Everyone gathers for my niece's birthday: grandparents, aunts, uncles, cousins, cousins ​​and other relatives. For them, there is no birthday without a cake, because it cannot be so simple. People of tradition, you know. In general, urgently and desperately need a cake.

And now BUT are starting to emerge. The first “but”: I personally don’t need a store-bought margarine cake with a bunch of additives. The second "but": I have absolutely no time to bake ... I'll have to compromise and make another "lazy" cake without baking. For example, oatmeal cake with curd cream.

For the no-bake oatmeal cake, we need:

  • 800 grams of oatmeal cookies;
  • 500 grams of 9% cottage cheese;
  • 1 cup of sugar;
  • 175 grams of butter;
  • 4 tbsp oatmeal;
  • 2 tbsp cocoa;
  • 2 tbsp raisins (optional)

To start the process, lay out oatmeal cookies around the perimeter of our future lazy cake. And the tighter the better.

In fact, you can do this on a regular tray wrapped in foil. But I'm a well-known coward and reinsurer when it comes to cakes. Therefore, until the very last stage, I did everything in the form, just in case ...

Now put aside 25 grams of butter and 1 tablespoon of sugar. This is for later.

Now is the time for cream cheese. For it, we need to beat butter, cottage cheese and sugar in a mixer or blender, and then divide the resulting mass into two parts. Add cocoa to one part, raisins to the other (if we have one).

We cover the cookies with one of the two options for curd cream. I started with white.

Let's spread the cookies again...

... which we cover with the second type of cream.

For the third and last time, lay out a layer of cookies and spread all the rest of the cream more or less evenly on top.

And now we remember our little “stash” :)) We heat the oil in a frying pan, pour oatmeal into it, and a spoonful of sugar there. And fry it all until golden brown.

It remains to wait for the flakes to cool, and sprinkle them on the top and sides of our wonderful cake. Now it is vital for him to spend two hours in the refrigerator, at least. Can be longer.

Cooking method:

1. Sugar is placed in a deep plate and mixed with chicken eggs. Using a mixer or whisk, beat the mass until a thick foam is formed.

2. Add oatmeal to sweet egg foam and beat thoroughly.

3. Flour is introduced into the prepared dough in small portions. Continuous stirring will help to avoid the formation of lumps. If the house has a mixer, you can leave it on, and add all the ingredients during its operation.

4. At the end of cooking, the dough must be salted.

5. Lubricate the pan with a sponge soaked in sunflower oil, pour 2/3 of the dough, and then spread it evenly over the surface of the berries. The rest of the dough is poured over the filling.

6. The cake is placed in the oven, after making sure that the temperature reaches 200 degrees. Bake the base for the cake for about 40 minutes. The cake must be baked, and the berries should sink to the bottom of the mold.

7. The finished cake is laid out on a flat dish. First, it should be carefully separated from the edges of the mold with a sharp knife or a metal spatula.

8. The surface of the finished cake should be saturated with berry juice. It is decorated with whipped cream or thick sweet cottage cheese.

Ingredients (4 servings):

  • Sugar - 1 cup

  • Wheat flour "Uvelka" - 70 g

Cooking:

1. Separate the egg whites from the yolks.

4. Whisk the whites until stiff, adding the remaining sugar, then combine with the beaten yolks.

5. In the resulting mass, with continuous beating, add flour and oatmeal (leave some of the flakes for decoration). Put the finished mass into a greased form and bake at 240-250 ° C.

6. Release the finished cake from the mold, cool, cut into two layers and glue with jam. Decorate the surface with jam or cream and sprinkle with the remaining oatmeal, which can be mixed with chopped nuts.

Bean cake with chestnut cream

Cooking time: 1 hour 10 minutes

Ingredients (4 servings):

  • White beans "Uvelka"- 1 glass
  • Eggs - 3 pcs
  • Sugar - 2/3 cup
  • Vanilla sugar - 1 teaspoon
  • Breadcrumbs - 3 tbsp. spoons
  • Cognac - 1 tbsp. the spoon
  • Chestnut - 200 g
  • Honey - 100 g
  • Egg yolks - 1 pc.
  • Sour cream - 100 g
  • Butter - 60 g
  • Vanilla sugar - 1 teaspoon

Cooking:

1. Boil beans until tender and pass through a meat grinder. Separate the egg yolks from the proteins, mix with half the sugar and vanilla sugar, rub until foamy, then mix with the beans. Add cognac, breadcrumbs, mix.

2. Beat the egg whites, gradually adding the remaining sugar, until a stable foam, then fold into the bean mass.

3. Transfer the prepared dough to a greased mold and bake for 45-50 minutes at 210 ° C.

4. For cream: Peel chestnuts and boil until tender, then rub hot through a sieve or pass through a meat grinder. Add egg yolk, honey and sour cream, beat. Beat butter with vanilla sugar and mix with chestnut mass.

5. Cut the bean biscuit into 2-3 cakes, grease them with the prepared cream and lay one on top of the other.

Ingredients:

Let's prepare the products for the cream: we separate the protein from the yolk (leave the protein for the cake), measure the right amount of milk, weigh the starch.
We put 200 ml of milk on medium heat, add stevia and vanillin.
In the remaining part (50 ml), add the yolk and starch, mix thoroughly with a fork until the lumps disappear.
As soon as the milk warms up, reduce the heat to a slow one and, stirring, pour in the mixture with the yolk.
It is very convenient to mix the cream with a whisk - with intensive stirring, it covers a large area of ​​\u200b\u200bthe bottom and at the same time breaks lumps if they have time to form.
Cook the cream until completely thickened.
The resulting cream must be cooled. If the cream burnt during cooking, then it is better to continue cooking it in another container.

Separate the yolks from the whites. We take the amount of oat bran you need (you can grind it). We mix.
Add starch, stevia and baking powder to the dough. Mix thoroughly until the lumps disappear.
Beat egg whites and stevia until stiff peaks.
At this stage, we need to introduce whipped protein into the dough in several stages.
We spread the dough in a baking dish (we have silicone) and gently level it. We send the form to the oven for about 20 minutes. (The cake rises a lot during baking)
At the end of baking, open the oven slightly and leave the mold in the oven for 10 minutes.
Remove the cake from the mold and cool on a wire rack. After cooling completely, cut the cake into 2 halves.
At the final stage, we collect the cake: cake - cream - cake - cream. Gently spread the cream over the entire surface of the cake and carefully coat the edges. It is very important not to press on the cakes when assembling! If suddenly your cream turned out to be liquid, most likely due to non-compliance with the proportions of milk / starch, then it is better to collect the cake in the form.
We send the finished cake to the refrigerator for at least an hour, and a maximum - as far as patience is enough
