlic, olive oil and lemon juice in a blender.
  5. Add the avocado dressing and salt to the salad and mix well.

Jellied

Ingredients:

  • carrots - 1 pc.;
  • potatoes - 1 pc.;
  • melted butter - 2 tsp;
  • low-fat sour cream - 40 g;
  • agar-agar - 3 tsp;
  • Adyghe cheese - 70 g;
  • salt, spices - to taste.

Cooking:

  1. Wash the vegetables, peel and boil, adding spices along the way and adding melted butter.
  2. Soak agar-agar in a little water.
  3. Remove the boiled vegetables from the broth, and strain the broth itself.
  4. Add the swollen agar-agar to the broth and cook it for 15 minutes over low heat. Cool down. Mix a third of the broth with sour cream, put on the bottom of a deep bowl.
  5. Cut the vegetables and put on top of the already frozen sour cream mass.
  6. Pour the rest of the broth and wait for the dish to completely solidify.

lemon cake

No birthday can be imagined without a birthday cake. But what to do if a strict diet does not allow high-calorie sweets? There is an exit. Fortunately for those who are losing weight, there is a dish according to this recipe, which will turn out to be no less appetizing than in the photo, and will decorate any feast.

Ingredients:

  • shortbread cookies - 400 g;
  • sugar - 6 tbsp. l.;
  • margarine - 150 g;
  • eggs - 4 pcs.;
  • juice of 1 lemon;
  • lime zest - 1 tbsp. l.;
  • condensed milk - 200 g.

Cooking:

  1. Crumble the biscuits a lot.
  2. Pour melted margarine into the liver and knead the crumbly dough.
  3. Put the kneaded dough into a cake mold and send it to the oven for 20 minutes at a temperature of 200 degrees. The crust should take on a golden hue.
  4. In a blender, beat the yolks with condensed milk.
  5. Add lemon juice and lime zest to the condensed milk and continue beating the dough until thick.
  6. Pour the finished mass onto the cake and send for 15 minutes in the oven at the same temperature.
  7. Proteins thoroughly beat with sugar and put on the cake. Then send the dessert to the oven for 5 minutes.
  8. Send the finished dish to the refrigerator until completely cooled.

Lobio rustic

Ingredients:

  • asparagus - 300 g;
  • red onion - 1 pc.;
  • garlic - 3 cloves;
  • olive oil -1 tbsp. l.;
  • almonds - 70 g;
  • ucho-suneli, adjika - 1 tbsp. l.;
  • basil, cilantro - 1 bunch;
  • salt - to taste.

Cooking:

  1. Prepare the required ingredients. Wash the beans and cut off the rough ends, rinse the basil and cilantro, peel the garlic.
  2. Pour beans with water and bring to a boil. Cook for 15 minutes until soft.
  3. Chop the onion and garlic and fry in a pan until soft. Add ucho-suneli, basil, cilantro, adjika, almonds, salt and stir well.
  4. Mix with beans and stir.

Manti with pumpkin

Manty with pumpkin is the perfect option for a hot treat for a feast. They are easy to prepare, very juicy, tasty and fragrant.

Ingredients:

  • sifted flour - 300 g;
  • pumpkin - 250 g;
  • cilantro, dill - to taste;
  • salt;
  • tomatoes in their own juice - 200 g;
  • tomatoes - 2 pcs.;
  • garlic.

Cooking:

  1. Add a little salt, water, oil to the sifted flour. Knead the dough thoroughly, it should turn out to be very tight, but elastic due to the addition of vegetable oil. Leave the finished dough to “rest” for a few minutes, covering with a kitchen towel.
  2. Cut the pumpkin very finely and lightly fry with the addition of onions. Put the finished filling in a separate bowl, pepper and salt.
  3. Form manti, grease with oil and put on the bottom of the double boiler. Cook for 30 minutes.
  4. For the sauce, you need to chop tomatoes in their own juice, fresh tomatoes, cilantro, salt, 3 cloves of garlic, vegetable oil and black pepper in a blender. Sprinkle the finished sauce with dill.

In the preparation of any dish has its own subtleties. By adhering to the following recommendations, you can easily prepare vegetarian dishes for the holiday table:

  1. So that the manti does not stick to the grate of the double boiler, before cooking, their bottom must be dipped in vegetable oil.

Blend butter and soy milk in a blender until slightly thick, then add salt and vinegar or lemon juice, continue beating. When the consistency approaches mayonnaise, add spices and mustard, mix.

Boil carrots and potatoes, cool and peel. Cut into cubes alternately and lay out in layers in a bowl all the ingredients, except for the peas. The order is: carrots, potatoes, cucumbers, tofu. Then, sausage, meat or mushrooms, if using. Lubricate generously with mayonnaise on top and lay out a Christmas tree from green peas. Cooking

Mix ingredients for toppings according to recipes. Fry the mushroom stuffing in vegetable oil. Slice potatoes, eggplant and zucchini lengthwise. From tomatoes, beets and peppers, cut off the tops, free from the cores. Tamp the fillings tightly with a spoon into boats with a small slide; when baking, it will decrease in volume. Sprinkle grated cheese on top, brush with sour cream or soy mayonnaise.

When roasting assorted vegetables on one baking sheet, form several compartments of baking foil so that the flavors do not mix. Peppers and tomatoes will be ready in 15-25 minutes. Potatoes need 20-30 minutes in the oven, and eggplants need to be baked for at least 45 minutes.

  • Edamame beans / lentils - 300 g,
  • Kale / Beijing cabbage - 150 g,
  • Garlic - 2-3 cloves,
  • Tahini - 1 tbsp. l.,
  • Lemon juice - 1 tbsp. l.,
  • Tamari - 50 g,
  • Maple syrup - 50 ml,
  • Chipotle powder - 20 g,
  • Rice vinegar - 30 ml,
  • Spinach puree, beetroot juice and turmeric powder for coloring the dough.
  • Dumpling dough.

Cooking

Slightly boil the cabbage, beans - until tender. Mix them with tahini, garlic and lemon juice, grind into a puree.

Divide the dough into three parts, add beetroot juice to one, turmeric to the second, pureed spinach to the third. Roll out the dough thinly, mold dumplings in your favorite way.

Dumplings can be sculpted in advance, frozen and served not only on December 31, but also on New Year's weekend.

For sauce, combine tamari, maple syrup, chipotle and vinegar.
