  • Pistachios 30 g;
  • Coconut flakes 100 g.


Cooking method:

Melt the butter, add flour to it and cook, stirring constantly, for 5 minutes. Pour in milk and cook until thick. Add regular and vanilla sugar to the mixture. Cook until the sugar is completely dissolved.

Cook the mixture until thickened over low heat. Remove the pan from the stove and let the mixture cool slightly. Add chopped pistachios. Divide the mixture into parts and add dyes. Mix powdered sugar and remaining starch.

Sprinkle the prepared molds with powder mixed with starch, remove excess mixture. Pour the finished mixture into molds. Leave until completely cool. After cooling, the sweetness is removed from the molds, cut into cubes and sprinkled with a mixture of starch and powdered sugar.

Fruit Turkish Delight

Ingredients:

  • 1 cup fruit or berry puree
  • 300 gr. Sahara
  • 200 ml. water for syrup + 150 ml. water for starch
  • 1 cup cornstarch + 2 tbsp. l. for sprinkling
  • 1 tbsp. l. lemon juice
  • 1/2 cup powdered sugar

Cooking method:

Pour 200 ml into a ladle or small saucepan. water, add sugar. Add a spoon of lemon juice. Stirring, heat, and then boil for 5-10 minutes. In this case, the sugar will completely dissolve, and the resulting syrup will thicken slightly. The finished syrup for Turkish delight should leave clearly visible streaks on the walls of the saucepan.

While the sugar syrup is boiling, we have time to prepare fruit or berry puree. Any fruit and berries are suitable for puree. For red Turkish delight, strawberry or cranberry puree is suitable, for green - from kiwi, for yellow - from apricots, peaches or oranges, for purple - from black currant or chokeberry. Moreover, you can use both fresh and canned fruits.

To prepare orange puree, peel the orange and divide it into slices. Grind the slices with a blender until a homogeneous mass is obtained. Pour the orange puree into the syrup standing on the fire.

After we put the fruit puree into the syrup, mix the resulting mixture well and boil for a few more minutes. Dilute starch in 150 ml. water. Mix thoroughly until completely dissolved. Pour the starch solution into the sugar-orange syrup in a thin stream and continue to cook over low heat.


After 3-5 minutes, the paste will thicken so much that it becomes quite difficult to stir. This means that our Turkish delight has been cooked and now after cooling it will harden well and will not become soggy.

At the end of cooking, place the mixture in a flat cooking dish, previously generously sprinkled with starch. Let the form with hot Turkish delight cool at room temperature for 10–12 hours.

After cooling, cover the mold with a cutting board and turn the entire structure upside down. A layer of Turkish delight is cut into square pieces 2.5–3 cm in size with a sharp knife. Roll the cubes of Turkish delight in corn starch, shake off the excess, then repeat this operation, but with powdered sugar.

Ingredients:

  • Sugar 400 g;
  • Water 150 ml;
  • Citric acid 2.5 g;
  • Corn starch 70 g;
  • Water 300 ml;
  • Cashew nuts 100 g;

For sprinkling:

  • Powdered sugar 3 tsp;
  • Corn starch 2 tsp.


Cooking method:

Roast the nuts in a frying pan or in the oven. Mix sugar with water and citric acid. Place on the stove over low heat until the sugar is completely dissolved. Bring to a boil and cook to 130°C degrees (hard ball test).

Mix starch with water. With continuous stirring, bring to thickening and heat for 2-3 minutes. Pour sugar syrup into it. Stirring continuously, bring to homogeneity. After boiling, simmer for 20–30 minutes over low heat. When the mixture thickens, add nuts and flavoring.

Mix and place in a mold lined with cling film. The film can be lubricated with odorless vegetable oil. Place in a cool place for 5–10 hours. Cut as desired and roll in a mixture of starch and powdered sugar.

Tangerine Turkish Delight

Ingredients:

  • Tangerines 7 pcs.;
  • Water 800 ml;
  • Sugar 600 g;
  • Powdered sugar 100 g;
  • Citric acid 0.25 tsp;
  • Vanillin 2 g;
  • Starch 130 g.


Cooking method:

Melt sugar in water (600 ml) over low heat and add citric acid. Cook over medium heat for about 10 minutes until thickened, but the syrup should remain clear. During this time, prepare tangerine juice. Grind the peeled tangerines in a blender and, using a sieve, rub the resulting pulp through it. You can use a juicer.

Mix the resulting tangerine juice with 200 ml of water and starch. Place the mixture on the fire and when it boils, pour in the sugar syrup and add vanillin. Cook the Turkish delight for 20–30 minutes until it reaches a gel-like consistency. Then pour into a convenient form and leave in the refrigerator for an hour.

When the Turkish delight has hardened, remove it from the mold, cut it into bars or cubes and roll them in powdered sugar. The most important thing in making Turkish delight is the topping. It is needed not so much for beauty, but so that the sweetness does not stick to your hands and dishes. Powdered sugar is usually chosen for this purpose, but coconut flakes will also work.

Pumpkin Turkish delight with seeds

Ingredients:

  • Sugar 400 g;
  • citric acid ½ tsp;
  • Water 2 ½ cups;
  • powdered sugar 1 pack;
  • starch 2 cups;
  • pumpkin 200 tbsp. l.


Cooking method:

Cut the pumpkin in half, remove seeds and peel. Cut into small cubes. Now let's prepare the seeds. To do this, peel them from pumpkin fibers, rinse and place on a towel to dry.

When they dry a little, put them on a baking sheet and put them in the oven to dry completely, stirring occasionally. I determined that the seeds were ready when they began to “shoot”. You can also dry the seeds in a frying pan or in the microwave (stir every 1–2 minutes).

Cool the seeds and peel them. Pour into a Turkish delight pan, pre-greased with oil (any oil) or covered with cling film. Now we start preparing the Turkish delight itself. To do this, mix 1 glass of water with sugar. Place on the fire and heat until the sugar is completely dissolved.

Then add the pumpkin to the sugar syrup and cook until tender. When the pumpkin becomes soft, remove it from the heat, let it cool slightly and use a blender to bring the mixture until smooth. Put it back on the fire.

Meanwhile, dilute the starch in 1.5 cups of water, the starch should completely dissolve. When the pumpkin syrup begins to boil, pour the starch into it in a thin stream. Mix thoroughly so that no lumps form.

Mix the mixture thoroughly and cook over low heat until thickened, stirring constantly. Remove from heat. Let cool and pour into the prepared form. If the mold is not plastic, you can also pour in the hot mixture. Place in the refrigerator to harden.

When the Turkish delight has hardened, turn the pan over, cut it into small squares and roll them in a mixture of powdered sugar and starch. Just powdered sugar can be absorbed quickly.
