  1. Mix the whole portion of flour with salt. Add cold butter, grated on a coarse grater. So that the oil chips do not stick together in large lumps, periodically mix with flour.
  2. When all the oil has been added, grind the contents of the bowl into crumbs.
  3. Add chilled milk and collect the flour mixture into a single lump. It is not necessary to knead the dough for a long time.
  4. We roll out most of the dough on a floured table into a circle 3-5 mm thick. Having wrapped it on a rolling pin, we transfer it to a mold with a diameter of 22 cm. We tamp the layer along the bottom, press the sides against the walls.

  5. We heat the pan with vegetable oil, add the garlic, peeled and crushed with the flat side of the knife. Fry for 30-60 seconds, saturating the oil with aroma.
  6. We wash the spinach thoroughly, cut the leaves into thin strips. We spread it to the oil with the aroma of garlic (we remove the dehydrated garlic cloves beforehand). Simmer the spinach over low heat, covered, for 5 minutes (if using frozen spinach, keep the lid off to allow the moisture to evaporate). Finely chop the green onion and dill and add to the spinach. We mix the greens, warm up literally 1-2 minutes. Then remove from fire, cool.
  7. We crumble the cheese with our hands into small lumps or cut it finely, add it to the cooled greens. We mix and taste the filling for salt (usually additional salting is not required, since feta initially has a salty taste).
  8. We drive in a fresh egg to the cheese-spinach mixture, stir thoroughly.
  9. We spread the filling in the form with the dough, distributing it evenly.
  10. Roll out the rest of the dough into a round layer, transfer to the surface of the pie. We glue the edges, bending the sides to the filling. We make a cross-shaped cut in the center to let the steam out.
  11. Lightly beat the egg, grease the top layer of the dough. Sprinkle with sesame seeds if desired.
  12. Bake in an oven preheated to 190 degrees for 30-40 minutes (until the dough is noticeably browned).
  13. Cool until warm, and then serve the spinach and cheese pie.

How to prepare the stuffing

1. Remove the frozen spinach from the refrigerator and let it thaw. Unlike dough, you can use the microwave to defrost it. If the spinach is fresh, pour boiling water over it and let the water drain. Then chop finely.

2. Chop the onion finely.

3. Throw a piece of butter and onion into a preheated pan, add basil and rosemary. When the onion turns golden, add the spinach to it. Hold them together in a pan for literally 2 minutes and remove. Drain the onion-spinach mixture in a colander to drain off the oil and excess liquid. Then add one raw egg and mix. Pepper to taste.

4. Grate hard cheese. Any will do, but it is better if the cheese is not bland. In general, maintain a salt balance between cheeses. If you have very salty feta, hard cheese should be unsalted, and vice versa.

5. Break the feta into pieces. If you use cheese, do the same with it - do not cut it, but break it.

6. Toss cheeses and spinach with onions. The filling for the spinach and puff pastry pie is ready.

Instead of feta, you can safely use cheese. Actually, for the rest, you can repeat the method of preparing the filling No. 1. But you can do it differently.

  • Spinach can not be fried, but simply thawed and allowed to drain excess moisture. If you have fresh spinach, boil it for 2-3 minutes, then drain it in a colander and chop finely.

  • Give up hard cheese altogether and use cottage cheese as an addition to cheese, in equal proportions with it.

Mix cheese, cottage cheese, spinach (without onions) and add finely chopped dill to them. Crack one raw egg and stir. This version of the filling is cheaper. The taste of the pie will not be worse - just different. Try and choose your option.

Collecting the snail

1. Take puff pastry in rolls and let it thaw naturally. Flatten the dough, sprinkle with a little flour.
