  • 1 onion head.
  • 3-4 cloves of garlic.

  • 1 tsp salt
  • 100 grams of mayonnaise (I have 67%)
  • black pepper (or a mixture of peppers) to taste

For this we took one kilogram of chicken fillet. Cut it into thin long pieces. I ended up with pieces about 5 - 8 mm thick. and a width of 8 - 10 mm. the entire length of the fillet. Coarser cut is worth it, they will not be dry, and will quickly marinate.

Our marinade is very simple. No special spices are needed, there are ingredients in every kitchen. I started marinating with my favorite pepper mix, which you can substitute for regular black pepper. Add to your liking, this is someone who loves it.

Then I salted the prepared chicken breast, for this I used one teaspoon of finely ground iodized salt, I buy it for a salt shaker. You can salt it with ordinary rock salt, but no more than a teaspoon. Add about 100 grams of mayonnaise and mix everything well and leave to marinate for two hours. I use store mayonnaise, 67%. But you can, at your discretion, even a store, but even a home one.

After our kebab has stood in the marinade, perhaps the most laborious part of the work begins, namely, stringing the kebab onto skewers. We take the most ordinary skewers. There are long wooden skewers, and there are short ones. So I took the short ones.

We take a skewer in one hand, and a thin piece of chicken breast in the other. We string with wave-like movements, as shown in the photo. I managed to get out of the meat after one centimeter, the skewer pierced the meat again. It is necessary to make uniform waves so that the meat is evenly fried. I got 22 skewers for one kilogram of meat.

Here the reader may argue that the recipe is promised in the oven. But do not rush to condemn me, but read on. In a frying pan, we will not fry until fully cooked, but only so that the meat is slightly browned. And to be more precise, so that it becomes covered with a crust, which then will not allow moisture to evaporate from our kebab.

As you may have guessed, fry in a pan until light golden brown on both sides. Again, everything is clearly visible in the photograph. I fry in ordinary sunflower oil, although I tried it with fat. And so it turns out so delicious.

After frying, I put the kebab on skewers on a narrow baking sheet, it turns out that the kebab hangs in the air, as it should be cooked. But this is not a prerequisite, the godfather cooked on a wide baking sheet, and his meat lay right on it.

While frying meat in a pan, I turned on the oven to warm up. When I finished frying, the oven warmed up to 200 degrees. I put it in a preheated oven for 7 to 10 minutes. Look what I got.

It is not only beautiful, it is also very tasty. You can, of course, bring it to readiness in a frying pan, but in the last 7 minutes of cooking, all the oil drips from the kebab, and the resulting crust in the pan prevents the juice from draining, and the kebab turns out to be soft and juicy.

But be prepared for a little smoke in the apartment, or turn on the hood. When I put the meat in the oven, oil began to drain into the baking sheet, and as a result, it began to burn out. But for me this was not a problem, quite the contrary. The meat was cooked like a real barbecue, with a slight smoke. And you could, of course, wait for the oil to drain from the meat, or dry it with a paper towel, and only then send it to the oven.

I only used a mixture of peppers for cooking, you can add spices for the chicken. But I would not recommend it, this recipe makes a very tasty chicken fillet shish kebab on skewers. If you just cook in the oven, which is possible, then the main thing is not to miss the moment when you need to get the meat.
