Without wasting time, you need to sort through the cherries, discarding damaged fruits. Then the berries should be washed and the stalks should be torn off. Place the cherries in a sieve set over a bowl and strain.

A good, juicy cherry should yield about 400 ml of juice. If it is not enough, you will need to increase the number of berries.

Add cherry pomace to boiled sugar syrup and cook for 15 minutes. Then cool completely.

Squeeze the juice from half a lemon and strain. Cut the second half.

If necessary, cocktail cherries can be infused for a month. After the specified time, the soaked cherries are removed from the syrup and used for their intended purpose. The syrup that remains in the jars with the fruit can be used to soak the cakes and pour over the ice cream.

If cocktail cherries are prepared without alcohol, then the following ingredients are prepared for its production: one and a half glasses of water, half a glass of pomegranate juice, one hundred and five milliliters of lemon juice, one pinch of salt, one star anise, six hundred grams of cherries, one orange and a glass of granulated sugar.
