This is the kind of pumpkin that is sold in supermarkets, while at the market they can also sell you pumpkin of forage varieties. Regarding chicken, I would like to add that for baking you can take one or another part of it or even the whole carcass. Today I want to show you how to deliciously and quickly bake chicken thighs in the oven in a spicy marinade with spices.
This marinade is also suitable for baking a whole chicken carcass, but to ensure that it is perfectly cooked, I recommend using a baking bag. Pumpkin can be placed both in the middle of the chicken carcass and around it. In addition to chicken, I only used onions from vegetables, but you can add potatoes, carrots, prunes, mushrooms, dried apricots, bell peppers, and grated cheese to the dish.
Ingredients:
Any parts of the chicken for baking that you choose should be checked for feathers, and then be sure to rinse with cold water. Before marinating, it is advisable to pat the meat dry with napkins or a paper towel. It is advisable to cut whole chicken legs, consisting of thigh and drumstick, into two parts at the joint. Today I will bake chicken thighs with pumpkin.
Peel a piece of pumpkin and remove seeds. Cut the pumpkin pulp into cubes approximately 2 by 2 cm in size.
Peel the onion and cut it into rings. Cut the onion rings in half. And in half again. The end result should be quarter rings.
Let's move on to the next stage - preparing the marinade. To do this, pour sunflower oil into a bowl.
Add spices.
There are no strict rules for choosing them for marinating chicken. You can buy ready-made chicken or chicken spices, or mix your favorite spices. Pour in balsamic vinegar, but do not confuse it with plain grape vinegar. If you don't have it, then replace it with a teaspoon of honey.
Peel the garlic into the chicken marinade and squeeze it through a press.
Pour in apple cider vinegar.
Add salt.

Pour the resulting spicy marinade with vegetable oil, vinegar and spices over the chicken legs (drums, wings or breast). At the same time, leave a little marinade for pickling vegetables. Use your hands to coat the chicken pieces with the marinade until they are completely coated. Combine pumpkin and onion in a bowl. Pour marinade over them. Stir.
Place chicken thighs in a baking dish.
Place pickled vegetables around them.
Heat the oven to 180C. At this temperature, vegetables should be baked in the oven for at least 35 minutes. During baking, chicken and vegetables must be watered with the juice formed at the bottom of the pan. Make sure the chicken is done by piercing it with the point of a knife. If clear juice appears instead of blood, it means it is already well baked and you can safely remove it from the oven.
The bird goes well with various additives. One of the unusual options is chicken with pumpkin in the oven. You can prepare the dish in a special baking bag, or you can use portioned pots. But the most spectacular option is pumpkin stuffed with chicken.

It needs to be cut with a knife and taken out using the same spoon. You need to be careful not to pierce the pumpkin all the way through, otherwise the juice will leak out through this hole.
As a result, the pumpkin will look like a pot. It is necessary to salt the walls from the inside and lubricate them with vegetable oil.
Wash the tomatoes, cut them into halves, chop the onion into thin half rings. We clean the bell pepper from seeds and cut it into fairly wide strips. Chop the garlic and fresh herbs.
Place a layer of onion at the bottom of the pumpkin pot, then add fried chicken, tomatoes and peppers. Sprinkle with salt, fresh herbs and garlic. Alternate layers of chicken and vegetables until the squash pot is full. You need to act carefully so as not to damage the walls of the pumpkin.
Spread two large strips of foil on a baking sheet, placing them crosswise. Place the stuffed pumpkin in the center. Pour the oil in which the chicken was fried into the pumpkin. Cover the pumpkin pot with a lid and wrap the pumpkin in foil, squeezing tightly. The pumpkin tail should also be wrapped in foil to prevent it from burning. Bake at 160 degrees for about 2 hours. To make sure the pumpkin is ready, you can try to pierce the top of the fruit with a toothpick. If the stick easily enters the pulp, it is ready.
Carefully remove the pumpkin from the oven and unwrap it. You need to act carefully, as you can get burned by the steam and juice. The dish can be served hot or cold.
Make the marinade: mix soy sauce, vegetable oil, mustard, spices, sugar. Rub the drumsticks with salt, then with marinade.
Cut the pumpkin and potatoes into cubes or slices. Chop the onion into half rings, pass the garlic through a press or cut into small cubes. Place in a bowl, pour over the remaining marinade and stir. You can mix vegetables and chicken. Leave for an hour or more.
