Today we will prepare a very tasty and healthy dish - green beans with walnuts in Georgian.

It is impossible to remain indifferent to appetizing, fragrant and spicy Georgian dishes.

In Georgia, there are hundreds of recipes for beans - exquisite and at the same time simple to prepare.

Come and we will prepare a delicious lobio with walnuts.

For this recipe we need:

  • 150 gr. walnuts
  • 2-3 cloves of garlic
  • 1 onion
  • 2-3 green bell peppers
  • 40 ml. vegetable oil
  • 40 ml. white wine vinegar
  • greenery
  • salt and pepper

Lobio - Georgian Green Beans with Walnuts - Step-by-step recipe:

To begin, prepare the products

I washed the string beans in advance, cut the stalks, and now we cut the pods diagonally 3-4 cm long.

In this recipe, you can use both fresh and frozen beans.

Wash green Bulgarian pepper, clean the seeds and also cut into thin strips.

Then we cut the greens very finely, I took a small bunch of green onions, dill and parsley.

Fresh cilantro is perfect for this recipe, but I didn’t have one, I’ll use dried one.

Chop the garlic on a fine grater.

Products prepared and now go to the stove.

Set on the stove a pot of water to boil the beans and frying pan to fry the onions and peppers.

In a preheated pan pour vegetable oil,

pour out sliced ​​onions and green peppers and fry vegetables, stirring occasionally.

In the meantime, the water in the saucepan began to boil, add an incomplete spoonful of salt and pour out the chopped green beans.

After the boiled water and beans boil it for 3 minutes.

After 3 minutes, pour the beans into a colander or take it out with a slotted spoon in a separate bowl.

Boiled beans must be doused with cold water in order to suspend the cooking process and thereby cool it.

Vegetables are fried, put them in a large bowl, so they are slightly cooled.

After a few minutes, add chopped garlic, dried coriander, chopped walnuts, which I had previously roasted in a dry frying pan, in a bowl with roasted vegetables.

Slightly mix all the products, add white wine vinegar, chopped herbs and chilled boiled beans.

Sprinkle the dish with pepper and add salt to taste.

We mix everything thoroughly so that the tastes and flavors of the products are mixed.

Green beans lobio with walnuts ready!

As you can see, this dish is cooked very quickly, it can be served hot as a side dish to meat and poultry dishes, and chilled as a salad or appetizer.

Beans are simply boiled to the desired softness, laid out on plates and everything. And all ?! - you ask. Yes, just like that. I was never used to such simplicity. I do not feed bread, but give me something to shuffle. Anything that does not resemble Olivier is not considered a salad! But seriously, taste boiled green beans  i don't really like grass grass. So I had to look for a way out of this situation.

Green beans  caught on my kitchen just here. I could say that in Ukraine green beans, at least, not popular, it’s not often seen on sale, but I’m afraid that former compatriots cast aside with rotten beans)) Most likely, since I’m not a big fan of this type of legumes, I don’t remember where it is sold, or how it is prepared ... Here green beans  very popular, so this post is for those who do not know how and with what they eat, but have to cook it.

Maybe one day I will get used to the taste, and maybe even fall in love with this bean in its purest form. While I can eat it only in the form of a salad. With nuts and garlic, and ... well, more on that later)).

So, green beans with nuts and garlic. Salad is simple but quite tasty. The highlight of the bean salad are walnuts and garlic. Perhaps someone will say that garlic with olive oil will muffle the taste of beans. No, nuts and garlic add zest to the salad. By the way, this is not eggplant with garlic, so there should not be a lot of garlic. Slightly, just add a touch of garlic taste.

Ingredients

fresh green beans
  walnuts (roasted) - 0.5 tbsp.
  garlic - 2 tooth.
  greens (fresh, parsley, cilantro)
  cucumber (fresh, small) - 1 pc
  spices (pepper mixture, hops-suneli, to taste)
  salt (to taste)
  red bow (for decoration)
  olive oil - 2-3 tbsp. l

Cooking

Boil the beans to the desired softness in salted water (you can just in the water), someone likes to crunch, someone - to be soft, soft. I boil a little bit, while retaining some “crispiness”.

I indicated in the recipe “roasted nuts”. In fact, it means “dried in a pan or in a microwave”. Never miss this stage of working with nuts. Neither while cooking salads, nor for baking.

Walnuts, herbs, garlic chopped with a knife. Add olive oil.

Cucumber cut into thin strips.

Mix the beans and cucumber, season with salt and pepper to taste, season with walnut-garlic oil.

Lobio (Lobio) is a common name for bean dishes, translated from Georgian as “beans”. Every time you cook lobio from different varieties of beans, the taste will vary.

There are hundreds of recipes in Georgian cuisine, they are inherited with the proportions of "secret" ingredients.

What spices and seasonings are used to make lobio? From dry: black pepper, coriander, imereti saffron, hot red pepper, fenugreek, savory, bay leaf, marjoram, cloves, cinnamon; aromatic herbs: cilantro, parsley, celery, mint, basil, dill, savory; onions, nuts, tomatoes, garlic.

Ingredients:

String beans - 1 kg

White onion - 3 pcs

Tomato, ripe, large - 3 pcs

Sweet red pepper - 2 pcs

Spicy red and green peppers - 1 pc.

Garlic - 6-8 cloves

Walnuts - 1 tbsp

Fenugreek (utskho suneli) - 1 tsp

Coriander - 1 tsp

Imereti saffron - 1 tsp.

Red hot pepper - 1/2 tsp.

Black ground pepper - 1 tsp.

Vegetable oil - 3-4 tbsp.

Salt - to taste

Parsley and cilantro for serving

Cooking method:

Stage 1.

Prepare green beans. We wash, cut the stalks, cut the pods 3-4 cm long. Bring water to a boil, add salt and boil the beans to al dente. Throw in a colander.

Stage 2.

We will cut onion into half rings, red sweet pepper - in cubes, hot pepper - in slices, chop garlic, smash nuts (chop in a processor), add imereti saffron. Peel tomatoes, cut into cubes.

Stage 3.

In vegetable oil, fry onion, sweet pepper in vegetable oil until golden onion. Add the tomatoes, stirring, cook for 2-3 minutes. Send the prepared beans in tomato paste, mix. Cook for 5 minutes.

Stage 4.

Add fenugreek, red and black pepper, coriander, imeretinsky saffron, walnuts, garlic. Stir, season with salt. Leave the lobio for 2-3 minutes, then add the hot peppers and greens. After mixing, leave for 15 minutes.

Stage 5.

Lobio made of green beans with walnuts (Lobio) can be served hot for a side dish with meat dishes. Chilled as a salad or appetizer, so cooked beans are no less interesting.

It turns out very interesting. Vegetables and legumes are soaked with the aromas of spices and become especially tasty. Be sure to try to repeat this recipe, it will not leave you indifferent!

Recipe

    Step 1: Cut and boil the legumes

    Bean we will sort out and wash it. Cut the tips, cut the beans into segments of a length of 3-4 centimeters.

    Pour cold water into a saucepan, add salt and set it on fire. When the water boils, pour out our blanks into it and boil them for 5-7 minutes depending on the type of beans.

    Then we add some hot water and fold the beans into a colander. Fill it with ice water and leave for 5 minutes. Thanks to this, legumes will retain their beautiful green color and remain juicy. If you use frozen green beans, you do not need to defrost it beforehand. It is enough to pour it with warm water to get ice from it.

    Step 2: Cut and fry vegetables

    A large onion will be cleaned and cut in half. Cut it into thin semirings. Garlic cloves, peel, wash.

    Put the non-stick frying pan over medium heat. Put a piece of butter in the pan, add a flavourless vegetable oil. When the butter is melted, put the chopped onion into the pan and let it sauté over low heat until golden.

    Then add the garlic cloves passed through the press. Fry the vegetables together for a minute.

    Step 3: Add chopped nuts

    Walnut kernels chop. This can be done with a blender or knife. You can also pour the nuts into a tight plastic bag and detail the core with a rolling pin.

    When the onions with garlic are roasted and podzolot, add chopped walnuts to them. We warm the ingredients together for 1-2 minutes.
