Ingredients:

  • flour - 250-300 g;
  • vegetable oil (refined) - 50 ml;
  • water - 50 ml;
  • poppy - 1 tbsp. l;
  • jam (apple or other) - 70-100 g;
  • salt - 1/5 tsp

Cooking:

We must sift the highest grade wheat flour - pour it directly onto the countertop in a slide or into a deep bowl. Throw a pinch of salt, mix the dry ingredients.

In a separate container, we combine refined oil of any kind and very cold, almost ice water. It is easy to remember that water and oil for this type of lean dough (also known as "Swiss") are taken in equal doses.

Beat the chilled liquid for a couple of minutes - bring to a cloudy, whitish hue.


Pour the water-oil solution to the sifted flour and proceed to kneading by hand. The longer we knead the mass, the more layered the products (flour shell) are in the end.

We bring the dough to a soft, plastic and tender consistency.

Immediately, without taking a break for proofing / rest, we roll out the unleavened dough on a surface “powdered” with flour - it is enough to stretch the layer 2-3 mm thick. We cut out approximately the same rectangles (size 10 by 8 cm). In the center of each blank, lay out a tablespoon with a hill of thick filling, in our example, this is apple jam.


We turn the tubes, completely hiding the filling.
