  • Beetroot cocktail with cottage cheese and salmon. Boil 1 beet, peel it and chop it coarsely. Dilute 1.5 tbsp in water. spoons of gelatin. Rub 150 g of cottage cheese through a sieve, add 2 tbsp. spoons of sour cream. Whip 100 ml of very heavy cream, add grated orange zest (1 tsp is enough) and a mixture of 2 tbsp. spoons of orange and lemon juice (one of each). Beat everything in a blender until liquid, and briefly place the gelatin in the microwave, then carefully add it into the snack. Mix everything, pour the mixture into glasses. Make roses from thin slices of salmon and decorate each glass with them.

Advice! Use low-fat cottage cheese or goat cheese.

Salads with fish for the New Year's table

With persimmon

On a plate for each guest, place a leaf of lettuce, on top - slices of salmon and persimmon slices. Use a mixture of chopped walnuts and mustard as a dressing. Use traditional seasonings at your discretion, don't forget salt and pepper.

  2. Melt 2 tbsp. spoons of butter, add mustard and chopped seasonings.
  3. Place the fillet on foil, generously brush with the resulting sauce, cover with a second piece of fillet, wrap the foil and place in the oven for 15 minutes.
  4. Meanwhile, chop some hazelnuts and thinly slice 50g bacon and fry them together.
  5. After unwrapping the fish in foil, sprinkle bacon and nuts on top.

Attention! Both river and sea trout are suitable for preparing this recipe. The difference is that river fish is often medium-sized, so you will need to take it apart into fillets yourself, but from sea fish, which are larger in size, you can ask them to cut off the desired piece. Sturgeon with a surprise

From fish for this recipe, it is best to choose a whole carcass of sturgeon or sterlet (2 - 3 kg), since this sea creature has no bones or scales, which will only work to our advantage.

  1. So, to begin with, wash the carcass, remove the upper and side bone plates, also gut the abdomen and carefully remove the cartilaginous ridge.
  2. After this, soak the fish for 30 minutes in the marinade (freshly squeezed juice from 1 kg of oranges and 500 g of lemons, salt and spices to taste and personal preference).
  3. In the meantime, let's prepare a “surprise” - the filling: beat half a kilo of salmon fillet, 3 eggs, 100 ml of cream in a blender, add some salt and beat again until creamy.
  4. After half an hour, dry the inside of the carcass thoroughly with napkins and fill it with salmon cream, after which we sew up the sturgeon’s belly and place the fish on a baking sheet with its back up.

Bake the signature dish of a festive banquet for 1 hour at a temperature of 200 o C.

When serving, lay out the elongated dish with lettuce leaves, on top of which we place the stuffed sturgeon (don’t forget to remove the threads). Decorate with lemon slices, cherry tomatoes and red caviar tartlets.

Ingredients

  • Any fish fillet – 0.5 kg;
  • Grated cheese – 0.2 kg;
  • Premium wheat flour – 0.5 tbsp.;
  • Soy sauce – 2.5 tbsp;
  • Chicken egg – 4 pcs.;
  • Lemon – ¼ fruit;
  • Turmeric – ½ tsp;
  • Salt - to taste;

Cooking fish

  1. Cut the fish into portions (5x5 cm), beat with a mallet and soak for 30 minutes in a marinade of lemon juice, soy sauce and turmeric.
  2. In the meantime, prepare the “cloud” batter. Beat the eggs and flour with a whisk, add a little salt and mix with grated cheese.
  3. Dip the marinated fish in batter and fry on both sides.

These delicious “Cheese Clouds” should be served on a plate lined with rings of colored bell peppers along the edge with lemon and lime wedges and curly parsley. You can also make some gorgeous roses from tomato skins.

  • Soy sauce – 3 tbsp;
  • Nori seaweed - 3 leaves;
  • Bread crumb – 3 slices;
  • Milk – 1/4 cup;
  • Adjika or ketchup – 1 tbsp;
  • Turmeric – 1 tsp;
  • Ground paprika – 1 tsp;
  • Black pepper powder – ½ tsp;
  • Salt - to taste;

Preparation

Divide the fish fillet into 3 equal parts, and soak the bread slices in milk.

The fishloaf itself is prepared in layers.

I layer

For the first layer (green), put 1 part fish fillet, 1/3 onion into a blender bowl; 1 tbsp. soy sauce, finely chopped dill, 1 moistened slice of bread, a pinch of salt and an egg.

After loading the products, beat the mixture into minced meat for 2 minutes, which is then placed in a baking dish and covered with a piece of nori.

II layer

We also mix the second layer (orange) in a blender, where we combine 1 part of fish, 1 tbsp. soy sauce, 1/3 onion, boiled carrots, egg, turmeric, slice of bread, black pepper, salt to taste.

Place the resulting orange cream on top of 1 layer in a baking dish and also cover with a piece of nori.

III layer

For the third red layer, load the remaining products into the kitchen unit: fish, egg, bread, onion, sauce, paprika and adjika and beat until smooth.

Place the minced meat in a container with the top layer and place our dish in the oven for 30 minutes at 180 o C.

Remove the finished fishloaf from the mold and cut into portions. Serve this rainbow dish with tartar sauce and pitted olives.

Rice paper filling

Take ½ each red and yellow bell pepper, ½ fresh cucumber, 0.1 kg of lightly salted red fish (fillet) and cut into small cubes, then mix with cottage cheese (100 g) and apply to a pre-moistened rice sheet.
