You can also drink chilled tea. If there is a desire to warm up, in no case do not allow boiling. The finest aroma will disappear immediately. Drink without sugar, use raisins, dates, dried apricots, honey, halva instead.

The second method of brewing willow tea

Fresh leaves of willow-tea are placed in enameled dishes with a layer of 3-5 cm, then they are poured with purified water at room temperature (up to 10 cm), after which the infusion is put on a low fire and heated. The next step is to insist the resulting composition for 10 minutes.

As a tea leaves, you can also take a mixture of leaves with flowers: half a liter of boiling water, a mixture of flowers and leaves of Ivan tea 2: 2 (teaspoons).

When to collect and how to dry ivan tea?

Ivan tea is harvested during the flowering period, it is important to collect grass at a time when the flower brush has not yet fully blossomed. Flowering begins in late June and continues until the fall. In August, beans are ripened on the lower branches of Ivan-tea, inside of which there is unpleasant fluff. This fluff should not be collected.

The collection is recommended to be carried out in dry weather, do not start it immediately after rain. Unsuitable for collecting dusty, dirty, sick, affected plants. Ivan tea, growing along busy roads, is not intended for medicinal use.

The aerial part of the plant is suitable for the preparation of medicinal infusions and decoctions, so during the collection it is cut or broken in the middle, sometimes closer to the ground.

Flower brushes are gently spread on the floor with a thin layer (about 5 cm), after which they are twisted into a roll and squeezed in order to separate the juice. The roll is left for 8-10 hours in a room where the air temperature is 20-25 degrees.

The fermentation process can also be carried out in a wooden box, folding compressed flower brushes into it and, to save moisture, covering it with a wet cloth. After time, the grass is dried in the oven at a temperature of no more than 50 ° C.

In early May, you can collect the tops of young shoots, from which you can make tea of \u200b\u200bexcellent quality. This tea has an amazing ability to regain strength and restore energy reserves.

Ivan willow seeds

Seeds of willow-tea are collected in a small box, ripen in the period from July to August. On one plant, up to 20,000 seeds can ripen simultaneously, a distinctive feature of which is the presence of a white tuft (fluff). Crest helps seeds disperse a considerable distance from the plant; a light blow of the wind is enough for this. Another distinctive feature of willow-seed seeds is the ability to grow even several years after ripening and getting on the soil.

In folk medicine, willow seeds are not used, therefore, they are of no value. The seeds are used exclusively for planting a plant in a certain area.


Fermentation Methods:

1. A simple way to ferment

The collection of plant material is carried out in the morning after the dew has dried. The topmost flowers are plucked, without seeds and leaves. If it is very hot, then the grass cannot be collected, because the leaves will deteriorate, “burn out”. Carefully monitor what you put in the basket, as a forest bug caught in raw materials can ruin the entire crop.

Leaflets and flowers need to be dried a little in a place where there is no direct sunlight, fray in the palms of your hands and compactly folded into a three-liter bottle. Cover with a wet towel and leave in a dark chilled room (up to 25 degrees) for 36 hours. After the specified time, the fermentation process is considered complete. The prepared mixture is loosened and dried at degrees +95 - +110. You can use both electric and gas oven.

During the drying process, the plant mixture is constantly stirred or turned over in the form of a dense layer. Gradually, the tea becomes the desired color, which varies from light brown to dark. Drying of friable tea in time occurs in different ways, this is due to the humidity of the grass at the time of collection. Readiness is recorded visually, that is, “by eye”. The drying time for round tea is determined by the weight of the dried tile. Raw mix and dry tea in finished form are 5: 1. Ready tea is stored in a dark, dry place, in a tightly closed container, preferably made of glass, but a plastic jar is also suitable. With proper storage, the shelf life is three years.

2. The Forgotten Way

A sheet of Ivan tea, a layer no more than 3 centimeters thick, is laid out on a moistened linen cloth, folded as densely as possible in the form of a roll (twisting). The size of the fabric depends on the amount of grass. Do not forget to moisten the fabric with clean water. This can be done from the most conventional spray gun. In the opposite case, the napkin absorbs the most valuable juice from the leaves of the fireweed herb.

The twist is pulled together with a rope, for which a rubber cord is also suitable. We carefully rub the grass in our palms, making flexion and extension movements for about half an hour. It is advisable that this event be attended by two. In this process, the destruction of plant structural cells and the impregnation of plant material with juice is observed. Then two to three hours is the primary fermentation. The temperature of the twist is checked by palms. If you feel warm (about 37-38 degrees and above), the initial fermentation process is completed. The mass has a delicate smell resembling a sour stewed pear compote.

Young plant tops collected in May are so fragile and sensitive that structural changes begin even during compaction in the container.

If you click on the raw materials, you can hear a characteristic sound, similar to a crunch. The mass is tightly packed in a container (plastic bucket or glass jar) and closed to complete the fermentation for 36 - 40 hours. In order not to spoil the final product, on the lid of the container it is best to write the date and time of the bookmark, and the end of the process. If necessary, you can give the tea a more refined taste, extending the fermentation time in a chilled place. For the late harvest of Ivan tea in July - August, we carry out additional fermentation.

To this end, we extract the plant mass from the bucket and carefully rub with our hands until the juice appears.

An important point!

To facilitate the cooking process, you can skip vegetable raw materials through a meat grinder (remove the knives first), but keep in mind that both the healing properties and taste will be much worse, weaker.

Then we collect the treated mass in a heap and leave it for 6-8 hours at room temperature, covering it with a wet cloth. And when the mass under the fabric when pressed will resemble soft rubber - it's time to dry in the oven. The future tea spread out on a baking sheet is dried at an average temperature of 100 degrees, before the drying is completed, the degrees increase. This annealing, like coffee beans, will improve the palatability, make the tea more fragrant and beautiful.

Do not forget about the frequent mixing of the mixture. The oven should be ajar. Red bricks or ceramic tiles are placed under the baking sheet so as not to overdry the tea. This device works like a Russian stove and normalizes the temperature in the oven. This is a very important point, since it depends on how healing the drink will be.

Making Koporsky tea in the oven takes one and a half to two hours. In one day, you can get 300-400 grams of the finished product in dry form. The mixture in the tiles must be wrapped in compacted paper. Tea with a loose structure, stored for 3 years, in the form of tiles - decades!

3. Fermentation under oppression in own juice

All raw materials are divided into two parts (this includes the top of the plant and its leaves). Juice is squeezed out of one part using a press juicer. There is very little fluid, even if it is a modern Angel-type juicer. The second half of the raw material is placed in a ceramic-metal pan and the juice is poured there. Press on top of oppression. A characteristic feature of fireweed seeds is the presence of a crest (consisting of fluffs), due to which the seeds can fly to a considerable distance from this medicinal plant.

Useful properties of fireweed

In folk medicine, both the aerial part of the fireweed is used - leaves and flowers, and the underground part - the rhizome. The chemical composition of the leaves of fireweed contains a number of useful organic compounds: flavonoids, tannins (up to 20%), mucous substances (up to 15%), tannin of the pyrogall group (up to 10%), alkaloids (0.1%), coumarins, sugar, ascorbic acid (vitamin C), iron, manganese, provitamin A (retinol acetate).

Carotenoids, flavonoids, tannins, starch, and mucous substances were found in the chemical composition of the roots.

Recipe No. 1: 15 g of crushed medicinal raw materials (aerial parts of the medicinal plant) are filled with 200 ml of boiling water and insisted for 60 minutes, then filtered into clean dishes and taken in 1 tablespoon (15 ml) 3 times a day.

Recipe No. 2: 1 tablespoon of medicinal raw materials (roots and rhizomes) is filled with 200 ml of boiling water and insisted for 45 minutes, then filtered in a clean dish. Take infusion 3 times a day for 15 ml with insomnia.

Recipe No. 3: 1 tablespoon of medicinal raw materials (leaves) is filled with 200 ml of boiling water and insisted for two hours, after which it is filtered in a clean bowl. Take the medicine 1 tablespoon (15 ml) 3 times a day for anemia and 1/3 cup three times a day for chronic.

Recipe No. 4: 2 tablespoons of medicinal raw materials are poured into 400 ml of boiling water and insisted for 6 hours, after which they are filtered in a clean dish. Several hundred years ago, tea in Russia was an extremely rare and very expensive drink that only noble people and wealthy could afford. That is why ordinary people were looking for him a worthy replacement from what is growing in Russian land. As a result of long searches, tea from fireweed, which later received the name "Russian tea", gained great popularity.

For the first time, the aerial part of a medicinal plant was harvested in the village of Koporye, which is why tea was called Koporye. The drink gained great popularity among the common population of Russia, because it was several times cheaper in price than English and Chinese tea, and in taste it was not inferior to them at all.

The technology for making real Kopor tea includes several sequential steps:

  • collection;
  • withering;
  • grinding (either slightly crush or “tap” in the bag);
  • fermentation;
  • drying.

There is a second, simpler and faster method for brewing Kopor tea, it is just to pour dried leaves and flowers of the fireweed with boiling water and let the composition brew for 10-15 minutes, however, most of the useful properties of the medicinal plant will be lost.

Collection of the aerial part of the fireweed occurs during the period of active flowering of the plant. Leaves and flowers are collected and laid out separately from each other. Only the upper and middle leaves are torn off (without lower leaves), while the plant material is immediately separated from the stem (without tearing it).

The next stage is wilting. To do this, the leaves are laid out in a thin layer under the awning and left to dry for a couple of hours, after which the medicinal raw materials are manually twisted until the juice is released.

Then comes the fermentation time. To do this, the medicinal raw material is folded onto a baking sheet, in a pan, in a jar and left for several days at a temperature of 25 ° C. The container must be covered with a damp cloth and carefully monitored so that it does not dry out; for this, you will have to either moisten it regularly or replace the dry cloth with a damp cloth in time.

The final step in making Kopor tea is drying. As a rule, the leaves are dried in the oven at a temperature of 70 ° C for 40 minutes.

Ultimately, the leaves should completely dry and acquire a dark (almost black) shade.

Store dried fireweed leaves in a glass jar with a tightly closed lid. To brew tea from fireweed, it is necessary to pour 2 teaspoons of the resulting tea with boiling water and let them brew for 15 minutes.

Flowers do not require such a long and laborious drying procedure. To dry the flowers, they simply need to be spread out in a thin layer and dried in a dark place.

The main medicinal raw material of narrow-leaved fireweed are leaves, which have a number of unique healing properties. The healing infusions of the leaves of the fireweed have a pronounced anti-inflammatory, soothing and enveloping effect. Narrow leaf fireweed seeds are very small and numerous. One plant during the growing season can produce about 20,000 seeds. At the same time, the seeds retain the ability to germinate and grow for many years. In their chemical composition, fireweed seeds contain up to 45% fatty oil.

From a medical point of view, fireweed seeds do not represent any value, therefore, it is not used for medicinal purposes.

Mountain Cyprus

Mountain fireweed - is a perennial herbaceous plant of the family fireweed. Its stalk is single, erect, pubescent, in the upper part, as a rule, branched, height is 25-60 cm. Leaves are short-sessile (sessile), egg-shaped, with uneven margin. The flowers reach about 5–10 mm in diameter and are colored pink, purple or white (rarely). Flowers are collected in end brushes.

The fruit is a pubescent capsule 5–7 cm long. Mountain fireweed blooms in June-July, bears fruit in July-August.

The natural distribution range of mountain fireweed is almost the entire territory of Russia, Europe, Siberia and the Caucasus. This species grows in shady, damp places, in coniferous and mixed forests, as well as among shrubs.

In its chemical composition, the aboveground and underground parts of the medicinal plant contain tannins, which allows the healing infusion of mountain fireweed to be used as an effective hemostatic.

Mountain fireweed infusion

2 tablespoons of chopped medicinal raw materials are poured into 200 ml of boiling water and infused for two hours, then the resulting infusion is filtered and used for bleeding for 1 / 3–1 / 2 cup 3 times a day.

Firewood swamp

Swamp fireweed is a perennial herbaceous plant of the cypress family. A single erect stalk of a cylindrical shape in the upper part is covered with hairs. The length of the stem of the bog fireweed can reach 80 cm. The leaves are short-sessile (sessile), opposite, whole-marginal, their length is 2–9 cm. Small flowers of the plant are located at the ends of the stem and form a small brush. Petals are pink or white.
