  • dry yeast - 1/3 tbsp. l

Order of preparation:

  1. Rinse the rice in cold water and pour 1.2 liters of water. Use glassware.
  2. Leave the rice warm for 4–5 hours, and then transfer to cold for 4 days.
  3. Strain the rice and add 900 grams of sugar.
  4. Insist on a water bath mixture for 30 minutes, then cool and pour into a jar.
  5. Add the yeast previously diluted in warm water, as indicated in the instructions on the package.
  6. Infuse the mixture for a month (do not cover the jar with a lid, but use gauze for this).
  7. Strain and boil the composition.

The volume will be sufficient for several applications.

Rice vinegar is also used for marinating seafood and fish. It is better suited for such products, as it does not drown out their natural aroma and taste, but only adds a touch of sourness.

Options for pickling meat, fish, ginger

When pickling ginger, traditionally used rice can be replaced with apple or grape vinegar, diluted to 4% concentration. Magazines have a concentration of 9%. To get a solution of 4% concentration, you need to dilute them with boiled water: 1 part vinegar 1.5 parts water.

Of course, traditional recipes include rice vinegar, but having tried this version of the mixture, you will definitely not refuse it.

So, to make an unusual dressing, we need this set of products:

  • Apple cider vinegar - 4 tbsp. l .;
  • Ordinary vinegar - 1 tbsp. l;
  • Salt to taste;
  • Sugar - 4 tbsp. l

Rice dressing in the indicated quantity is designed for approximately ½ kg of boiled rice.

For a long time I bought expensive special rice for sushi, until once I set out to make home-made sushi and rolls more budgetary. Then I decided to try to find ordinary round rice, and try to make sushi from it. As the first (and last) variety, on which I tested my plan (and which I finally settled on), rice of the Mistral brand under the name Kuban was used (it is packed up to 900 grams). Sushi rice dressing is made from rice vinegar, sugar and salt, and it is extremely simple. 450 g of finished rice requires about 2 tablespoons. vinegar and 1 tsp. sugar and salt. Pour salt and sugar into rice vinegar and heat the mixture until they are completely dissolved, stirring over medium heat. Ready dressing you need to sprinkle rice, lightly mixing it with a wooden spoon or chopsticks for sushi.

Whatever rice you use for making sushi: special or regular round-grain, you need to rinse it well with cold running water until it becomes transparent. All pop-up rice need to be removed - according to the rules of the Japanese, only “bad” rice pops up in the water, and it should be thrown away. Of course, when washing the rice, you must also remove all garbage, all dark rice.

First, we’ll clarify right away: without certain products, rice for sushi is impossible to cook. These products are, in addition to suitable rice, rice vinegar and kombu seaweed (nori), without which it is also not possible to make the rolls themselves. You can buy algae for sushi and rice vinegar today in almost all major retail chains of any city: with the popularization of sushi and rolls, buying them has ceased to be a problem - you just have to look and you will surely find the right products. But rice for sushi does not have to be bought special.

For the preparation of rolls and sushi, you can use any round-grain rice. Often, what is sold in stores labeled “rice for sushi” is ordinary round-grain, and not at all, special Japanese rice. The use of ordinary round-grain rice for sushi is possible not in theory, but in practice, verified by many culinary specialists.

Sushi soy sauce for rice sushi reduces the risk of cancer and cardiovascular disease. It contains many vitamins, minerals and beneficial amino acids. Soy sauce helps improve blood circulation and boosts immunity. There are several types of soy sauce: - teriyaki - a classic dressing for sushi rice, in which sake, spices and honey are added. It can be used as a marinade; - soy sauce with Tsuyu - a good sauce for rice sushi, suitable for meat dishes.

The preparation of rolls and sushi is possibly complemented by the use of not only the wasabi root, but its stems and flowers. Wasabi for sushi is not only the sharpest seasoning in the world, a necessary attribute in the preparation of sushi, rolls, sashimi, but also the right ingredient. Real honwasabi interferes with the appearance of the carious process and tooth decay. The preparation of sushi is accompanied by the addition of wasabi, due to the fact that it has bactericidal characteristics and kills microbes in fresh fish.

Using this sauce, making sushi can change the taste. The mixture includes tuna, mirin, herring and classic soy sauce. - Okonomiyaki sushi rice sauce is a soy sauce with the addition of starch, spices and powdered sugar; - sweet and sour rice sauce sushi goes well with any fish dishes. It is possible to make it from pineapples, ketchup, plums, soy sauce. Wasabi for sushi Wasabi is a plant that is a kind of horseradish.

Making sushi and rolls using ginger makes the dish more juicy and delicious. Pickled ginger possesses not only good taste, but also the necessary features. It contains vitamins A, B, B2, C, amino acids and various trace elements. Cooking rolls and sushi involves the use of pickled ginger as a sushi rice sauce.

Rice is the basis of sushi and rolls. Not only the appearance, but also the taste of the final product will depend on how you cook it. It is no secret that for the preparation of sushi they use a special kind of rice with short grains. Now to buy such rice is not a problem; it is sold in large hypermarkets and specialized stores. Step 10: After the rice has cooked, transfer it to a wooden or plastic container of a suitable size. It’s important that you don’t break a lump of rice until you pour rice dressing on it. For 1 kg of ready-made rice you will need from 125 to 250 ml of rice dressing in my case. I use the entire volume of 2 kg of ready-made rice about 300 ml. Ready refueling for rice.

Step 9: After the vinegar heats up, add 90 g of salt. and sugar 210 gr. stir until completely dissolved and cool to room temperature. You will get a fairly thick dressing with a consistency similar to vegetable oil. It is the dressing that gives the rice its taste and the necessary stickiness for making sushi and rolls.

Step 5: Next we need rice vinegar. You can use vinegar from any manufacturer that you like best or have rice vinegar in your place, for example, you can’t replace apple or grape vinegar. need 250 ml of rice vinegar from it we will cook the sauce for dressing the finished rice.
