Dishes for New Year of the Monkey:

Snack called Strawberry

Despite such a “sweet” name, the presented appetizer is not a dessert, but justifies its title as a snack dish. The appearance of an unusual snack can be misleading, because it is so similar to strawberries.

By choosing this unusual appetizer, you run the risk of being known as an original cook, and, as you know, originality is a quality inherent in a monkey.

Products for cooking:

• Potatoes - 3-4 pcs;
• Salted herring fillet - 1 pc;
• Onions - 1 head;
• Sesame seed - 0.5 tsp;
• Beetroot juice - 150 ml;
• Parsley greens.

The recipe for such an appetizer is quite simple, just what is needed - boil the potatoes directly in the peel. Peel the finished potatoes and rub on a fine grater.

For the filling: cut herring fillet and onion. From a grated potato to form a small cake, inside which to put the filling.

To shape the strawberries, and for the pain of truthfulness, dip it in beetroot juice. At the end, sprinkle the resulting “berry” with sesame seeds and make a parsley tail.

As I already wrote, squid salad is always on our New Year's table, but since there are practically no vegetables in the classic recipe, I would like to try this option.

Squid salad with vegetables

Products for cooking:

• Squid - 500 grams
• Carrots - 2 pcs.
• Onion - 2 pcs.
• Vegetable oil - 4 tbsp. spoons
• Fresh cucumbers - 2 pcs.
• Ground red pepper - a little bit
• Garlic - 4 cloves
• Vinegar 9% - 2 tbsp. spoons
• Water - 2 tbsp. spoons
• Greenery

Cut the onion in half rings, marinate in a mixture of water and vinegar. Chop raw carrots with thin strips. Remove the onion from the marinade, let the liquid drain, mix the onion with the carrot, and pour the boiling vegetable oil. Let the vegetables stay in it for 20 minutes.

Boil squids in boiling water for no more than four minutes so that they do not become hard. When the squids have cooled, cut them into thin strips.

Cut the cucumbers with straws and salt, mix with the garlic passed through the garlic press.

Mix all the ingredients. Pepper the salad, add salt if necessary. Garnish with any fresh herbs before serving.

Since I am sure that without mayonnaise, they will not allow me to salad on the table ((therefore, I will season a portion of the salad with a small amount of mayonnaise.

Pork rolls with pineapple

Choosing a hot one often becomes a problem, especially on New Year's Eve, because you want it to be not only satisfying and tasty, but at the same time unusual and long remembered. Pork rolls with pineapple - a solution that many people will like for its interesting presentation and ease of preparation.

Products for cooking:

• Pork - 0.5 kg;
• Canned Pineapples - 1 small can;
• Hard cheese - 100 gr;
• White wine, pineapple juice, meat broth - 150 ml each;

Prepare pork meat, as for chops - cut into portions and lightly beat. Finished chops with salt and pepper.

For the filling, mix the diced pineapples and the grated cheese. Put the finished stuffing on the meat, which is subsequently rolled up and secured with skewers. Fry the obtained rolls in a heated skillet in oil.

Transfer them to a deep pan and pour a mixture of wine, broth and pineapple juice. Bring to readiness in the oven for 20 minutes.

Fruit salad

Products for cooking:

• Oranges - 4 pcs.
• Banana - 1 pc.
• Apple - 1 pc.
• Peach (fresh or canned) - 1 pc.
• Lemon (juice) - 0.5 pcs.
• Sour cream - 4 tbsp. spoons
• Powdered sugar - 3 tbsp. spoons.

Cut prepared fruits: banana into thin slices, apple (peel) with thin strips, peach and pulp of orange in small pieces. Combine everything, sprinkle 2 tbsp. tablespoons of powdered sugar, pour over lemon juice, mix gently, put in a bowl, put in the refrigerator.

Beat sour cream with 1 tbsp. a spoonful of icing sugar, before serving, garnish with this mixture fruit salad.

Baked Beetroot Salad with Goat Cheese and Raspberry Sauce

The recipe for this salad is striking in its originality, but at the same time its simplicity. In addition, it turns out to be tasty, economical and most suitable for the tastes of the mistress of the coming year.

Products for cooking:

• Beet;
• Goat cheese;
• Frozen raspberries;
• Balsamic vinegar;
• Olive and linseed oil;
• Pine nuts;
• Sugar;
• Thyme.

We add the beets in salt for about 1 centimeter, sprinkle with thyme and send them to bake in the oven. This is necessary so that at the time of baking the salt takes excess moisture from the beets. Keep in the oven until ready.

While the beets reach their readiness, we are engaged in raspberry sauce. To do this, send raspberries and sugar to the fire, but do not bring to a boil. After removing from heat, immediately grind with a blender and wipe through a sieve in order to get rid of small seeds. We dilute the finished mixture to taste with balsamic vinegar, olive and linseed oils. Do not forget to pepper and salt.

Peel the baked beets and cut them in any shape. We spread it with goat cheese on lettuce leaves. Sprinkle with basil and pine nuts on top.

An original appetizer in which the chef did not use exotic ingredients, but simple and affordable, which he served in a festive form.

Products for cooking:

• Hot dog buns - 6 pcs.;
• Meat and sprat paste - 100 grams each;
• Processed cheese - 100 grams;
• Egg - 1 pc.;
• Olives, preferably stuffed - 6 pieces;
• Kernels from 6 walnuts;
• Pickled cucumbers, fresh herbs;
• Mayonnaise - 3 tbsp. spoons.

Cut the tops from the buns, cut each bun in half across. To take out the crumb leaving the bottom, 12 identical blanks will come out.

Cooking three different toppings. 1st: meat paste mixed with finely chopped cucumber. 2nd: mix the crumbled protein of a boiled egg with a sprat paste. 3rd: grate the cream cheese, add chopped walnuts and chopped greens.

Fill the bun halves with different fillings, decorate with olives.

To make the barrels crispy, oil the buns before stuffing and keep them in the hot oven for a few minutes.

Chicken Breasts with Bell Pepper

From your favorite chicken, cook interesting pepper rolls that can be served as a hot appetizer or as a main dish.

Products for cooking:

• Chicken breast - 3 pcs.;
• Sweet bell pepper - 3 pcs. If you take pepper of different colors, the snack will turn out to be more beautiful and festive;
• Vegetable oil, favorite spices.

Cut the breasts in half lengthwise, not beat off, salt and roll in spices that you like more. Cut the pepper into thin strips, put on chicken meat and roll it from a wide edge to a narrow one.

Strongly heat vegetable oil in a pan, fry the rolls on both sides until golden brown. Cover the pan and put out the rolls on the smallest fire until cooked.
