Jam muffins, the recipe of which I want to offer, are very soft and tender. You can take any jam, preferably with sourness: it will pleasantly shade the sweetness of the dough. I had blueberry.
To prepare muffins with blueberry jam, we will prepare the products according to the list.
Whisk eggs with sour cream. Then add sunflower oil and whisk again.
Mix flour with salt, sugar, vanilla, baking powder and soda. Add to sour cream mixture.
Mix lightly. We are not zealous, otherwise we will get something rubbery at the output. It will take literally 3 movements with a whisk. The mass will turn out to be quite lumpy. This is clearly visible in the photo.
We spread the dough into molds (I use paper liners). For dough - 1 tsp. jam.
Put the dough on top of the jam. We bake muffins with jam in an oven preheated to 190 degrees for 20-25 minutes. Focus on your oven.

Preheat the oven to 190 degrees. In a large bowl, beat all the cake ingredients together until you get a smooth, soft dough. Divide the mixture between the molds and smooth the surface with a spatula or the back of a spoon. Bake for about 20 minutes until golden brown and the cake springs back when pressed.
Invert the finished cake onto a wire rack and let it cool completely.
To make the filling, beat the butter until smooth, then gradually beat in the powdered sugar and vanilla.
Spread one of the biscuits with cream, and on top with jam and cover with a second biscuit. Sprinkle with powdered sugar.

Now add the melted butter and flour to the bulk, mix well and end up with a fairly dense dough. We put the dough in the molds, then a little jam and add the dough again on top. Try to fill the molds by 2/3, otherwise the dough will "run away". We cook cupcakes in the oven, heated to 180 degrees for about half an hour. When the cupcakes are browned, take out, cool a little and sprinkle with powder on top.
Cupcakes with jam- tender and soft, very successful pastries for home tea drinking. For making cupcakes, I used lemon jam with pieces of zest, it turned out very tasty and fragrant. Such cupcakes can be prepared with any thick jam or jam, to your taste, but keep in mind that cupcakes will also turn out dark from dark jam. From the indicated amount of ingredients, I got eight small cupcakes.
To make cupcakes with jam you will need:
60 g soft butter;
100 g sugar*;
130 g flour;
1 tsp baking powder;
150 ml thick lemon (or other) jam;
50 ml milk.
*the amount of sugar can be more or less depending on how sweet the jam is used.
Divide the batter between the baking sheets, filling them 2/3 full. Put in an oven preheated to 180 degrees for 25-30 minutes.
Transfer the finished muffins with jam to a wire rack and cool. If desired, cupcakes can be sprinkled with powdered sugar, covered with icing or cream.
