The recipe for a delicious cabbage salad with carrots "as in the dining room"


So, for the preparation of cabbage salad with carrots, as in dining rooms, you will need:

      • 600-700 g of white cabbage (1 medium forks)
      • 2 pcs. medium sized carrots
      • 4 tbsp. l vinegar 3%
      • 2 tbsp. l vegetable oil
      • 6 g of salt (approximately 1 tsp. With a small slide)
      • 1 tbsp. l granulated sugar (no slide)
      • Fresh herbs - dill, parsley

How to cook

The first thing to do is cabbage. Rinse it well, remove the top shabby leaves, wash again.

Now we will chop. One of the little secrets of a delicious coleslaw is the most delicate and even shred. If you have a firm hand and a sharp knife, then to achieve such a result is not difficult. But even better if you have a special device for cutting vegetables. In a word, in any way convenient for you, finely chop the cabbage. The finer you chop, the better the cabbage salad will be soaked in marinade and will become like a real “Stolovsky” one.

Then take an enameled pan and pour shredded cabbage into it. What exactly is enameled for? And here we just come to the mysterious magic phrase Fairy waitresses. It turns out that this is one of the main secrets of our recipe - chopped cabbage must be slightly warmed up in the marinade. Do not put out, do not fry, namely heat.

How will we do this? First, pour the right amount of salt into the pot with cabbage. The finer the grinding, the better. If the white-headed vegetable is not of its first youth and is too harsh, you can slightly mash the cabbage with your hands, rubbing it with salt. If the cabbage is fresh, young, then do not overdo it, otherwise it will turn out to be too soft, having lost its seductive "crunch".

Then measure out the right amount of tablespoons of vinegar and pour it into the pan. Vinegar is better to take the usual table. But if you want to make the salad as useful as possible, you can completely replace it with apple or even rice. If you have 9% vinegar, then you first need to dilute it with water in the right proportions: 1 tablespoon of vinegar - 2 tablespoons of drinking water. You can also mix salt with vinegar in advance and only then pour it all into a pan with cabbage.

Thoroughly mix the cabbage with vinegar. Then put on a stove on a very small fire and, stirring constantly, warm up for a minute or two. The younger the cabbage, the less it needs to be warmed up. When the cabbage begins to slowly sink to the bottom - it's time to turn off the fire. Let the pan stand a little longer on the stove, gradually cooling. In this case, the cabbage settles a little more, after which it can be transferred to a separate bowl for salad.

In the meantime, let's take a carrot. To make everything as tasty and healthy as possible, try to avoid sluggish and pale-colored root crops. Better take a bright and juicy carrot. Wash it, rubbing it with a brush, clean, wash again. Now cut into thin strips or grate. A shredder with special nozzles here can also come in handy and simplify your task. Pour the chopped carrots to the cabbage and mix.

Now you need to season our salad. Pour sugar from it, pour in vegetable oil. Try it: maybe something is missing? Perhaps you need to add up. Mix everything well. By the way, about the oil. It is better to give preference to odorless vegetable oil. To get the “same salad”, it’s best to take the well-known sunflower oil for all of us. But in the future, when you already have your hand, you can experiment. For example, dress the salad with olive oil, especially the first extraction. Or a mixture of sunflower and olive oils.

ON A NOTE

A pleasant nutty flavor will add pumpkin seed oil to the salad. You can also season the dish with spices to taste - for example, black ground pepper, as well as ground red (literally on the tip of a knife). Well proven in combination with cabbage, allspice and nutmeg. And be sure to sprinkle the salad with washed and finely chopped fresh herbs - dill, parsley, you can add the feathers of green onions.

Mix well again and refrigerate for at least half an hour, or even better - for an hour or two. After standing in the cold and soaking properly, it will turn out exactly the way it should!


If a lot of excess fluid forms in the salad, carefully drain it.
