    Cake "Smetannik" is not only delicious, but also simple! This is one of my favorite homemade cakes. The cakes are tender, airy almost like a biscuit, and cooking is much easier. a set of products is very inexpensive, so the dessert itself turns out to be budgetary, which is why you can cook it at least every weekend, and if you decorate it, you get a festive option, for example, for a birthday. In this recipe, I propose to make it with custard and without the addition of poppy seeds and nuts. Be sure to try this recipe

    Cakes:

  • Sour cream - 300 ml
  • Eggs - 3 pcs.
  • Sugar - 1 tbsp.
  • Flour - 2-2.5 tbsp.
  • Soda slaked with vinegar - 1 tsp

Custard:

  • Milk - 500 ml
  • Egg - 1 pc.
  • Sugar - 1 tbsp.
  • Butter - 40 g
  • Flour - 4 tbsp. without a slide
  • Vanilla sugar - 1 pack


Recipe step by step:

In a deep bowl, beat the eggs with sugar until stiff foam or until the sugar dissolves.


  • We add flour.

  • And add slaked soda or baking powder.
    We mix with a spoon.

  • You should get a semi-liquid dough. It should not be very thick or very liquid, otherwise the cakes will be either dense or poorly baked.

    We will have 3 cakes and you can do it in two ways:
    bake one cake, and then cut it into 3
    bake each cake separately. Be sure to grease the form with oil and sprinkle with flour, and you can put parchment paper on the bottom.

    In fact, the second method is better, since the sour cream batter is baked for a long time and there is a risk of getting the cakes burnt from below, but not baked inside. Therefore, it is better to divide the dough into 3 parts and bake at 180C for 20-25 minutes.

    Well, I decided to make one large cake, and then cut it. It was baked for about 50-55 minutes at 180C.


  • When it cooled, I cut it lengthwise into 3 parts. Here's how porous it turned out.

  • Now let's prepare the custard.
    In a deep bowl, mix eggs, flour, sugar and vanilla sugar until smooth. If the mass is very thick, then add a little milk. The main thing is to break all the lumps of flour.

  • Pour in the milk and place on the stove over medium heat. Heat, stirring all the time so that it does not burn.

  • When it starts to boil, it will thicken very quickly. Cook, stirring constantly, until the desired thickness, but keep in mind that when the cream cools down, it will become a little thicker.

  • Turn off the heat and let cool slightly, then add the butter. The more oil you put, the tastier it will be, so you can put 100 g. Cover with a lid and wait until it cools completely and thickens, otherwise it will drain from the cake.

  • Well, now we grease each cake with custard, not forgetting to leave it on its sides.

  • I decorated the top and sides of the cake with chopped cake cuts, since the cake was humpbacked on top and I cut and chopped this swollen hump.
    Well, you can decorate with chopped nuts or something else.

    We give Smetannik soak for at least 3 hours, and it is even better to leave it overnight in the refrigerator.

    Cooking

    Beat one egg with 110 grams of sugar, add a little salt, one third of a teaspoon of soda, extinguish it with vinegar, add 110 grams of sour cream. Then, constantly stirring, add 110 grams of flour and introduce one hundred grams of finely chopped nuts.

    We spread the resulting mass in a form covered with parchment and bake in the oven for about twenty-five minutes at a temperature of 185 degrees. The first cake for the cake is ready.

    To prepare the second and third cakes, we do everything in the same way, only we replace the nuts, in the second case - with pre-steamed and squeezed raisins, and in the third - with poppy seeds.

    To prepare the cream, beat eggs with granulated sugar and a bag of vanilla sugar, add flour, three tablespoons of milk and mix. The resulting mixture is introduced little by little into warm milk, bring to a boil and boil until thickened. Cool slightly, add butter and beat until fluffy.     Now beat the condensed milk with softened butter until airy, coat the finished cakes with the resulting cream.     How to make cake with poppy seeds, raisins and nuts

    1. First you need to prepare the dough for the cake. We will have 3 cakes with different fillings: with poppy seeds, raisins and nuts. If you have three molds of the same size, you can knead the whole dough at once, divide it into 3 equal parts. If there is only one mold, then it is better to cook the dough separately in three steps so that the baking powder does not “overshoot” while all the cakes are baked in turn. I have one form, with a diameter of 23 centimeters. So I cook the dough 3 times. To do this, I drive 1 egg into a bowl, add 0.5 tbsp. sugar and 0.5 tbsp. sour cream (glass = 200 g). I mix everything with a spoon.

    2. I add 0.5 tbsp. sifted flour mixed with 1 tsp. baking powder. I mix everything again with a spoon (there is no need to use a mixer, everything connects perfectly).

    3. Then I add 0.5 tbsp. poppy, mix. The dough for the first cake is ready. It is similar in texture to thick sour cream.

    4. Lubricate the form with vegetable oil and pour the dough into it. I send it to the oven preheated to 180 degrees for 20 minutes.

    5. Similarly, I cook the dough with nuts - instead of poppy seeds, I add chopped nuts in a blender.

    6. In the third batch I put raisins in the dough.

    7. The result will be 3 cakes - each about 3 centimeters high.

    8. While they are cooling, I prepare the cream: I mix sour cream and sugar, rub it with a spoon and put it in the refrigerator for 15 minutes so that it thickens slightly. I coat the cakes with sour cream.

    9. Topped with chocolate icing. To prepare the glaze, I combine milk, sugar and cocoa in a saucepan, and then bring the mixture to a density, stirring constantly. Remove from heat and add butter, mix thoroughly again. When the icing has cooled, cover the top and sides of the cake. If there is no time or desire to cook the icing, you can grease the top of the cake with the same sour cream that was used to impregnate the skin.
    10. It remains to decorate the cake and put it in the refrigerator to soak for 2-3 hours, and even better at night. For decoration, I chose nuts and coconut flakes. You can decorate however you like, such as sprinkled with cookie crumbs or poppy seeds.
