I want to offer a great option of vegetarian or lean - as you like - pea soup. Peas - an excellent source of protein, carbohydrates and trace elements, the soup from it is obtained rich, thick, satisfying and very tasty.

As additional ingredients, you can use a variety of vegetables and spices to your own taste. There are variations of pea soup with the addition of potatoes, but I like pea soup without it, I think that potatoes and peas are mutually exclusive ingredients, and it makes no sense to add them to each other. However, if you like, then I do not see anything wrong with that. As spices, I advise you to use bay leaf and "hops suneli" or Svan salt, but, again, the choice of spices is a matter of your personal taste.

For cooking vegetarian pea soup, prepare the products on the list. I used green split peas, not requiring additional soaking.

To begin, pour the peas with cold water and simmer for about forty minutes from the beginning of the boil, periodically removing the foam with a slotted spoon.

While peas are boiling, grate the carrots, dice the onions. Fry the vegetables in vegetable oil, adding spices to taste. I used Svan salt.

After 40 minutes, the peas should be fully boiled and absorb almost all the water. Put it in a saucepan in which you will cook the soup (you can use the same one where the peas were boiling), add water, add vegetables and bay leaves. Salt, pepper to taste.

Bring to a boil and cook for another 10 minutes.

Veggie pea soup is ready! Serve hot to the table.

  Put the peas in a bowl (not in the cooking pot of the vegetarian pea soup). Fill with cold water. Leave the peas to swell for several hours (preferably overnight). So it will cook much faster. After the soaking step, drain the water, pour the peas into a clean saucepan and cover with fresh water. Put it to stew. Take time while the pea soup broth is boiled and grab the vegetables. Peel and dice the potatoes. After that, boil it and do not forget to salt. Fry sliced ​​carrots and fresh pepper. Add seasoning to the broil. Then put boiled potatoes and mix everything.    Pour the peas into a colander, but do not pour the remaining water. Using a blender, chop the cooked peas into mashed potatoes. Then dip the puree into the water and set to boil again. Bring to a boil and add a fry. After boiling again, you can turn off the burner. Veggie Pea Soupready!

Vegetarian Pea Puree Soup

To prepare meals, take 2 tbsp. dry split peas, 2 carrots, 2 tbsp. vegetable oil. Watch out for seasoning, herbs, salt. Rinse peas thoroughly, soak in cold water overnight. Then drain the water, pour a new liquid (3 tbsp.). Cook peas. Cook the carrot pieces separately in a small amount of salted water. Wipe the pea mass. Turn the carrots into a mashed potatoes using a blender. Connect carrots and peas, dilute with broth carrots. Boil, adding oil, seasoning, salt. Serve the dish, sprinkled with chopped greens.

Soup with peas in a slow cooker

This recipe for vegetarian pea soup can be used to prepare a dietary dish in a slow cooker. You will need vegetables (onions, carrots, potatoes - 1 pc. / 1 ​​pc. / 3 pc.). Also use peas (1-1.5 cent.), Spices, salt, vegetable oil.

Moved peas several times wash with cold water. Peel the vegetables, wash them. Crush the onions. Put it in hot oil and fry until transparent (Baking, Frying). Grate carrots, add to onions. Peel the potatoes, cut into cubes, put to the vegetables. Add the washed peas, fill with hot water. Season, salt, put bay leaf. Cook for 2 hours (Quenching).

Pea soup with smoked meats

Is it possible to cook a vegetarian soup with smoked meats? It turns out that not only meat products (smoked ribs, sausages, etc.) can give a piquant smoked note. Smoked seasonings help create the right flavor. To make this soup you will need peas (1 tbsp.), 2 tbsp. diced sweet potato and 2 tbsp. vegetable oil. For smoked meats, use smoked paprika (1 tsp.), Minced smoked chili peppers in ado sauce (1 tsp.). Also, take a couple of onions, celery sprigs, garlic (4 cloves) and canned tomatoes in their own juice (400 g).

Wash peas and soak for several hours. Heat the oil in a pan, fry the smoked meats (paprika, chili). Add the remaining vegetables (chopped onion and celery, sweet potato cubes). Close the lid, simmer on low heat for 10 minutes. Then put crushed garlic, turn off. Pour peas with new water (6 tbsp.), Boil for 60 minutes. Add mashed tomatoes into the dish, cook for 30 minutes. Add the stewed vegetables, boil, salt.

Pea Soup with Smoked Cheese

This recipe also allows you to exclude meat from the recipe, but at the same time get a smoked taste. To prepare the soup will require a normal set of products: 1 tbsp. peas, 3 potatoes, 1 pc. onions and carrots. To add smoked flavor, take 100 g of smoked cheese. You will also need seasonings (coriander, turmeric, bay leaf) and salt. For frying vegetables, use vegetable oil.

Prepare peas (wash, soak and let stand for several hours). Fill it with new water and put it to boil. When it is almost cooked, add potatoes, laurel. Fry the onions and carrots in vegetable oil, adding seasonings to the vegetables. At the end put chopped smoked cheese. Put fried in soup, boil, salt.

What to cook a vegetarian for the first? The answer is very simple - any soup that you can cook with the exception of meat or fish products will do. Today we had pea soup with crackers for lunch. Great hearty meal! For the preparation of the soup itself, it is necessary to prepare pea groats, that is, soak it in cold water for 5 hours. It is important not to drain this water, then the peas will be cooked right in it. On the whole, the cooking process is not laborious, although it takes time.

All vegetables that go to pea soup, I prefer to fry in sunflower oil with the addition of tomato paste. Only then send to the soup. And, of course, I like to add garlic croutons from fresh white bread. But this should be done exclusively before serving, otherwise they will quickly soften.

To make the pea puree soup not very thick, add water during cooking. In this case, the output of the dish will increase due to the larger volume.

Ingredients:

  • peas 400 g (groats)
  • potatoes 250 g
  •   150 g
  • onion 70 g (1 head)
  •   100 g
  •   25 g (3 cloves)
  • white bread 100 g
  • black pepper 1 g
  • salt 20 g
  • tomato paste 40 g
  • sunflower oil 4 tablespoons

The output of the finished dish: 6 servings of 300 g

Cooking time: 60 minutes + 5 hours for soaking.

In another pan, heat the sunflower oil, send there first the onions and carrots, fry over medium heat for 2 minutes, add tomato paste, fry for another 2 minutes, stirring. Add all other vegetables, fry over high heat for 5 minutes. 10 minutes before the pea broth is ready, we send fried vegetables to it. Add salt, pepper, you can also put a couple of bay leaves and sweet peas. After 10 minutes, turn off the fire, cover tightly with a lid. Pea soup mashed ready! Before serving, add crackers.
