Cooking:

1. As always, clean the squid and boil in salted boiling water for 2 minutes. Then cool and cut into strips.

3. Adyghe cheese is better to choose unsalted, salty will not allow all other tastes to manifest. We need to cut it into thin strips.

4. Pepper is also cut into strips, after having previously removed the stalk with seeds.

5. Combine all chopped components in a bowl. Add sugar, salt to taste, about half a teaspoon.

6. Season with sour cream and mix. Let stand for 10 minutes, then mix again and put the slide on a flat plate or in a not very deep salad bowl.

We will need:

  • squid - 2 pcs
  • crab sticks - 250 gr
  • mussels - 200 gr
  • peeled shrimps - 300 gr
  • red caviar - 3 tbsp. spoons
  • egg - 4 pcs.
  • mayonnaise - 200 - 250 ml
  • salt to taste

To decorate:

  • green onions
  • parsley
  • olives

Cooking:

1. Clean squid from film and viscera, place in boiling salted water and cook for 2 minutes. Then get the carcasses and place in cold water until completely cooled.

2. Cut them into strips.

3. Place shrimps and mussels in boiling salted water and cook for 2 to 3 minutes, then turn off the heat and let the seafood lie in the water for another 5 minutes. So they will be even juicier and tastier.

4. Boil eggs, cool and peel. Then remove the yolk, it is useful to us for other dishes, and cut the protein into small cubes.

5. Cut the crab sticks as well.

6. Combine all seafood and chopped egg, add half the caviar. Salt to taste and season with mayonnaise.


7. Put on a plate, garnish with the remaining caviar, whole shrimps, halves of olives and parsley leaves on top. Serve to the table. Eat with pleasure!

The combination of products in this salad is very unusual. When I first saw this recipe, I thought that there was too much of everything in it; But since I like to experiment in the field of cooking, I prepared it somehow for the holiday.

  • beef tongue - 100 gr
  • cheese - 100 gr

  • potatoes - 200 gr
  • canned peas - 150 gr
  • red bell pepper - 0.5 pc.
  • mayonnaise - 250 gr
  • mustard - 1 tbsp. a spoon
  • salt to taste

Cooking:

1. Squid peel and boil in salted water for 2 minutes. Then briefly immerse in cold water. Then get it, dry it with a paper towel and cut into cubes.

2. Boil the tongue until cooked and peel. Cool and cut into strips. Similarly, chop the cheese.

3. Mushrooms cut into cubes, bell pepper strips.

4. Boil potatoes and eggs until tender, cool, peel and cut into small cubes.

5. Throw the peas onto a sieve so that all the liquid is in the glass.

6. Mix mustard with mayonnaise.

7. Mix all the ingredients in a bowl, add a little salt and season with mustard - mayonnaise sauce. Stir, try and salt if necessary.

  How to easily and easily clean squid

As you managed to notice, each recipe begins with the fact that first you need to clean and boil the squid. The time of cooking itself and, of course, the taste of the finished dish as a whole depend on how quickly and correctly we manage this task.

So, probably everyone knows that if you digest squid, their meat will become tough, chewing badly and tasteless. Therefore, in order not to spoil the product, you need to know a few basic rules

I suggest that you familiarize yourself with the video, which gives one of the traditional methods of cleaning and cooking squids, and below I will describe more ways that can be done.

As you can see from the video, everything is done quite simply. And now I will describe in more detail.

On the shelves of our stores mostly sold already peeled frozen squid, and we are accustomed to deal more with such a product. Non-frozen mollusks are sold with head and tentacles. Therefore, the cleaning methods of these two products are slightly different.

If you purchased whole carcasses, then they need to cut off the tentacles. After cleaning, they can also be used for cooking. Then, holding with one hand the carcass and the other with the head, you need to gently pull it. This action will make it easy to remove the head along with the insides.


Now, in both cases, we have whole carcasses with which we still have to work.

If you use frozen carcasses, then of course, they must first be thawed. This is best done at natural room temperature. Use a microwave to nothing, so as not to destroy the delicate structure of meat.


There are three cleaning methods:

With a fresh carcass, the film is removed in one motion. But with the frozen one you have to tinker a bit.

  1. Such carcasses have a surface film of a characteristic brownish-pink color. It can be removed simply by picking up with a knife. But it takes a considerable amount of time.
  2. Therefore, you can use the method proposed in the video, that is, put the carcasses in boiling water and boil for 2 minutes.
  3. But, personally, I prefer to use the third method. It provides for the filling of mollusks with boiling water. As a rule, with this method, the upper film immediately begins to curl. It is necessary to hold the carcasses in boiling water for two minutes, but no more.


Then the carcasses should immediately be placed in cold or icy water. And you can put them in a colander under running water. At the same time, part of the film can be easily washed off with water, and another part can be easily removed with a knife, just scraping the surface.

The fact is that if you leave them to cool in a natural way, the heat treatment process will occur until the meat has completely cooled. And our task is only to remove the films, we do not need additional heating of the meat. We will deal with this a bit later.

Already peeled and washed carcasses are usually white, or slightly creamy. However, there is still a very thin film on the outer and inner surface that you just won’t see, but gently picking it up from the edge, it can easily be pulled by a rather long layer. This film also needs to be removed.


This almost invisible thin film, if not removed, can play a trick on us. It is she who does not make it possible to get tender and tasty meat at the exit. This is a secret that not everyone knows and naturally, not everyone removes it. And then they say that squids should not be cooked at all, since they have no taste.

And so before us is a whole carcass cleansed from the outside. If you use it for a salad, you can make a transverse incision and clean it also from the inside. If you use the carcass for stuffing, then you will not be able to cut it, so you will need to carefully turn it out and clean it from the inside.

Inside, we will definitely need to remove the chitin chord, it has a transparent color and is quite long and dense, but pulling it from the bottom, it is quite easily removed.

Also, sometimes inside the remains of the entrails, which also must be removed. And again, we need to remove the thin transparent film.

After all manipulations, the carcasses should be washed thoroughly again.

  How to cook squid

There are also three ways to cook squid. And now we will all consider them.

  • 1. Place the carcasses in cold water, salt the water, bring it to a boil, and cook for 1 minute. Such carcasses will cool at room temperature.

The disadvantage of this method is that it is not recommended to leave the pan during the entire process. Squids should cook for exactly a minute, and nothing more. The time is calculated from the moment when the first “bulks” appear on the water. Otherwise, the meat will turn out tough.

  • 2. Place carcasses in boiling salted water, cover with a lid, bring to a boil again. Then open the lid and cook another one and a half - two minutes. Then immediately place in cold or ice water to stop the thermal cooking process.


This is the easiest and fastest way in which the meat is tender, soft and very tasty.

  • 3. Pour peeled carcasses with boiling water and let lie for 1 minute. Then drain the water, rinse the carcasses thoroughly. Then pour boiling water again, and again stand for 1 minute. Then do it all again.

In the last fill, water must be salted.

Clams should always be cooked in salted water. The structure of meat is such that then it will no longer be salted, it will not absorb the right amount of salt. And the desired taste will not get it.

The disadvantage of this method is that it is the longest in time. Three times you need to boil water, and three times soak for a minute. However, if there are a lot of carcasses, then this method can be justified. I will explain why.

Squid should be boiled in a large volume of water. Moreover, each time lower in water no more than two carcasses.

This is necessary so that the water heats up faster and the heat treatment process is minimal. If you put three or more carcasses in a pan, the heating process will be longer, and the meat will simply lie down in hot water, it will not really cook to the desired state, and it can become tough before it can cook.

Therefore, if there are a lot of squids, then with the second method it will also be a long time.

To the taste and softness of meat, squids cooked by any of these three methods do not differ in taste. Therefore, you can safely use any of them.

Sometimes they ask a question - what to do if squids turned out tough? They didn’t notice time, forgot about them and digested it ...

Never throw it away! Simmer them for at least another hour, or even two hours. The meat will again become soft, this is how a canned product is prepared. But this is only as a last resort, all the benefits and taste are just in a properly prepared product ..

From all that has been said, it can be concluded that cleaning and cooking squids is not so difficult. Having tried once, you yourself will understand this. It is enough to know only the basic techniques and rules, however, as elsewhere.

- 1.5 tbsp 9% vinegar;

- 2-3 bay leaves;

- 2 tbsp vegetable oil;

- 1 tsp salt;

- 1 tsp granulated sugar;

- 300 g of water.

Rinse the peeled squid carcasses and cut them into rings in the bowl.

Pour in the stewpan all the necessary spices, except liquid, and pour water. Boil everything and fill the clam rings. Pour liquid spices into the container immediately. Stir everything so that the squids are wrapped in marinade and put in a cool place for 3 hours.

This squid appetizer is adored by everyone, but most of all by beer lovers, as it is an ideal dish for serving under this foamy drink! The rings are fried in just a couple of minutes, but they fly off the plate just as quickly, so try to cook the maximum number of rings in batter at a time so that you don’t run a few more times to the kitchen.

You will need:

- 2-3 carcasses of squid;

- 1-2 tbsp ordinary water;

- 2 tbsp wheat flour;

- salt to taste;

- 150-200 ml of sunflower oil.

For snacks, it’s best to choose already peeled squid carcasses that are sold frozen. Thaw them beforehand and cut into rings approximately 0.5 cm wide.

In a bowl, mix the chicken egg with water, salt and wheat flour, whisking them in a batter.

Pour sunflower oil into the container (immediately pour everything so that the rings do not stick to the bottom) and place each ring into it, after dipping it in batter.

Fry for a couple of minutes on each side and put on a plate covered with a paper towel - all the excess fat will drain into it.

Serve the fried rings in any form - they are incredibly tasty.

3. Stuffed Squids

You can talk a lot about this dish, but it’s much tastier to try it. You can choose your own filling according to your taste: potatoes, rice, mushrooms, eggs, etc. Boiled rice mixed with other foods is ideal for stuffing.

You will need:

- 2 carcasses of squid;

- 0.5 onions;

- 1 carrot;

- 100 g of rice;

- 100 g of crab sticks;

- parsley;

- salt to taste;

- 10 ml of vegetable oil.

Cut the crab sticks into small cubes.

Boil the rice until cooked for 20 minutes.

Grind onions and carrots on a fine grater and grind in vegetable oil for about 5 minutes.

Pour the preserved vegetables into the rice.

Then add crab sticks there.

Grind the herbs and add salt. Stir the minced meat and stuff it with peeled squid.
