  4. Grind the cucumbers or use the leftovers from the cubes. It's not worth grinding too hard.
  5. We place the cucumbers on a sieve or a grate for steaming and put on a saucepan.
  6. Cover with upturned lid.
  7. On the inverted lid we put a towel soaked in cold water and well wrung out.
  8. As the towel heats up, cool it under water and return to the lid.
  9. The process continues until the cucumber skins are the color of pickles.

At first I did as Irina writes and put a bag of chicken hearts on the lid. But they quickly melted away. Replaced them with wet towels. The process didn't get worse.

I didn't wrap it in foil. The steamer grate fits very tightly into the pot. And the lid is quite heavy and lay flat and well. It was convenient for me to control the process of preparing water. Maybe everything went faster with the foil, but I had nowhere to rush.

I did not take a photo of the boiled cucumbers, so that it was clear to what extent the process should be continued.

The last photo shows the finished hydrolat in a bowl. Yield - about 250 milliliters from three handfuls of waste.

Hydrolate water has a mild smell of cucumbers. It is very soft and very refreshing.

4 kg cucumbers cut lengthwise
100 gr. salt
1 cup sugar
1 stack oil
1 cup vinegar
2 tbsp of black peppercorns (crushed in a mortar) NOT GROUND!!! There may be both crushed and whole ones, it's okay.
2 tbsp grated garlic
1 heaping teaspoon of dry mustard
You put everything in a basin, mix it and stand for 3-4 hours. All this gives a lot of brine.
Put tightly in sterilized jars, fill with brine. Put in hot water and sterilize for 5-7 minutes after boiling. Roll up (you can under a blanket).

Ingredients

Fresh cucumbers 4 kg.
granulated sugar 1 tbsp.
vegetable oil 1 tbsp.
table vinegar 1 tbsp.

4 medium onions

Cooking method

Cut cucumbers into rings, onions into half rings, finely chop the greens.

Prepare jars, wash and sterilize them. For this number of cucumbers, approximately 4 pieces will be required. 700-800 ml.
Arrange the appetizer in jars and sterilize, after boiling, keep on fire for 5 minutes. Twist the jar, turn it over and put it in a warm blanket for the night.
