But it is incredibly simple and easy to cook a cupcake according to this recipe, even a novice hostess. A seductively appetizing slice of such sweetness just melts in your mouth. The cake is tender, soft and incredibly tasty. Cherry jam will give sourness to homemade baking, and fresh frozen cherries will give zest. The fragrant smell of a cupcake just makes you crazy.

Delicious lean cupcake. Step-by-step recipe

  1. For the preparation of lean muffins, we need 200 grams of steep tea leaves.
  2. We measure a glass of sugar (I have a glass of sugar - it is 200 grams) and pour hot black tea into it. (I do not like when the cake is very sweet, so I take about 170 grams of sugar, but you can take even less).
  3. Stir the tea leaves until sugar is completely dissolved. Leave the tea to cool. The cooled brew can be filtered, and it can be used and not filtered.
  4. We take two cups of flour (1 cup - 125 grams), sift, so that the flour is saturated with oxygen and the dough rises more easily.
  5. One teaspoon of soda quench vinegar. Be sure to use baking soda, then the baking will not be soda odor. Instead of soda, you can use baking powder.
  6. We add slaked soda, sweet, cooled tea leaves, three tablespoons of vegetable oil (we must take no smell of oil), three tablespoons of jam (I used cherry jam), vanilla to taste and frozen cherries in the sifted flour. Knead the dough.
  7. Pour the watery dough into the cake pan. Silicone spatula distribute the dough evenly over the entire form. (I used a metal mold smeared with butter, and you can use a silicone mold for baking).
  8. We send the form with a cupcake to an oven preheated to 210 degrees for 40-50 minutes.
  9. Readiness of the cake is checked with a wooden skewer (if the skewer is stuck in the cake and it is dry, then the cake is ready).
  10. Sprinkle the finished cupcake with powdered sugar.

Lean cake is low calorie and very, very tasty. During cooking, you can add nuts, raisins, dried fruits, candied fruits to the dough - all that your soul desires. If you do not have cherry jam on hand, you can use any other jam for a lean cupcake. Before serving, you can decorate the cupcake with fresh berries. This cupcake is ideal for family tea, and to meet guests. A lean cupcake combines simplicity, delicacy and aroma. The taste of homemade cake is very unusual, and in my family such sweetness enjoys well-deserved fame. I serve a delicate cupcake with a cup of flavored mint tea or coffee with milk. Dough for them is prepared on ... tea! Initially, it was a tea-cake, and I came up with the decomposition of the dough in small molds, tea mini-cupcakes.

Ingredients:

  • Freshly brewed tea - 1 cup (200 ml);
  • Sugar - 5 tablespoons (100-120 g);
  • Flour - 7 tablespoons full with a hill (200-220g);
  • Any seedless jam - 3 tablespoons;
  • Vegetable oil - 3 tablespoons (odorless sunflower);
  • Baking soda - 1 tsp (without top);
  • Table vinegar 9% - 0.5 tablespoons;
  • Ginger (pinch), cinnamon (pinch), raisins (100g), powdered sugar.

How to bake:

Combine the dry components of the dough: sifted flour and soda, sugar, spices, and mix

Add vegetable oil and jam.

After mixing, pour in warm fresh tea (without tea leaves !!!) 🙂 And add vinegar or lemon juice, which quench the soda in the dough. Instead of soda and vinegar can be added to the flour baking powder, 1.5 teaspoons.

Pour raisins into the dough, mix. You can add more chopped walnuts or dried apricots.

Spread the dough on the cake tins. We bake either in small tins, or in a shallow, but wide, or better - in the form with a hole - otherwise there is a chance that the cupcakes may not be completely baked.

We bake tea muffins at 180-200C for about half an hour. We try for readiness with a wooden stick.

Let the muffins cool down a little in the cups, because they are hot very tiny.

Then put them on a platter and rub the icing sugar over a strainer.

Here, amazing transformations will start to happen with the dough. From bright pink, it will turn lilac, then it will begin to darken and you will get a grayish color. This is a cherry juice reacted with soda. Do not worry, these metamorphoses will not affect the color of the finished baking, the cake will be very beautiful, honey-colored.

Cherry needs some time to hold in the sieve to the liquid flowed. It is better to do this before cooking, and use cherry juice instead of water. Stir the cherry with the dough. How many berries to add is a matter of taste, but the more cherries, the more delicious the cake.

Grease the form. Fill the dough at 2/3 of the volume, not more - when baking, the lean cherry cake rises very well. Put the cake in the oven with a temperature of 180 degrees. Bake for 25-30 minutes depending on the height of the form. Finish pastry with a skewer - it will come out of the cake dry, without crumbs and lumps of dough.

We send our muffins to bake in an oven heated to 180 degrees for 25-30 minutes, bake until golden brown. All is ready.

At this time, we mix everything on the list: Flour, semolina, muesli, vanilla sugar, salt, soda. Stir.

Add bananas, orange peel in thick circles into the dough, add chocolate in small pieces and pour the juice of two oranges mixed with honey. Mix well.

Add steamed corn grits, mix again. The croup must be already cooled, otherwise it will melt the chocolate with stirring.
