You can bake them both in the oven and in the slow cooker (in the Baking mode for about 45-60 minutes - focus on the power and volume of the cup of your assistant). The amount of sugar for the dough can be changed to your liking (according to this recipe, the cake is moderately sweet).

Cream for chocolate cake is made on sour cream - it should be oily. I have sour cream with a fat content of 26%, but you can buy higher. How sweet the cream will be, it's up to you. If desired, add vanilla, vanilla essence, vanilla sugar or vanillin to the aroma.

We take cherries for the filling according to the season: in summer - fresh, in winter - frozen. It is clear that without stones. Corn starch for thickening berry juice can be replaced with potato starch or wheat flour, but add only 1 teaspoon. Let's start by making a chocolate biscuit. Immediately turn on the bask oven 180 degrees. I have a regular gas stove Hephaestus, lower heating. All products for chocolate cake must be at room temperature, so take them out of the refrigerator in a couple of hours. Sift 300 grams of wheat flour (premium) into a separate bowl, add 40 grams of high-quality cocoa powder (this time I cooked with a new one and impressed the result) and 1 teaspoon (without a hill) of baking soda.


Mix well with a spoon or fork so that the dry ingredients evenly disperse throughout the mixture. Do not forget to sift through a fine sieve, since soda is most often knocked down by lumps that will give bitterness in the finished cake.



Beat everything with a mixer at high speed for about 5-7 minutes until sugar crystals are completely dissolved. Eggs with sugar should greatly increase in volume, and the mass itself should become airy and fluffy. Add 250 milliliters of kefir (any fat content), mix everything actively or whisk with a mixer for literally a few seconds. Tip: kefir is best used not the first freshness, that is, so that it is acidic - then the baking will be higher and more magnificent.


Following (and it is possible even before kefir - not fundamentally) we pour 80 grams of melted and already cooled butter. Mix again or whisk for a few seconds with a mixer at low speed.


Finally, it is the turn of dry ingredients for the future of chocolate cake. Pour the flour mixture with cocoa and soda, which we simply manually intervene with a whisk or a spatula. Alternatively, you can very briefly mix everything with a mixer at the lowest speed.


As soon as there are no dry lumps of flour with cocoa, we stop stirring. In terms of density, the dough for chocolate biscuit on kefir is obtained as a dough for fritters - it is not very thick, but also not liquid. In other words, the dough does not flow, but lazily creeps if you tilt the dishes.


I use a baking dish, detachable, with a diameter of 18 centimeters (you can take a larger size, then the cake will be lower), it is not necessary to lubricate it with oil, but this is optional. Metal forms, as a rule, I lay with parchment paper. To do this, the inner surface is smeared with a thin layer of refined vegetable oil - it helps the paper stick and hold well. A circle of paper is placed at the bottom, the diameter of which is measured in advance. Well, the walls are just a cut (above the sides by a couple of centimeters) of baking paper, which is folded and inserted into the mold. We press the paper to the walls - thanks to the oil they stick and do not deform. We shift the chocolate biscuit dough into a mold, level it with a spoon or spatula and put it in the preheated oven at an average level. Let me remind you that I have a gas stove and heats only from below.


Bake a biscuit at 180 degrees for about 1 hour (the time depends on the characteristics of each oven). This time my cake was ready after 1 hour 10 minutes. Be sure to check the finished baked goods for a dry splinter - pierce with a wooden skewer or a toothpick in the highest place and, if it comes out dry, the cake is ready.


We remove the walls of the form and paper walls. The chocolate biscuit itself is completely cooled - it is best to do this on a wire rack (then the bottom will not get wet). In about 40 minutes (this is for those in a hurry), the baking will completely cool. If you transfer to the balcony, maybe even less ...


While we cool the chocolate base for the future Black Prince cake, we’ll deal with the filling. In a small saucepan or stewpan, put 250 grams of berries (if you have cherries with seeds, remove them), pour 70 grams of sugar and 1 tablespoon of corn starch.


We put everything on medium heat and, stirring, boil for 2-3 minutes after boiling. During the heat treatment, the berries will be given juice, the sugar will completely dissolve, and the starch will thicken and bind the liquid. After complete cooling, a thick jelly with whole berries will turn out.


When the chocolate sponge cake on kefir has completely cooled, it will need to be cut into 3 cakes. Since the cap is convex, it is advisable to cut it off (most conveniently with a knife-file), but a little - literally a couple of centimeters that stick out a lot. The biscuit itself is cut into 3 identical cakes. I do it this way: first, I make shallow cuts around the circumference with a saw blade, and then cut the biscuit with an ordinary thread. This time I decided to use a special string, but when working with it you need to have a couple more hands (I asked my husband to keep a biscuit, otherwise he constantly fidgeted).


Finally, prepare a sour cream, which consists of only 2 ingredients and is made simple. In a bowl for whipping we put 400 grams of fat sour cream - it should be cold. Add 80 grams of powdered sugar (if desired, you can take more or less). I recommend the use of powder, since even with prolonged whipping in cold sour cream, not all sugar crystals can dissolve. Just a few words about sour cream itself: for a cake the Black Prince, Paul Robson, Pancho and the like always always choose an exceptionally fatty product. I read on many culinary sites that, they say, lovers of all kinds of diets can easily use at least 10% sour cream if they are afraid of extra calories. No wrong! Low-fat sour cream will never be beaten in life, but will remain liquid yogurt (sugar will make it even thinner). Either the case is oily - it is whipped in an airy, light and relatively (not so much as to precipitate it with a pastry bag) stable cream.


Beat sour cream with powdered sugar mixer at the highest speed for about 10-12 minutes, until it increases in volume. Another reference point for the readiness of sour cream: it will have a relief, that is, from the corolla there will remain clear and fairly stable stains that do not float. In other recipes, the girls wrote in the comments that homemade sour cream instantly interrupted (in just a couple of minutes), turning into butter. That is why carefully monitor the whipping process if you have such a greasy product!


Getting to the assembly of the Black Prince chocolate cake. Put the bottom cake on a flat plate or dish. I put the cakes in the reverse order (that is, turning the biscuit over) so that the slightly convex top fits perfectly in the not perfectly flat dish. Generously grease it with sour cream. In general, it is important to calculate the amount of cream so that 2 layers of cake are enough for the layer, on the sides and top of the cake (there should not be too much cream on top).

At first it seemed to me that in all varieties of this dessert, cocoa powder is present in the composition. But she soon found improvisations from jam on the Internet, as well as variations for those who exclude flour, eggs, and even kefir from their diet.

Before preparing the “Black Prince” cake, I carefully studied all the proposed options and settled on the classic one. Its manufacture can conditionally be divided into four stages: kneading dough; bakery products; preparation of the filling and cream; assembly of the cake.

To make the biscuit perfect, the eggs must be fresh and clean, the flour is sifted and always of the highest grade. Make sure that sugar is well dissolved during the preparation of the dough.

Stage 1 ingredients:

  • the eggs  - 2 pcs.;
  • flour  - 400 g;
  • sugar  - 200 g;
  • kefir  - 200 g
  • sour cream  - 100 g;
  • cocoa powder  - 20-30 g;
  • soda  - 1 teaspoon;
  • juice from half a lemon.

  In order to prepare the dough, you need to combine kefir with sour cream in a bowl. Stir well and sprinkle soda on top (without stirring).

Break eggs into another container, add sugar and cocoa. Bring the mixture to a homogeneous consistency with a mixer.

Then we combine the contents of both bowls (egg and kefir mass), mix thoroughly and pour lemon juice there. Again we interfere.

At the end of the first stage of preparation of the Black Prince cake on kefir, we gradually add flour to the resulting mixture, while stirring the mass.

The second stage is baking cakes.  To do this, carefully shift the prepared dough onto the prepared baking sheets (forms) and put it in the preheated oven for 40 minutes.

Baked items must be set aside to cool. In the meantime, we proceed to the third stage.

Stage 3 ingredients:

  • sour cream  - 300 g (preferably with a high percentage of fat content);
  • sugar  - 200 g;
  • butter  - 100 g

  I chop the butter in a separate bowl, pour sour cream there and add sugar. I bring everything to a homogeneous mass with a mixer.

The filling for the Black Prince cake according to the classic recipe, as a rule, is made from berries. As for my taste, pitted cherries are best suited for this purpose. In the season I use fresh ones, but in the absence I manage to freeze. Kids like strawberry, raspberry.

The last stage is perhaps the most responsible.  To assemble all of our workpieces, you first need to carefully cut the cooled cakes in half in a horizontal direction with a sharp knife.

There are times when in the oven the middle of the cake begins to burn, and the edges are still damp, or in the middle “a hump grows”. You can fix these defects with the help of water, which is poured into empty baking sheets and put in the oven at the same time as cake. In this way, the temperature is regulated, preventing the formation of burnouts.


Then on each part below I take off a little crumb. I do so in order to tightly fill the resulting recesses with the filling.

I generously smear the berries with cream on top and set the cake aside for 15 minutes for impregnation. So doing with each part.

And then I spread the finished cakes on top of each other. At the top, I place the remaining crumb and pour plenty of cream on everything, including the sides of the Black Prince cake, as shown in the photo.
