Here is an original, but at the same time as simple as possible recipe for a delicious apple pie from puff pastry Upside down. Ingredients:

  • 200 g of frozen puff yeast dough and sugar;
  • 10 medium-sized apples, and the more acidic the apples, the tastier the apple pie will be;
  • half a lemon;
  • 100 g butter;
  • 1 teaspoon cinnamon

You will also need a heat-resistant pan (preferably without a plastic handle) so that the pan can be moved directly from the stove directly into the oven.

Caramel apple pie upside down

Preheat the oven to 230 degrees. Defrost and roll the dough to a size slightly larger than the diameter of the pan.
  After rolling, put the dough in the refrigerator so that it does not fit.

Peel the apples, cut the core. Cut the prepared apples into halves and sprinkle the juice with half the lemon.

Melt the butter in a skillet, put cinnamon or vanilla and granulated sugar there. Stir until the sugar dissolves and turns it into caramel.

Is the caramel mass ready? Remove the pan from the stove, carefully place the apple slices in it as tightly as possible to each other, put the slices on the edge. Put the pan back on the stove on the smallest fire for about 25 minutes.

Caramel will begin to boil, increase in volume due to the secreted apple juice. After 25 minutes, remove the pan from the stove and let cool slightly.

On the other hand, even if something doesn’t work out a bit (for example, I overexposed caramel), then during the baking process it will all be corrected and the cake will turn out delicious. So feel free to bake Tart Taten according to my classic recipe.

5-6 unsweetened apples,

For caramel:

150 gr. oils

120 gr. sugar or powder

For the test:

flour - 200 gr.,

oil - 100 gr.,

egg - 1 pc.

  1. Melt one hundred and fifty grams of butter and 120 grams of sugar or powder in a pan. The mixture should turn light brown. Pour into the form where you will bake the cake (or immediately make it in the form).

2. Cut the apples into slices and lay them in a second layer on a caramel mixture. At this stage (while making the dough), you can put the mold in a 180 degree preheated oven for about fifteen minutes, then the cake will be cooked faster. But it is possible without this.

3. For the dough, chop 200 grams of flour and 100 grams of butter or chop into crumbs.

4. Add 1 egg, spread the dough.

5. Roll it in the shape of a circle and cover the apple layer, tuck the edges, if necessary, inward.

6. Put back into the oven for about twenty minutes until tender and golden brown.

Tart Taten Changeling Pie

The famous French dessert has its own story. It is named after the sisters named Taten, who ran a small hotel. According to legend, the cake, which received worldwide recognition, was baked completely by accident.

It is believed that one of the sisters, preparing a dessert, forgot to put the dough out of oblivion, laying apples and sugar directly into the mold. When the error was discovered, the woman decided to rectify the situation, and laid the dough on top of the filling. And when serving, turned the dessert over apples and caramel formed from sugar up. The guests liked the new version of the cake so much that they began to cook it constantly. And over time, the recipe has spread throughout the world.

To cook Tart Taten, you will need a small set of products:

  • 200 gr. flour;
  • 100 gr. butter for dough and 120 gr. For filling;
  • 1-2 tablespoons of ordinary cold water;
  • 800 grams of apples;
  • 5 tablespoons of sugar;
  • 2-3 tablespoons of lemon juice;
  • 0.5 teaspoon ground cinnamon.

Let's start by making the dough. We get the oil from the refrigerator, cut into cubes. Spread in a deep container. Sift the flour from above and quickly grind with your hands until a homogeneous crumb is obtained.

Pour in water and quickly knead the dough. First, pour 2 tablespoons of water and start kneading, if there is not enough liquid, then gradually add more water. The dough is false to get soft, but elastic, lagging behind the hands. Do not knead for a long time, the heat of the hands will melt the butter and the dough will become “clogged” with flour. We wrap the kolobok from the dough in a film and put it in the refrigerator on the top shelf.

Now we start cooking the filling, consisting of apples with caramel. Put soft butter in a pan and mix with sugar and cinnamon. Then put on a slow fire and melt. Do not interfere with the mass with a spoon, only occasionally shake the pan to mix the mass.

Advice! To make caramel, use a pan without plastic parts so that you can bake a pie in the oven.

Peel the apples, cut into 8 parts with thick slices. As soon as the sugar turns light yellow, put the apples in the sweet mass. We continue to simmer on low heat for 10-15 minutes. Apple slices need to be turned over so that they are covered with caramel on all sides.

Advice! It is very important not to overdo the caramel on fire, otherwise they will start to burn, and the dessert will turn out to be bitter.

Remove the pan from the heat and let the apples cool slightly. We take out the dough from the refrigerator, and open it into a layer that is slightly larger in diameter than the diameter of the mold. Gently cover the apples with dough, trying to fill the edges of the tortilla along the sides of the form, that is, we form a kind of inverted bowl.

We pierce the dough in several places with a fork. And we send the workpiece to a well-heated oven (recommended temperature - 190 degrees). Baking time is about 40 minutes.

We cover the finished dessert with a dish and turn it over so that the apple-caramel filling is on top. We decorate the dessert with powdered sugar and mint leaves.

This dessert is no less popular and the same has a beautiful history. There is a legend that a dessert was invented by a young English confectioner, in love with a girl named Charlotte. To please his beloved, the guy came up with a beautiful and delicious dessert and named it after his bride.

I must say that the classic charlotte was prepared from white bread soaked in wine or syrup. They were laid out in a form, layering with fruit, and poured with a mixture of eggs with milk. Later, charlotte “a la russe” (Russian charlotte) began to be served in French confectioneries; for its preparation, not bread was used, but biscuits topped with fruit and cream.

Later, sponge cake with apples began to be called charlotte. It can be prepared on the principle of a shifter.

To prepare one of the options for charlotte, you will need:

  • 5-6 apples;
  • 150 gr. flour;
  • 150 gr. Sahara;

  • zest of orange.

  Cut apples into thick slices. Beautifully lay on the bottom of the form. Do not forget that this will be the top of the cake, so you need to lay out as carefully as possible.

Now we start preparing the dough. We break the eggs, mix them with salt, regular and vanilla sugar. Beat with a mixer for about five minutes. If you beat it by hand, then with a whisk you will have to “wield” at least 15 minutes.
  Sift the flour directly into a bowl with a lush mass, mix, add the zest of orange and thick fat sour cream. Pour the finished dough over apple slices, level.

We put in the oven for 35-40 minutes. We take out the finished dessert, cool it slightly and turn it over to the dish.

Lean Apple Changeling Pie

During fasting, you can please your family with delicious apple cakes. However, even those who do not observe fasting will like a lean change-over pie.

Prepare the products:

  • 3 apples
  • 1.5 cups flour;
  • 3 tablespoons of sugar in the dough and 2 tablespoons for making caramel;

In a stewpan, mix water, sugar and honey. Heat on low heat until sugar is completely dissolved and the caramelization process begins. This will take about 5 minutes.

Pour caramel into a ceramic or glass form, greased with oil, and then put apple slices, dipping them in caramel. On top of the apples, spread the apple dough, gently spreading it on the surface.

From puff pastry

It’s easy and simple to cook a flapper from puff pastry. Unless, of course, buy it ready in the store, and not try to cook it yourself according to the classic recipe. We will bake the cake in a square or rectangular shape.

We will need:

  • packing puff pastry yeast-free;
  • about 1 kg of apples;
  • 120 gr. butter;
  • a quarter cup of sugar;
  • 0.5 teaspoon of cinnamon;
  • several berries of cherries, cranberries or lingonberries (for decoration), you can take frozen berries or jam.

We clean the apples by carefully cutting the skin with a thin layer, using a special knife we \u200b\u200bcut out the seed box, leaving the whole apple. If there is no special knife, then you can cut the seeds with an ordinary, but long and thin knife. Cut apples into round “washers” about 1 cm thick.

In a stewpan with a thick bottom or in a frying pan, cook the syrup and 3-4 tablespoons of water and half a glass of sugar. We are waiting for the beginning of the caramelization process (the color of the syrup becomes light beige). Pour the syrup into a mold in which we will bake the changeling.

Gently spread apple "washers" in hot syrup in even rows. Sprinkle with cinnamon and the remaining sugar. On top of apples, lay out pieces of butter, distributing it on all surfaces of the form.

We roll out the puff pastry according to the size and shape of the baking dish, the thickness of the layer should be about 0.7 cm. We cover our apples, turning the edges of the layer along the sides of the mold inward, as if wrapping the filling with dough. Thoroughly prick the dough with a fork and send the form into the oven. Bake for about 30 minutes in the oven (at 180 degrees). The dough on top should lighten. Let the dessert cool slightly and turn it over to the dish. To make our dish especially beautiful, we’ll insert a berry in each hole of the apple “washer”. Dessert can be sprinkled with powdered sugar on top.

It’s a joke, because it’s not every day that we cook pies with the filling down - at first glance this is generally nonsense. But do not rush and by the end of the review you will certainly learn how to make a changeling with a tasty and juicy filling.
