Pick up appetizers and salads of your choice. Here the main rule is a variety of tastes and compositions. Try not to cook the same type of salads based on potatoes and mayonnaise.

You can diversify the festive table with canapes, fish, meat and cheese platters, pita rolls, vegetables.

With a large selection of cold appetizers, remember about hot appetizers. They will be a nice transition to the main course.

The main concern of the hostess is the hot dish of the festive table. It is better to cook it on the day of receiving guests or, in extreme cases, the day before.

It is better to cook meat for the festive table in portions if it is not served immediately after cooking.

It is best to bake it in a large piece in the oven. Beef makes excellent roast beef, veal or lamb can also be baked in a piece or stewed with sauce.

To give the meat a tender, piquant taste, use all kinds of seasonings, spicy vegetables, and sometimes just vegetables and fruits to your taste.

You can roast poultry in the oven, and serve the side dish separately cold. If you prefer fish dishes, you can boil it (choose sturgeon or salmon) or bake in the oven, but choose varieties without rib bones.

Therefore, we will do most of the work on preparation and in the kitchen during the week, and on December 31 we will pay attention to hair, manicure, rollercoaster rides, and a trip to the main Christmas tree of the city. And only an hour before setting the table, you will spend in the kitchen. Each menu and shopping list can be downloaded as a separate printable file so you don't forget to take it with you to the store. In addition, the list is divided into 2 parts. The first is products that you can buy in advance, a week before the holiday. After all, these days there will be no crowds in stores. The second part is what you need to buy the day before the holiday. This part includes perishable products. I specifically do not include side dishes in the menu, because. they make the night sky much heavier. If you think you can't do without them, add them yourself. Also, I do not indicate fruit, vegetable, meat and cheese cuts. I also advise you to avoid fruit and vegetable salads, which will quickly flow and lose their appearance. Whether or not to add them is your decision. In the meantime, choose what you like and have a merry New Year 2017!

Romantic New Year's Eve menu for two


The main feature of compiling such a menu for the new year is to remember that dishes are only a small fraction of your romance. Focus on creating a romantic atmosphere, your appearance and good mood. You can safely go to the salon on December 31, do your hair, manicure, walk and enjoy the expectation of the upcoming holiday. Cooking plan:

I tried to plan the time as much as possible so that you would not worry that you would miss something and not be distracted from the New Year's mood.

  1. One week before: We buy everything we need on the first part of the shopping list. We allocate the evening and make sweets. You can safely store them in the refrigerator. Put the candies in a plastic or glass container so that they don't absorb the smell of other foods.
  2. December 30th:
    • We prepare cheese cream for canapes, dry the bread. Swap the bread for a salted cracker if you like. Cooking 1/4 of the ingredients of the cream cheese recipe. 8 crackers are enough.
    • Cut the turkey fillet (chicken if desired) into two portions and beat off. Salt, pepper. We put it in a container or wrap it in cling film and send it to the refrigerator.
    • If you are using frozen shrimp, transfer them from the freezer to the refrigerator so that they thaw properly.
  3. Dec. 31:
    • Cooking turkey fillet with sauce. To serve the fillet we burn, we do this. While frying the fillet, turn on the oven and heat to 180 degrees. We shift the fillet into a ceramic or glass baking dish, cover with foil and send the oven. After 5 minutes, turn off the oven and the fillet will come to readiness by itself. There it can be 20-30 minutes. If there is no oven, cook according to the recipe, but cover the finished fillet on a plate with a hot pan lid. If the fillet is cold before serving, use the microwave. And then pour the sauce over it.
    • Preparing the shrimp sauce, pour the shrimp. We cut the tomatoes. Cooking canapes. All together it will take 20 minutes.
    • Preparing the sauce for the turkey. 10 minutes.
    • Mix the salad right before serving. 2 minutes.
    • We get candy.
    • Set the table, straighten your hair, celebrate the new year!

Cooking plan:

For such a menu, it is better to allocate 2 hours for cooking on December 30th. In fact, there is not much to cook, and cutting Olivier will take you the most time.

  1. December 30th.
    • Boil potatoes, eggs, breast for Olivier and eggs for fish pate.
    • Cooking a cake. We put the cake to cool, decorate and pour yogurt tomorrow.
    • Cut olive oil. We don't run Olivier!
    • Cooking fish paste.

    The total time is 2 hours. I recommend involving children in peeling eggs and potatoes. And perhaps a husband for slicing Olivier. You will need about half of the fish pate, so you can safely use the second half for breakfast the next day (spread on sandwiches).

  2. Dec. 31.
    • Let's start with the preparation of meatloaf. We will form a meat loaf, but we will not send it to the oven, but set it aside. I recommend sending it to bake an hour before the start of the feast, so that it is hot. 20 minutes.
    • We take out the cake, decorate with yogurt. I buy ready-made sugar figures in the form of snowflakes or decorate as in the recipe. 15 minutes.
    • Drain the liquid from the olives, mozzarella, make a snack on skewers. I recommend entrusting this part to the children, then you will spend 5 minutes.
    • Spread the fish paste on the crackers. We decorate. 10 minutes.
    • Cooking mayonnaise, season Olivier. 10 minutes.

As you can see, it will take you only an hour to prepare on December 31st. If you want, you can form a meatloaf in the morning, refrigerate. This will further reduce the preparation time before the holiday.

If you have a little more time - you can bake truffle cake. He is truly amazing. Cakes for him can be prepared 3-5 days before the holiday. If you have 1-2 more guests, pick up some more New Year's salads.

Menu for a company of 8 people


If you are going to celebrate with a large company, you want to surprise the guests and not inflate the budget. So I made a relatively budget menu. The main thing with this option is not to cook a lot of dishes, but simply increase the amount of each. You can also ask for help with the preparation of one of the guests. Or ask to bring some of the salads or cake with you. The main emphasis in this menu is made not only on its budget, but also on the fact that on the 31st you only need to put the finishing touches. And you still spend only an hour cooking. I quite boldly suggest that you include a salad with barley instead of the usual Olivier in the New Year's menu for the company. And for those who do not recognize salads with mayonnaise - potato salad. It can also serve as a kind of garnish. The number of ingredients for the salad can not be increased, each guest will get it. but make boiled pork from a piece of meat at the rate of about 150 grams per person. For a sweet end to the evening, I suggest buying tangerines and sweets for the cake. According to the recipe, you will get a cake for about 8 people.

Cooking plan:

  1. For 3-4 days. We bake cake layers for Pincher cake. I draw your attention to the fact that for such a large company you need to take a double portion of the ingredients according to the recipe. We are also engaged in cakes for snack mushroom cake.
  2. December 30th.
    • Boil vegetables for appetizers with anchovies and salads.
    • We cut salads, but do not put onions in them and do not season them.
    • We clean the anchovy (anchovy) and put it in a glass container with a lid. Lightly drizzle the hamsa with oil so that it does not dry out.
    • We marinate the ham.
    • We make cream for the cake and prepare the Pincher cake.
    • We collect snack cake with mushrooms.

    On this day, you will spend about 4 hours cooking. Therefore, I once again recommend that you invite assistants or entrust the preparation of part of the dishes to guests.

  3. Dec. 31. We'll be ready in less than an hour!
    • 2-3 hours before the feast, put the boiled pork in the oven. She will have time to cook and reach and cool a little in the oven. 10 minutes of pure time. Don't forget to set a timer on your oven or phone to turn off the oven.
    • We prepare an appetizer with anchovies / anchovies and cut bread for it. 20 minutes

I combined these two menu options into one. Those who fast may not celebrate the New Year at all. But still, many celebrate it symbolically. Vegetable cabbage rolls can be prepared a couple of weeks before the holiday.

Cooking plan:

  1. A week before. Cooking vegetable cabbage rolls. We stand 3-4 days at room temperature and put in the refrigerator. Stuffed cabbage rolls are prepared in general for about an hour or two, depending on your ability to twist cabbage rolls.
  2. For 3-4 days. Cooking lean cookies with marmalade. Let the finished cookies cool and put them in an airtight box. The total cooking time is about 1.5 hours.
  3. Dec. 31.
    • Let's start with the salad. If you use the attachments for a meat grinder, food processor or blender to grate vegetables, it will take about 15 minutes. If there are no nozzles, to speed up the process, ask your children or husband to help grate the vegetables.
    • We're making risotto. About 40 minutes. Do not forget that this is a dish that needs to be constantly stirred.

If you like, replace the cookies with a lean cinnamon and almond roll. If you can eat fish on this day or you want to replace some of the recipes, take a look at the recipes for Fasting. What will I cook for the New Year's table

Everything is simple with my New Year's menu. I will celebrate the New Year with my family - my husband, daughter, parents and our godfather. I really hope that this year he will not come by himself. As a basis for the menu, I will take the above menu for the new year for a family of 4. Just calculate the amount of meatloaf so that would be left for breakfast. For each person, I will count 200 grams of pork (raw, before processing) for New Year's Eve. + 200g*3 for brunch or rather lunch on January 1st for me, husband and daughter. Plus, I will add another salad, because. adults will be 5-6 people + 12 year old daughter. What's left of the salads will be the same for brunch the next day.

If unexpected guests run in, I will have fruits, sweets, something for meat and cheese cuts, pickled plums, cucumbers, tomatoes - in general, something that can be put on the table very quickly as a light snack. Because from experience - after 12 at night, guests come already from the table and don’t eat much. And I don't want to cook too much.

This is the approximate amount of food that one person at the New Year's table will eat. If you don’t want to calculate for each type of dish separately, focus on an average of 500 grams of food per man and 350-400 grams per woman. If there is alcohol, then we increase the number of cold snacks (I have already increased). Remember that it is night, heavy dishes will create a feeling of heaviness. And instead of New Year's fun, you run the risk of sitting in a corner on an armchair, dreaming about mezim. Dessert and fruit count separately.

Cold snacks - 100-200 gr. (cheeses, vegetable and meat cuts, fish, mushrooms)
Salads - 200 gr.
Hot dishes - 200-250 gr.
Fruit plate - 200 gr. or cake - 150-200 gr.

Despite the fact that everyone has different tastes, on the New Year's table in every house there will certainly be hot dishes, salads, snacks and desserts. But from what specific products the dishes will be prepared, it is difficult to predict. Some people like fish, others like chicken, others only eat vegetables, so opinions differ. Since the next year will be held under the sign of the Earth Pig, it is worth thinking about vegetable and fish dishes. It is undesirable to cook pork dishes, this may offend the hostess of the year. Also, do not order fast food, pizza, sushi rolls.

How to set the New Year's table, the nuances

The composition of the snack can be vegetable, meat, fish, whatever you want. You can combine products as you wish, don't be afraid to try new things.

Take note of the recipe for stuffed tomatoes, the appetizer looks very appetizing on the table and attracts everyone's attention. This is a win-win option for both a large company and a light family dinner.

  • 2-3 small tomatoes;

New Year's snack "Christmas balls"


A hearty appetizer of ham, cheese and eggs is just right for the New Year's table. It is not difficult to prepare it, you can involve children, it will be interesting for them to participate. For breading, use ground nuts, sesame seeds, flaxseeds. This will further decorate the balls.

  • 200 g boiled sausages;
  • 50-60 g of processed cheese;
  • cheese - 80 g;
  • garlic clove;

  • mayonnaise - 3 tablespoons;

How to cook:

Cut the sausage into cubes and transfer to a deep cup. Grate an egg on a coarse grater and processed cheese to it.

Rinse green onion feathers and cut into rings. Immediately pour the rings into the cup with the rest of the ingredients. Squeeze the garlic in there. Add to the contents of the mayonnaise and mix.

From the mass, roll into small balls the size of a little more than a walnut.

Grate cheese on the smallest grater. Divide the cheese into 3 parts and sprinkle on plates. Add paprika to the first plate of cheese, turmeric to the second, and chopped dill to the third part.

Roll the balls in different toppings and put on a plate. Decorate them with olives, and make loops from the sprigs of greenery like balls.

Eggplant in caramel


In the year of the Earth Pig, there must be vegetables on the New Year's table, because the animal loves them, which means that the year will be successful for you. Prepare an eggplant appetizer, please the hostess of the next year, and of course your household.

  • eggplant - 400-500 g;
  • 5-6 garlic cloves;
  • 4 tbsp honey;
  • 50 ml of water;
  • hot pepper;
  • coriander - tsp;
  • 2-3 tbsp vegetable oil for frying;
  • salt to taste.

How to cook:

Rinse eggplant under water and pat dry. Cut the fruit lengthwise, into slices 4-5 mm thick. Salt the slices and let them lie down for about an hour.

If any juice comes out from the eggplant, drain it and blot the slices with a paper towel.

Peel the garlic and cut the cloves in half. Heat the oil in a frying pan and throw the cloves into it to fry. The oil will become with the aroma of garlic. Remember to take out the cloves when they are golden.

Dip slices in garlic oil and fry until browned on both sides. Transfer the fried eggplants to a bowl.

Heat water in a saucepan and add honey to it. Sprinkle the liquid with spices, bring to a boil. Throw chopped hot peppers into the boiling mixture and boil the sauce for another 4-5 minutes.

Transfer the eggplants to a bowl in which they will be served to the table. Pour the thick hot sauce over the vegetables, but do not stir.

Put the snack in a cool place to absorb the taste, at least 2 hours. Garnish vegetables with lemon wedges when serving.

Royal jelly


What is the New Year's holiday without everyone's favorite jellied meat? Its preparation has already become a tradition, so it is always present on every table on New Year's Eve. Make jelly according to our recipe so that it really turns out to be very meaty, in a word, “Royal”.

  • 3-4 pork legs;
  • 450-500 g of beef;
  • 200-300 g chicken fillet;
  • 0.5 kg of chicken hearts;
  • 2 carrots;
  • 2 heads of onions;
  • ½ celery root;
  • 2 bay leaves;
  • 5 peas of black pepper;
  • 5-6 garlic cloves;
  • salt to taste.

How to cook:

Wash the pork legs and transfer to a large saucepan. Fill them with water. Put the pot on the fire. Boil the contents over low heat for at least 2.5 hours. When the set time has passed, put another piece of beef in the pan, continue cooking for another 1.5 hours.

Half an hour before the end of cooking, cut the chicken into small pieces, and clean the hearts and rinse under water. Transfer the meat to a saucepan and cook everything until tender.

Wash the celery and carrots, peel them. Remove the husk from the onion. Cut the vegetables into large, nice pieces. Onions can be cut into half rings. Transfer the vegetables to a saucepan with meat ingredients and cook for about half an hour.

Remove all meat ingredients from the broth with a slotted spoon. The meat should come off the bones on its own. Separate the meat from the bones, cut into pieces of the heart and transfer everything to the pan. Strain the broth through cheesecloth and pour over the meat.

Fold the gauze in several layers to make the broth nice and clear.

Put chopped garlic, parsley and pepper in a saucepan, bring the mixture to a boil and turn off the heat. Pour the hot jelly into bowls, let cool to room temperature, and then rearrange the bowls in the refrigerator. Keep the product at a low temperature at least overnight. Transfer the jellied meat to a beautiful plate when it hardens and serve horseradish or mustard with it.

New Year's hot appetizers

A good hot appetizer can replace one full hot one. The preparation of hot snacks is especially important if a large company of relatives and friends is going to visit you. Treat them to meat on skewers or surprise them with a recipe for spicy chicken wings. After such dishes, your guests will not remain hungry for sure.

Spicy chicken wings


There is probably no person who would not like sharp wings. Many people love a savory snack, and how to cook it correctly at home will help a recipe with step-by-step photos. The cooking time takes no more than one hour, but the dish is eaten much faster.

  • 700-800 g chicken wings;
  • 70-80 g butter;
  • ½ cup flour;
  • st.l. wine vinegar;
  • tsp spicy sauce like "Tobasco";
  • a pinch of black pepper;
  • salt.

How to cook:

Divide the washed and dried wings into 2 or 2 parts. Use a sharp, large knife to make it easy to cut the bones.

Take a baking dish and grease it with melted butter (1/3 of the total). Sprinkle flour on a plate and roll the wings. Arrange the wings in a baking dish, then put them in the oven for 30 minutes. When one side is browned, flip the wings over and bake for another 20-30 minutes.

Melt the remaining butter in a saucepan, add spices and hot sauce to it. Stir the mixture well until smooth. Put the fried wings in a small saucepan and pour over the sauce. Let the meat absorb the flavor for 5-10 minutes. Spicy wings are ready.

Chicken skewers in bacon on skewers


Do you like beautiful and unusual snacks? Then take the option of serving chicken meat on skewers into your piggy bank of recipes. It turns out very beautiful and effective. Choose long skewers to fit more meat on them.

  • half a lemon;

Duck with quince in cranberry sauce


For the New Year, from the main menu you always want something “such”. As an option, bake duck in the oven, but not with apples, but with quince. The meat does not even have to be marinated, you can cook the dish in a couple of hours (step by step photos).

  • a small duck carcass weighing up to 2 kg;
  • quince - 1 pc.;
  • 100 g dried cranberries;
  • frozen cranberries - a glass;
  • 5-6 tbsp honey;
  • 8 garlic cloves;
  • 2 glasses of red wine;
  • pepper, salt to taste.

How to cook:

Wash the duck inside and out, cut it into large pieces. Use a fork to poke a few holes in each piece so that the fat comes out when frying. Rub the meat with spices and salt.

Heat up the pan and put the pieces on it. Fry the meat for about 10 minutes, do not forget to turn over. Wash the quince and cut into slices. Clean the garlic from the husk.

Transfer the duck to a deep baking dish, place the quince and garlic between the pieces. Pour everything with wine and send it to the oven for at least an hour.

If the broth has become cloudy, at the end of cooking, break a raw egg into it to collect small particles. Then take out the egg with a slotted spoon.

6. Finely chop the peeled garlic and herbs, mix with minced meat.

7. Put the meat with garlic in an even layer in an enameled tray with high sides. Pour in the broth. Cool, then refrigerate until completely set.

  2. Finely chop the mushroom stalks along with the garlic, onion and bacon. Fry in a well-heated pan in vegetable oil, stirring, 5-7 minutes until soft.
  3. Add thyme leaves, sour cream and 1/2 tbsp. l. crackers. Salt, pepper, stir and keep on fire, stirring, for another 1 minute.
  4. Stuff the mushroom caps with the resulting mass and sprinkle with the remaining breadcrumbs. Put in the oven at 200 degrees C for 20 minutes. Turn on the function that covers the products with a ruddy crust.

Recipe for stuffed champignons for the New Year's table

Mushrooms are almost always on the table in the New Year. They can be part of hot dishes, salads or snacks. This appetizer is just mega mushroom. There are a minimum of components, but the result is excellent. Such champignons will fly away from the table very quickly, believe me, because this is new and interesting.

Ingredients:

  • champignons - 10 pcs.
  • onion - 1 pc.
  • hard cheese - 100 gr.
  • butter - 20 gr.
  • vegetable oil - 1 tbsp.
  • red paprika - 1/2 tsp
  • black pepper - 1/2 tsp
  • salt - 1/2 tsp

Cooking:

1. Start by preparing the filling. Separate the stem from the cap of the mushroom by simply gently prying it off. Using a spoon, carefully loosen the center of the hat so that there is more room for the filling.

2. Cut the legs as small as possible and connect them to the insides of the hat.

3. Finely chop the onion. In a frying pan, heat the butter along with the vegetable oil and pour the onion. Fry it until light golden.

Butter will give the dish a pleasant creamy flavor.

4. Add mushrooms, salt and spices to the onion, mix and fry until tender.

5. Grate the cheese on a coarse grater. When the mushrooms are ready, turn off the heat and put all the cheese into the pan. Stir vigorously to start the melting process.

6. Grease whole mushroom caps with vegetable oil using a silicone brush. This step will make the New Year's snack ruddy and appetizing. Put the mushrooms in a baking dish.

7. It remains to stuff the mushrooms. It is convenient to do this with two spoons.

New and unusual appetizer with red fish for the New Year

Well, what is the New Year without fish? Above, I wrote a hot dish with mackerel. And now I want to surprise you with a beautiful and unusual snack that you should cook on New Year's Eve. It will require profiteroles from custard dough. They are easy to make and can be done the day before. And you can already start these “pies” before serving, it will take a little time.

Ingredients:

for profiteroles:

  • butter - 120 gr.
  • water - 130 ml
  • milk - 160 ml
  • salt - 1 tsp
  • sugar - 1 tsp
  • flour - 160 gr.
  • eggs - 220 gr. (4 large or 5 small)

For filling:

  • slightly salted salmon - 200 gr.
  • creamy soft cheese - 300 gr.
  • lemon peel

Cooking method:

1. Take a stainless steel pan. Put butter in it, pour water and milk, add salt and sugar. Place over medium heat and bring this mixture to a boil.

2. When the mass boils, add the sifted flour. Now for 6-7 minutes you need to constantly mix the dough, do not leave. It should thicken, gather into a lump, but remain soft.

3. After boiling, transfer the dough to a bowl and beat it with a mixer until it becomes warm (5 minutes).

4. Now beat in the eggs one at a time and mix. You should get a homogeneous, viscous dough.

Don't lay all the eggs at once. First one - whipped, then the second, etc.

5. Transfer the resulting mass to a pastry bag. Line a baking sheet with parchment paper and place cakes on it, 2-2.5 cm in diameter.

If there is no special bag, then you can take a zip bag (it is dense), transfer the dough into it and cut off the corner. Or just use a teaspoon.

6. Preheat the oven to 175º and bake the starter base for 30 minutes. The balls will rise well and be hollow inside. Do not open the oven ahead of time so that the profiteroles do not settle. Cooking times may vary. Make sure that the dough does not remain raw inside.

7. Put the baked "cakes" on the cooling rack.

8.Grate the lemon zest. It needs a little, about 2 tsp. Grate on a fine grater and only the top yellow layer. Do not grab the white part, otherwise bitterness will appear in the appetizer.

9. Mix cream cheese with zest.

10. Cut the salmon into thin slices.

11. Cut the hat off the profiteroles. Put a piece of fish in the middle. Put cheese with zest on it. Cover with a lid.

12. It turns out an interesting snack, very tasty. The classic combination of red fish and cream cheese is always a win-win. And in such a new design, it will generally be swept off the table very quickly.

A simplified version of this appetizer. Buy ready-made tartlets. Finely chop the fish and mix with cheese and zest. Make tartlets. Everything!

Appetizer "Tangerines" with chicken and cheese - original serving

What is the New Year associated with? With tangerines and olivier, these products are a must on the menu. How to make not an ordinary Olivier, but a new one, I will write below in salads. And now I propose to make chicken tangerines! Interesting? Then read on!

Ingredients:

  • chicken legs - 2 pcs.
  • boiled carrots - 3 pcs.
  • hard cheese - 300 gr.
  • garlic - 3 cloves
  • parsley - 1 bunch
  • mayonnaise - 3 tbsp.
  • carnation for decoration

How to cook snack tangerines:

1. Boil the chicken in salted water. Use spices when cooking as desired (bay leaf, peppercorns, onion). Separate the meat from the bones.

2. Boil carrots until tender and peel.

3. Grate the carrots on a fine grater into a separate bowl. Squeeze the juice well, this is necessary so that it can be easily molded from the resulting mass.

4. In another bowl, also grate cheese and garlic on a fine grater. Chop the parsley and chicken as finely as possible.

5. Thoroughly mix the base for tangerine - chicken, cheese, herbs, mayonnaise and garlic. You should get a thick, plastic mass.

6. Type cold water into a bowl, in which you will wet your hands when sculpting. Dial a small amount of lettuce and sculpt balls.

7. Now you need to form New Year's fruits. Take a squeezed carrot and flatten it in the palm of your hand. Place a chicken cheese ball in the middle. Cover it on all sides with a thin layer of carrots. Roll the resulting ball in your hands to level the surface.

Do not use a lot of carrots so that the snack does not have a pronounced taste of this vegetable. Try to make a thin "peel".

8. Put the appetizer on a dish and lightly brush with vegetable oil for shine on top.

9. Decorate this beautiful appetizer with parsley leaves. And make the middle ones from cloves for complete resemblance.

Do you make fish slices as an appetizer for the New Year? I propose to arrange a more original ordinary herring, which you can.

Ingredients:

  • salted herring
  • boiled potatoes
  • green onion
  • lettuce leaves (preferably red ones)
  • vegetable oil - 2 tbsp.
  • wig - 0.5 tsp
  • provencal herbs - 0.5 tsp
  • salt - a small pinch

Cooking:

1. Pour a pinch of salt into sunflower oil (or olive oil) and half a teaspoon of paprika and Provence herbs. Stir until the spices are soaked and dispersed in the fat. Let the filling set.

2. Boil potatoes in salted water in their skins. Then cool under running water and clean. Cut into slices, about 5 mm thick.

It is important not to boil the potatoes so that they remain dense and do not crumble.

3. Cut the fish into fillets, removing all the bones. Cut the herring into portions.

You can buy ready-made preserves, then save a lot of time.

4. It remains to collect a snack. Cross over two green onions. Put a piece of potato in the center and grease it with oil and spices. Thus, the potatoes will not be fresh.

5. Place the fish on top, and a small lettuce leaf on it.

6. Tie the onion feathers, cut off the long ends with scissors.

I love making salads for the holidays. And I make at least three of them. Now I offer 5 recipes, completely different, for every taste and color. One of them will be in the shape of a pig. This presentation will appeal to children and the very symbol of the year. Next, I propose to make a dietary salad in the form of a Santa Claus hat - both beautiful and will not affect the figure.

Salad in the form of a pig for the New Year 2019 "Pig"

Many in the family already have a routine to make salads in the form of an animal whose year is coming. Last year, everyone made doggie salads, even earlier - roosters. Well, now it's time for the pig.

Such a salad will stand in the center of the table and attract the eyes of guests. This "Pig" will be the hostess of the evening. Read more recipes for edible piglets.

Ingredients:

  • boiled sausage - 500 gr.
  • hard cheese - 200 gr.
  • pickled mushrooms - 200 gr.
  • boiled eggs - 5 pcs.
  • fresh carrots - 100 gr.
  • daikon radish - 200 gr. (can be replaced with boiled potatoes)
  • apples - 200 gr.
  • olives - 2 pcs.
  • green onion
  • mayonnaise

Cooking method:

1. Everything is as simple as possible. Layers do not need to be laid out, no need to cut. Just grate the ingredients on a coarse grater in random order and put them in a deep bowl (they go there: cheese, carrots, daikon, eggs, an apple and a piece of sausage in 200 gr.).

2. Cut the mushrooms into small pieces and also send them to a common container. Dress salad with mayonnaise, mix. Do not put too much sauce so that you can mold a pig out of the mixture.

3. For decoration, finely chop the green onion. Cut three circles from the remaining sausage. One will go to the patch and two to the ears. You will also need a little for the tail. Grate the rest of the dumpling on a fine grater.

4. The most interesting thing remains - the formation of the mumps. Lay the lettuce on a flat dish, shaping the head and body.

5. In the sausage circle, you need to make nostrils. To do this, use a tube for cocktails. Next, with the same tube, cut out small circles from the half of the olive, which must be inserted into the holes in the patch.

7. Sprinkle the entire body of the boar with grated sausage to give the pig a pink color.


If you want the piglet to be yellow, as per the calendar, then you can sprinkle with cheese.

8. Put eyes, drop a drop of mayonnaise into the middle of each eye. And do not forget about the crochet tail, which also needs to be cut out of the sausage.

9. The pig itself is ready. Sprinkle green onions around it - this is the lawn on which the pig frolic. Around you can decorate with whatever you want - vegetables, peas, corn, here no one limits you.

How to cook Olivier salad in a new way: an original idea

Ingredients:

  • ham - 100 gr.
  • boiled carrots - 2 pcs.
  • pickled cucumber - 1 pc.
  • boiled eggs - 2 pcs.
  • canned corn - 50 gr.
  • green peas - 50 gr.
  • natural yogurt without additives - 250 gr.
  • mayonnaise - 150 gr.
  • gelatin - 25 gr.
  • water - 50 ml
  • salt - to taste

Cooking steps:

1. Put the gelatin in a small bowl and fill with cold boiled water (50 ml of liquid). Stir and leave to swell.

2. Boil eggs hard boiled (after boiling water, cook for 8 minutes). Clean and cut into small cubes. Cut the ham, cucumber and carrot in the same way. Try to keep the size of the slices about the same, about the size of a pea. So the salad will look beautiful.

3. In a large bowl, mix mayonnaise and yogurt. Gelatin should be heated in a water bath or microwave until dissolved. Make sure that the gelatin does not boil, but only warms up well and dissolves. Add gelatin to sauce and mix well.

4. In white sauce, add all your cuts (ham, eggs, cucumbers, carrots), as well as peas and corn. Salt and mix until smooth. Try for salt.

5. Cover the bowl that will be the jelly mold with cling film. Put the salad there, smooth it out. Cover with a plate and place in the refrigerator to set overnight.

6. Turn the salad onto a plate, carefully remove the bowl and film. Garnish with pickled cucumber slices.

This Olivier can be made in portions in bowls. Or in silicone cupcake liners. After hardening, remove and put on a dish, it will be beautiful. Decorate as you like (for example, corn or peas).

"Santa Claus's Hat" - salad for the New Year without mayonnaise with pomegranate

Tired of mayonnaise in all dishes? Unload yourself and your stomach. Include a light salad in the menu for the New Year. It is interesting from what is done in the form of a Santa Claus hat. It turns out very elegant and appetizing.

Ingredients:

  • chicken fillet - 300 gr.
  • fresh champignons - 150 gr.
  • low-fat cheese - 50 gr.
  • eggs - 2 pcs.
  • natural yogurt without sugar - 40 gr.
  • pomegranate - 100 gr.

Cooking:

1. The chicken needs to be boiled or baked. When cooking, place the meat in boiling water to keep it juicy. For flavor, you can add spices and vegetables, as for the broth. Also salt so that you do not get a bland fillet.

2. Hard boil the eggs, and cut the mushrooms and fry until cooked. You can take pickled champignons if desired.

3. Finely chop the meat, put it in a bowl. Send ready-made mushrooms, grated cheese and yolks there.

4. Dress the salad with yogurt, salt and pepper to taste. Stir to make a viscous mass.

5. Put chicken and mushroom salad in the shape of a Santa Claus hat on a dish.

6. Decorate with pomegranate and squirrels to make a real headdress of the famous wizard. That's how easy it is to give your guests a fairy tale. And at the same time get a minimum of calories!


Original salad with Korean carrots and chicken: they will be the first to sweep off the table

Raspberry chocolate dessert in a glass

Desserts in a glass always look beautiful and are easy to prepare. This recipe contains raspberries, but you can use other frozen berries to your liking. You will need 5 cups of 150 ml.

Ingredients:

for the raspberry mousse:

  • frozen raspberries - 500 gr.
  • sugar - 120 gr.
  • chilled cream 33% - 200 gr.
  • cornstarch - 5 gr.
  • sheet gelatin - 10 gr.

for chocolate mousse:

  • dark chocolate - 100 gr.
  • chilled cream 33% - 100 gr.
  • milk - 50 gr.
  • sheet gelatin - 5 gr.

Cooking method:

1. Let's start with the preparation of raspberry mousse. Soak sheet gelatin in cold water for 10-15 minutes until swelling.

2. Defrost the berries in a deep bowl and puree them with an immersion blender.

3. Rub the resulting raspberry mass through a sieve to get rid of the seeds. The output should be 300 ml of puree.

4. Mix sugar with corn starch.

5. Put the saucepan with raspberries on the fire and heat until hot, stirring constantly so as not to burn. Then add a mixture of sugar and starch. Keep stirring. Wait for the mass to boil and thicken slightly.

6.Pour the puree into a deep bowl. Squeeze out the sheet gelatin and send it to a puree. Stir until the gelatin is completely dissolved. Leave for 10 minutes for the mixture to cool slightly.

7. Pour the chilled cream into a bowl and beat them with a mixer until stable peaks.

8. Gradually add the whipped cream to the cooled raspberry puree and stir. You should get a magnificent mass.

9. In cups with a teaspoon, very carefully place the mousse in the center. The mass will spread around the edges. Take your time so as not to splash the mixture on the walls of the glass, otherwise the appearance will be spoiled. Spread the raspberry layer with a toothpick so that it lies in an even layer (about 1 cm high). No need to shake or tilt the glasses - get an uneven surface.

10. Place cups with dessert in the refrigerator to harden. Let the remaining raspberry mousse wait its turn on the table for now.

11. While the first layer is chilling, prepare the chocolate mousse. First, as with raspberry, soak the gelatin in cold water.

12. Pour the chocolate, broken into pieces, into a fireproof bowl. Pour milk into it. Put in a water bath to heat. Do not move away and stir constantly. Bring the mass to a homogeneous state.

13. Squeeze out the gelatin sheets and add to the melted chocolate. Stir vigorously until the thickener is completely dissolved.

14. With cream, we do the same procedure as for the first time. They need to be beaten to stable peaks in a separate container.

15. Gradually fold the cream into the chocolate and stir until a smooth, fluffy texture is obtained.

If you like, you can add some orange zest to the mousse.

16. Remove the glasses with the frozen first layer from the refrigerator. Pour in the chocolate mousse the same height as the raspberry mousse. Smooth the edges again with a toothpick and refrigerate for 15 minutes.

18. It remains to decorate. This can be done with fresh berries, chocolate chips, mint. In general, take what is available. You can just rub the chocolate and it will be cool. The dessert is actually not complicated, not more complicated than ordinary jelly. But very effective and delicious.


Cake without baking "Anthill" - quick and easy

I've already posted an option. This time I propose to make it with chocolate balls from ready-made breakfasts. It's done quickly, which is important. Because in the New Year there is such a large menu, so many interesting things need to be prepared that few people want to bother with a “real” cake.

Ingredients:

  • chocolate balls - 250 gr. (you can take any company)
  • walnuts - 100 gr.
  • condensed milk - 300 gr.
  • butter - 180 gr.
  • cocoa powder for decoration, you can take powdered sugar

Cooking steps:

1. We start with cream, because there is no need to make cakes. Place softened butter in a bowl and beat with a mixer until fluffy. Add condensed milk and continue beating until you get a thick cream.

2. Now pour balls and nuts into the cream (you can chop them, or you can leave them large, if desired). Mix everything to get a homogeneous mass.

3. Cover the detachable form with cling film. Put the future cake in it and tamp, make an even top.

4. Place in the refrigerator to set and solidify for 2-3 hours.

5.Remove the detachable sides, invert onto a dish and remove the film. It remains to decorate to your liking and the quick cake is ready! You will spend 15 minutes of your time on it. And then it will just cool down.

6. You can decorate in this way. Place a plate in the middle to close the center. And along the edges, sift cocoa or powdered sugar through a sieve. You can also lay out some cookies, marshmallows, wafer rolls, colored dragees, marmalades. In general, put what you like. But the children will be delighted with such a New Year's dessert.
