Baked potatoes in foil. Marching variant of baked potatoes with different   fillers. Potatoes can be well washed with a brush or peeled. Make several transverse cuts on each potato, without reaching the end, to make something like an accordion. Put any products to your cuts to taste, add, pepper, wrap in 1-2 layers of foil as tightly as possible and place on the grill over the fire. Baking time depends on the size of the potatoes and the degree of heating (at least 20-25 minutes). Filler options:

Snack from pita or pita cheese.  Another hot picnic snack, which is prepared literally from everything that was. Take thin Armenian pita bread or pita buns, fill them with any filling and cheese grated on a fine grater, wrap in foil and bake on a wire rack for a few minutes to melt the cheese. Cheese can take ordinary, hard, not sour taste, or opt for suluguni, for example. Fillings can also be any - vegetables, herbs, fish, seafood, meat, sausage, etc.

Peel large champignons, brush with vegetable oil, salt and pepper. Strung on skewers and bake.

Make sandwiches: grease the bread with cream butter, put ham, sausage or baked meat, a slice of cheese and cover the whole structure with bread smeared with butter. Put 3-4 such sandwiches in a row on the foil, wrap and bake until the cheese melts.

At all foil  for a winter picnic - just perfect. It can be wrapped and baked in almost any dish. Before the trip, you can cook cutlets (and any - meat, fish or potato), fried fish or meat, boil dumplings or cook eggplant rolls. At a picnic, you will only have to put the finished products on the foil, sprinkle with cheese, add herbs, spices or garlic to taste and wrap more tightly. And bake for a few minutes!

Another quick snack is waffle sandwiches. For their preparation you need to buy ready-made waffles with a large pattern, spread them with minced meat or fish and put in pairs. Cut into small squares, dip in a beaten egg and roll in breadcrumbs. Fry in vegetable oil, and in nature, wrap in a few pieces in foil and heat on a fire.

  Prepare any fillings: mashed potatoes, cottage cheese mixed with greens and garlic, minced meat or fish, cheese with ham, liver, egg with rice or green onions, boiled heart, cod liver with boiled rice - fantasize! And the fillings can be different. Roll the finished puff pastry into a very thin layer and cut it into strips 7-8 cm wide. At the end of each strip, lay a spoonful of the filling and fold the triangle, pressing the corner. Continue to wrap the ribbon in triangles to the end. Spread out the prepared triangles on a baking sheet covered with baking paper, brush with an egg that is loose from 1 tbsp. water, and put in the freezer for 10 minutes. Then put the pan in a hot oven and bake until golden brown.

Kebab sauces are one of the main conditions for a great al fresco meal. You can prepare several sauces, your guests will appreciate your efforts. And in these divine sauces you can not only dunk meat. Sausages or even ordinary toasted bread with sauce and in the open air is something incredible!

Ingredients:
  1 stack ketchup,
  1/3 stack apple sauce,
  ¼ stack apple juice,
  ¼ stack apple cider vinegar,
  ¼ stack brown sugar,
  ¼ stack grated onions
2 tsp black pepper,
  ¾ tsp garlic powder,
  ¾ tsp ground white pepper.

Cooking:
  Mix all ingredients in a saucepan and bring to a boil. Reduce heat and simmer under cover for 15 minutes.

Ingredients:
  2 stack pitted cherries
  2 tbsp. orange juice,
  2 tbsp. sherry or dry white wine,
  1 tbsp. Sahara,
  1 tbsp. cold water
  2 tsp starch,
  1 tsp orange peel,
  ¾ tsp Dijon mustard,
  ¼ tsp salt.

Cooking:
  Combine the cherries, juice, sugar, orange zest, mustard and salt in a saucepan. Bring to a boil, reduce heat and simmer for 5 minutes. In a separate bowl, mix the water and starch and gently pour into the boiling sauce, stirring constantly. Boil the sauce until thick.

Ingredients:
  1 ½ stack finished mustard,
  ½ stack apple cider vinegar,
  ½ stack of brown sugar,
  1 tbsp. tomato paste,
  1 tbsp. salt,
  1 tsp black pepper,
  1 tsp red pepper,
  1 tsp white ground pepper.

Cooking:
  Combine all the ingredients in a saucepan and simmer for 30 minutes.

Ingredients:
  2 stack finely chopped champignons,
  1 stack of beef broth,
  ¼ stack whiskey
  3 tbsp. butter,
  2 tbsp. flour,
  ½ bunch green onions,
  1 tbsp. parsley
  1 clove garlic,
  1 tsp hot sauce.

Cooking:
  Grate the saucepan with a slice of garlic. Melt it 2 tablespoons. butter, add flour, mix and gradually add broth, stirring constantly, so as not to form lumps. Add the parsley, boil and set aside. Fry mushrooms and chopped onion in the remaining butter until soft, add whiskey, hot sauce and broth with flour. Simmer over low heat for a few minutes. This sauce is good for chicken.

Put a packet of large frozen shrimp in a large frying pan located on grate over a fire or barbecue, and let the liquid melt, merging it. As soon as all the ice has melted, pour the shrimp with vegetable oil, salt it, add spices, or just pour soy sauce and fry.

On skewers or skewers, you can cook not only a classic kebab, but also just fry sausages or sausages. Get a great snack in anticipation of the main course. As for drinks, you should definitely take with you a sufficient amount of clean drinking water, hot sweet tea (or brew and a teapot, which you should not smoke on a bonfire) and something hot.   Ingredients per serving:

  120 ml of apple juice,
  50 ml of red wine,
  1 tbsp. lemon juice
  2 carnation buds,
  1 sugar cube
  pinch of ground cinnamon.

Cooking:
  Combine apple and lemon juice with wine, add spices and heat to a temperature of 60-70 ° C. Strain the finished drink and serve in warm mugs.

Ingredients:
  1 bottle of red wine
  150 ml of cognac,
  100 ml of vodka
  100 g sugar
1 tsp ground cinnamon,
  ½ tsp ground cloves

  3-4 peas allspice.

Cooking:
  Pour the wine into an enamel saucepan, add sugar, spices and heat, stirring with a wooden spoon. Do not bring to a boil, enough temperature 50-60 ° C, add brandy and vodka and reheat again. Pour into a thermos and soak mulled wine for 1-2 hours. This mulled wine is well cooked before leaving the nature.

Ingredients:
  1 bottle of red wine
  1 orange,
  5-6 buds of carnation,
  3-4 black peppercorns,
  1 tsp honey
  a pinch of ground cinnamon,
  a pinch of salt.

Cooking:
  Slice the orange in circles with the peel. Pour wine over oranges and heat to 60 ° C. Add honey and spices, soak for about 10 minutes, strain and serve.

Toddy's hot cocktails differ from mulled wine in composition and preparation. If mulled wine is prepared on the basis of red wine, heating it with spices, then for Toddy all the ingredients are simply mixed in a mug. Before cooking Toddy, rinse the circles with boiling water.

Ingredients per serving:
  40 ml of gin,
  12 ml of lemon juice,
  60 ml of boiling water,
  1 tsp Sahara,
  cinnamon stick

Cooking:
  Pour all ingredients into a mug, mix and serve, garnished with cinnamon stick.

Hot Toddy with Tea

  Ingredients per serving:

  30 ml of whiskey
  1 tbsp. honey
  ¼ lemon,
  150 ml of boiling water,
  1 bag of black tea.

Cooking:
  Put honey in a mug, pour over his whiskey, add lemon juice. Separately brew tea and pour into a mug for alcohol. Stir and serve.

Ingredients per serving:
  1 stack hot water
  1 tsp dry tea leaves,
  1-2 tsp honey
  1 tsp lemon juice
  ¼ stack of whiskey (you can take brandy),
  a pinch of ground nutmeg,
  1 stick of cinnamon,
  lemon slice.

Cooking:
  Brew tea in a glass of boiling water and let it brew for 3-4 minutes. Put honey in a mug, pour in lemon juice and whiskey, pour in tea and let stand for 2-3 minutes. When serving, sprinkle with nutmeg, put cinnamon stick and lemon slice.

One of our fellow gardeners and a nature lover, knowing that I am a fan of winter and summer fishing and hiking at any time of the year, everyone asks me to write about it. True, this year I was busy and did not go on winter fishing yet. Hunt, I confess, I do not like. Is that a walk in the woods was chosen - on skis, and even without. Driving in the cold winter air, or overcoming obstacles — through untouched snow or fun, light skiing, on foot, or on wide, camus-padded hunting skis — requires energy in any case. You can recharge it only if you eat something.

Well, here you have to start advice: dry frozen forest burns beautifully. Unfortunately. It is better to use a tourist primus, checking the ignition temperature of the fuel. And if you start to make a fire, then ... what-what-what? Thermos and butter ...? - No, of course, it is possible and so. An experienced person will have enough pieces of bread with bacon and chocolates. But we go camping trip. So, it is necessary to prepare. In the once-popular book “Lectures of Mr. Pouff on Kitchen Art” (and under the pseudonym, this was a philosopher, composer and critic, writer and journalist, inventor and popularizer of science, a contemporary of Alexander Pushkin, Vladimir Fedorovich Odoyevsky), read the quote from the great French culinary specialist Antoine Karema: “I prepared for one sailor, whose stomach could not carry ordinary ship food, bottles with pure jelly ... up to 50 spoons of thick jelly per bottle. Each spoon, dissolved in a plate of water, gave a wonderful broth. In addition, the jelly could be consumed simply with bread. ” Well, how to use jelly just with bread, we already know. Hot food in the winter in the fresh air - fishing, hunting or hiking - has no price at all, and if it is high in calories and nutritious, then there are no words. The fact is that in 10 minutes of walking in the frost a person loses about 100 calories. Go to the place sometimes much longer. And so exercise, and even frost slowly steals calories. And vodka will only warm you first, and then freeze them ... So borscht-aspic will be simply irreplaceable.

Lithuanian Bread

Once upon a time, Lithuanian peasants took special bread to hunt and logging. Now almost everybody has a bread maker, and there is definitely an oven and a form in every home. Well, if so - printers at the ready! Print the recipe of the old Lithuanian bread, giving strength and warming in any frost.

First: remember that baking science-  this is the science of proportions. And if it says in a “teaspoon” recipe, it means a measuring spoon, and no other. Take one and a half measuring spoons of dry high-speed yeast, no more and no less. If we are talking about flour, then we will need 170 grams. Weigh the scales: allowable error in plus or minus 5 gr. So, rye flour - 170 gr. Measure off exactly 230 ml of waterwhose temperature should be 20-25 degrees. We mix everything up: this is how we make a sponge. Let stand.

Oparah grown up? Very good. Take a sieve, gently sift 270 gr wheat bakery flour -   exactly bakery, so on the package and should be marked - and add to the dough. Salt  (1.5 tsp), 70 ml of kefir  or sour milk, 2-3 minced garlic cloves, black and red pepper, cardamomfinely chopped (diced 5-7 mm) simple rustic fat  and 1 tbsp. honey- add everything and start kneading dough. We knead like a man, firmly, and leave for a couple of hours.

If there is a form, then we coat it with vegetable oil, but not - we mold the bread with our hands and make several cuts with a knife on the surface, otherwise our whole construction will burst and burn.

Who has a bread maker, he can look through the manual for the programs: there is a suitable one there. And the oven should be warmed up to two hundred degrees. We grease bread with a whipped egg - and in the oven! On 30-40 minutes.

Then, taking the bread, wrap it in a towel and about half an hour do not touch: inside it are the most important fermentation processes! Going to try earlier - get porridge in the crust.

But if everything is done correctly, then this bread will saturate for half a day with one piece! But who will hold on and won't take the second? I have not seen such people, well, except that now I eat one by one, I’m used to it, although I don’t get tired to admire, I’m just not being greedy. A bread maker - well, the thing is convenient, and most importantly - it takes less time, although it also has its drawbacks. But the standard oven from the stove has more. And if there is a village, and there is a stove, and a grandmother, who will tell ... Experts have to believe!

And drink?

With hunger will not die. But now I want to drink. Do not carry a thermos with you: break it again. We already have a kettle - an old copper kettle that will boil in 15 minutes on a decent camping stove. And besides - and feed soup from aspic, and give the whole company some tea, coffee or cocoa. In short, just a song. But we have for you another surprise from our world-wide international cuisine.

Mongolian? Yes. Buryat? Also. Tuvinsky? Again guessed. Kalmyk? - again to the point!

Have some tea!

It’s good to have a couple of plastic milk bottles with you. But you can take powdered milk. And melted butter - necessarily, a hundred grams. And a piece of Kalmyk tea tile. It is also called “green”, but in some places it has been preserved in a real, bearish-brown color, in huge tiles. Less and less, really. But there is.

So, 75 grams of tea tiles 1 glass of waterbring to a boil, pour in 4 cups milk  and add a teaspoon of salt, a handful - pieces 10 - peppercorns, spices (cloves will do, nutmeg). The traditional recipe does not recommend putting sugar or honey in Kalmyk tea. But who will forbid us?

After this drink it becomes easier to breathe, it will not allow a cold and headache to break out. But it is worth remembering that you can sweat from it.

NB!

In general, in any campaign, not even winter, dry socks and a pair of dry T-shirts will not interfere.

And still it is necessary to have a newspaper with you, and better a few. Read, broaden your horizons, for example: "Similarity collapse, Pupkina street ...". No, of course, not behind this! Fell into the creek? In the water on the shore? - Immediately put the victim on a well-folded backpack:

Clothing and equipment

To spend the whole day in the nature in winter, you need to be seriously equipped. Try to dress so that it is not too hot when moving, but in order not to freeze when you are in place.

Remember that it is important to keep your feet warm. To achieve this, wear loose shoes that you can wear warm socks. In winter, it is best to dress in layers. The more layers of clothing will be on you, there will be warmer. After all, between the clothes formed layers of air that heat. It is preferable to wear things from natural fabrics: cotton and wool.

For winter time  well suited ski suits that are not blown, keep warm and at the same time quite comfortable, because they do not hinder movement.
