If you are a baking aficionado and love cupcakes, but they seem dry to you, jam muffins are a great option for you. These muffins are no more difficult to bake than regular muffins. But at the same time, the filling gives a different flavor to the uniform sweetness of this dessert. And of course, you can make a little surprise for your friends without telling them that there will be unusual muffins for dessert. We give you our word, your friends will be very surprised to find a liquid filling in fragrant cupcakes!

Ingredients:

  • Eggs - 3 pcs.
  • Sugar - 1 cup (about 250 gr.).
  • Butter - 300 gr. (one and a half packs).
  • Vanillin - 1.5 sachets.
  • Flour - 300 gr.
  • Baking powder - 1 table spoon.
  • Jam (preferably sour, and slightly liquid) - 200 gr.

Some of the jam will go directly into the filling, and some at the end you can pour the finished cupcakes on top, but you can decorate them as you wish. For example, you can simply sprinkle with powdered sugar.

  • Toppings and decorations to taste (this can be, for example, chocolate or coconut flakes, powdered sugar or cinnamon).

Dessert recipe:

  1. We put the oven on heating at 180 degrees. We prepare a baking dish - grease it with oil, or insert disposable paper molds into the mold.
  2. Cream butter warmed to room temperature with sugar until white.
  3. Then add all three eggs one at a time to the oil mixture and mix thoroughly.
  4. Add vanillin to the mass and stir again so that the vanillin is completely dispersed.
  5. In a separate bowl, mix the pre-sifted flour and baking powder (remember, you can always replace the baking powder with slaked soda, but then the soda will need to be kneaded into the oil mixture before the flour).
  6. We mix the butter-egg mass and flour, but without diligence (it's okay if lumps remain in the mass - they will disperse during baking). You should have a fairly thick dough, but if it's runny, add a little more flour.
  7. We put about a tablespoon of dough without a hill into muffin molds and lightly tamp it down so that a small indentation is made in the dough.
  8. With a teaspoon, carefully distribute the jam into the recesses, trying not to glass it to the edges of the mold.
  9. After that, put another tablespoon or a little more dough on top. We begin to lay it out from the edges so that the jam does not leak out to them.
  10. When all future muffins with jam are “packed”, we send the form to the oven for 20 minutes. After this time, turn off the oven, but do not get the cupcakes. We leave the oven ajar and let our pastries cool in the oven.
  11. Remove the pan from the oven and carefully remove the muffins from it. Try to be extremely careful so that the pastries do not wrinkle and the jam does not leak out in the process of transferring to a serving dish - this will spoil the whole surprise!
  12. Decorate the muffins to your liking. A very beautiful combination will turn out if you sprinkle the cupcakes with powdered sugar, and pour a thin stream of the same jam on top as inside.

Delicious dessert is ready! However, the jam may be too thin for such baking. But don't be discouraged, because even if it leaks out, it won't spoil the taste of these cupcakes. For those who want a topping guaranteed to be hidden inside, we offer another version of the recipe - muffins with jam.

  • Eggs - 2 pcs.
  • Sugar - 150g.
  • Vegetable oil (odorless) - 100 ml.
  • Kefir or natural yogurt - 200 ml.
  • Flour - 400 gr.
  • Baking powder - 1 table. the spoon.
  • Jam (any) - 50-100 gr.

Recipe:

  1. Turn on the oven to heat up to 200 degrees. We prepare the form in the same way as in the previous recipe.
  2. Mix eggs and kefir until smooth, without beating. Add vegetable oil to the mixture and mix again.
  3. In another bowl, sift flour and baking powder. Add sugar and mix.
  4. Add the dry mixture to the kefir-egg mass and mix, not worrying too much about lumps. The dough should be quite thick.
  5. We spread a little dough on each of the molds, making indentations in the dough for jam.
  6. Now we put a little jam in each recess.
  7. Put another piece of dough on top to close the jam. We spread the dough from the edges, gradually closing the jam and making sure that it does not squeeze out to the edges of the molds.
  8. After that, we send future muffins with jam to bake in the oven for 20-25 minutes.

Muffins and cupcakes are fast pastries. When "guests are on the doorstep", you can bake them.

Jam muffins, the recipe of which I want to offer, are very soft and tender. You can take any jam, preferably with sourness: it will pleasantly shade the sweetness of the dough. I had blueberry.

To prepare muffins with blueberry jam, we will prepare the products according to the list.

Whisk eggs with sour cream. Then add sunflower oil and whisk again.

Mix flour with salt, sugar, vanilla, baking powder and soda. Add to sour cream mixture.

Mix lightly. We are not zealous, otherwise we will get something rubbery at the output. It will take literally 3 movements with a whisk. The mass will turn out to be quite lumpy. This is clearly visible in the photo.

We spread the dough into molds (I use paper liners). For dough - 1 tsp. jam.

Put the dough on top of the jam. We bake muffins with jam in an oven preheated to 190 degrees for 20-25 minutes. Focus on your oven.

Check the degree of readiness with a toothpick, skewer or match. If you see wet dough on the match, then the cake with jam is not baked enough. Let the finished cake rest a little and transfer it to the wire rack. Warm the orange jam and brush on the cake.

Cupcakes stuffed with jam

This is a fairly simple recipe for small cupcakes with a jam center. Ingredients:

  • 150 g of wheat flour of the highest grade;
  • 100 g of sugar;
  • a bag of vanilla sugar;
  • a teaspoon of baking powder;
  • half a teaspoon of salt;
  • three chicken eggs;
  • 150 ml of milk;
  • a third of a glass of butter (melt);
  • a teaspoon of lemon peel;
  • 200 g jam.

In a bowl or saucepan, mix sugar, baking powder, salt and flour, vanilla sugar. In another bowl, beat the eggs and milk, pour in the oil and add the zest. Combine the two mixtures together and mix well to get a smooth dough. Put a tablespoon of dough into prepared molds and spread evenly. Place a teaspoon of jam in the center of each mold. Place another tablespoon of batter on top of the jam. Bake cupcakes with jam inside for at least 20 minutes in the oven. It must be preheated to 200 degrees.

Cake with jam on sour cream

Ingredients:

  • two large chicken eggs;
  • three fourth cups of sugar;
  • 70 g butter;
  • one and a half glasses of flour;
  • 100 g sour cream;
  • 150 g of kefir;
  • a teaspoon of baking powder;
  • any thick jam of your choice.

It's inside. Melt the butter and let it cool down. Beat the eggs well with a mixer until the volume of the mass increases by 3 times. Add sugar little by little and continue beating. Gradually add kefir and sour cream to the oil. Mix flour, baking powder and sift through a sieve. Add flour little by little and continue beating. As a result, you will get a thick dough, like sour cream. Put half a tablespoon of dough into paper or silicone cupcake liners. In the middle, add a teaspoon of thick jam, and again put a spoonful of dough on top. Preheat the oven to 180 degrees and bake until done.

Biscuit cake "Victoria" with strawberry jam

For test:

  • 200 g of sugar;
  • 200 g of softened butter;
  • 4 beaten chicken eggs;
  • 200 g flour with a teaspoon of baking powder;
  • two tablespoons of milk.
For filling:
  • 100 g of softened butter;
  • 140 g of powdered sugar;
  • vanilla extract;
  • 200 g strawberry jam.

Preheat the oven to 190 degrees. In a large bowl, beat all the cake ingredients together until you get a smooth, soft dough. Divide the mixture between the molds and smooth the surface with a spatula or the back of a spoon. Bake for about 20 minutes until golden brown and the cake springs back when pressed.

Invert the finished cake onto a wire rack and let it cool completely.

To make the filling, beat the butter until smooth, then gradually beat in the powdered sugar and vanilla.

Spread one of the biscuits with cream, and on top with jam and cover with a second biscuit. Sprinkle with powdered sugar.

Ingredients:

  • 100 g of semolina;
  • 100 g of good flour;
  • one egg;
  • 75 g of powdered sugar;
  • 70 ml vegetable oil;
  • half a glass of milk;
  • half a teaspoon of baking powder;
  • 6 spoons of tea jam.

Separately, we mix all dry products, and separately - all liquid ones, which we beat.

Pour the liquid part into the flour and mix. We will get a dough that is not too thick.

Pour a tablespoon of dough into the molds, then a teaspoon of jam, then again the dough. Bake for half an hour at 185 degrees until golden brown.

Cottage cheese muffins with jam

Ingredients:

  • very soft cottage cheese - 150 g;
  • two tablespoons of mascarpone;
  • 100 g butter;
  • 150 g of granulated sugar;
  • 2 large chicken eggs;
  • a teaspoon of baking powder for dough;
  • a bag of vanilla sugar;
  • 4 table spoons of jam or marmalade;
  • a couple of tablespoons of powdered sugar;
  • silicone or paper cupcake molds.

Knead the cottage cheese with a fork, and mix the flour with the baking powder. Cut the butter into pieces and melt over low heat. Beat eggs with sugar and vanilla, then put the egg mixture with mascarpone and mix until smooth. If the cottage cheese is not soft enough, you can rub it through a sieve. Now add the melted butter and flour to the bulk, mix well and end up with a fairly dense dough. We put the dough in the molds, then a little jam and add the dough again on top. Try to fill the molds by 2/3, otherwise the dough will "run away". We cook cupcakes in the oven, heated to 180 degrees for about half an hour. When the cupcakes are browned, take out, cool a little and sprinkle with powder on top.

Cupcakes with jam- tender and soft, very successful pastries for home tea drinking. For making cupcakes, I used lemon jam with pieces of zest, it turned out very tasty and fragrant. Such cupcakes can be prepared with any thick jam or jam, to your taste, but keep in mind that cupcakes will also turn out dark from dark jam. From the indicated amount of ingredients, I got eight small cupcakes.

Ingredients

To make cupcakes with jam you will need:

60 g soft butter;

100 g sugar*;

130 g flour;

1 tsp baking powder;

150 ml thick lemon (or other) jam;

50 ml milk.

*the amount of sugar can be more or less depending on how sweet the jam is used.

Cooking steps

Divide the batter between the baking sheets, filling them 2/3 full. Put in an oven preheated to 180 degrees for 25-30 minutes.

Transfer the finished muffins with jam to a wire rack and cool. If desired, cupcakes can be sprinkled with powdered sugar, covered with icing or cream.
