Pumpkin wash and dry. We need to make puree out of it. There are two options for this. The first is to boil it in a saucepan until softened. And the second - to bake in the oven.

In my opinion - it is preferable to bake it in the oven. And so I choose this option.

Pumpkin cut across into two equal parts. Remove with the help of a tablespoon all the seeds and loose center.

Dough. Oil get in advance from the refrigerator. By the time the dough is prepared, it should be at room temperature.

Sift the flour through a sieve and add salt.

Put the butter in the flour and mix everything in the crumb.

Mix eggs with water using a fork. In the original American recipe only yolk is added. I tried to cook the dough with one yolk, and with a whole egg - I did not notice a significant difference. Therefore, now I cook with a whole egg, and do not suffer where to put the protein.

Mix flour with butter and egg mixture. Knead the elastic soft dough. It should not stick to hands and to the table. Form a ball.

Put the dough in cellophane and refrigerate for 30 minutes. After a set time, we take it out and let it lie at room temperature for about 15 minutes.

When the time allotted for stewing pumpkin is over, we shift it to the blender bowl and grind it in mashed potatoes. All at once do not lay out, so that it is easier to grind, and that the puree turned out to be uniform and without lumps.

We will need 2 full glasses of mashed potatoes. According to the recipe, we take 1.4 kg of pumpkin seeds cleared from seeds. That should be enough. But I usually reinsure myself, and take two kilograms of pumpkin. From this amount it turns out about three glasses.

The remaining puree can be eaten, it is very tasty. And you can cook something interesting from it, for example, some tasty snack with cheese, or something else.

Sugar mixed with spices. Sugar in the original American recipe is added brown. But I did not specifically buy brown sugar for this, and added the usual - white.

I already had milled ginger and cinnamon, but the buds of cloves had to be ground in a mortar, as in the good old days. I used 15 buds, it gave just a quarter of a tablespoon of ground cloves.

In the sugar, along with spices, add seeds from the vanilla pod. The pod should be cut lengthwise, and carefully remove all the seeds with a knife. If the pod is already dry, then it is already useless, it will not give a smell. This is better to throw immediately. In this case, you can add vanilla concentrate. Well, or you can not add anything. It is enough spices, and the flavor will be very strong!

Filling. In a large bowl, beat two eggs with a whisk.

Add two glasses of pumpkin puree and sugar mixed with spices.

All mix until smooth. Because of the spices, the bright orange flesh of the pumpkin became brownish in color.

As can be seen in the photo, there is still quite a lot of space left up to the edge. So it is necessary. In the process of cooking the filling will be higher, and the sides will remain completely small.

The oven is heated to 220 degrees. Then put in it a baking sheet with a pie for exactly 15 minutes.

Then reduce the temperature to 175 degrees. At this temperature, bake the cake until done. He baked me 50 minutes. But try it on readiness after 40 minutes. Willingness is checked with a toothpick, if there is no liquid filling left when piercing it, then the cake is completely ready.

Drain the water, mash the pumpkin in a blender, and, if necessary, rub through a sieve for a more uniform consistency. Allow to cool slightly.

Preheat oven to 180-190 degrees. Roll out the dough for pumpkin pie into a 2.5-3 mm thick layer on the surface covered with flour. Place it in the form, align the edges, chop with a fork. (As for the form, I have a metal one, and I do not lubricate it, the dough contains a sufficient amount of butter and the finished cake always moves away from the edges easily.) Put parchment paper with a load over the dough, you can use any cereal, I have white beans. Bake for 12-15 minutes.
